How To Make Apple Pie (Mama’s Recipe)

Submitted by Christy Jordan on Friday, July 4, 200834 Comments

Don’t you just hate it when you taste something positively divine that a friend made, ask for the recipe, and they refuse to give it? How awkward is that? I have always found it somewhat rude and therefore have made a point to share any and every recipe that has ever been requested of me.

There is only one recipe which has tempted me to stray from this policy, my apple pie. ~Takes a deep breath~ So, today, to force myself to remain generous, polite, and kind to anyone interested, I am posting not only my apple pie recipe but a photo tutorial as well.

This is actually quite easy. The most difficult and time consuming part is simply peeling and “chipping” the apples. In no time at all you will be wowing folks with your apple pie. That is all that I ask, don’t say you got this recipe off of a blog or website or make any other excuses when someone compliments it (although feel free to send them to my site!). When (not if, but when) someone tells you how divine your pie is, I want you to smile graciously and say “thank you”. This is now your apple pie recipe.

Starring roles: Sugar, Apples (at least two different kinds, one being Granny Smith), Lemon Juice, Corn Starch, Vanilla, Pie Crusts (You can make your own, I just use Pilsbury), Allspice, Cinnamon, and a wee bit of apple juice.

Mix dry ingredients (corn starch, sugar, allspice, and cinnamon). Stir to blend. Exact amounts and recipe are at the bottom of this page.

Peel all apples. Instead of slicing them, cut them in little “chips” as pictured below.

These chips stack better for your pie and help it maintain its shape. Since you used at least two different types of apples, on being Granny Smith, you will end up with a nice pie that has some apples cooked up a bit to form a gooey good sauce and some maintaining their shape to help it hold its form.

In separate bowl, mix apple juice, lemon juice, and vanilla. Pour over chipped apples.

Add dry ingredients to apples and stir.
SMELL this now, its getting there! Go ahead and eat a coated apple slice!
Spoon apples into prepared crust. You want to fill it pretty high.

Wet your fingers and wipe around the edge of the crust before unrolling your other crust on top. Press to seal around edges.
After you’ve sealed them together (see left side of pic), fold the edges over and crimp them with your fingers or use a fork, whichever you prefer (see right side of pic).

Cut a few slits on the top with a knife. You can also use a decorative cookie cutter for this or cut a pattern…I just cut four slits. I just want my pie and by this point I’m hungry. This is gonna take another hour til its ready so…..cut slits and lets get on with it. :)

Isn’t that pretty?

I feel like I should carry this photo in my wallet!

Melt some butte
r and brush it over the crust then sprinkle a bit of sugar on top to make it even prettier!
Bake in oven at 425 for fifteen minutes.

Remove from oven and reduce heat to 375.

Cover pie in foil and cut and peel back the center so mainly the outer edges are covered. Return to oven and bake for an additional 45-55 minutes.

Include obligatory pic of cute kid who really wants to be in your blog….

And her brother.

Mama’s Apple Pie Recipe

1 Package Pilsbury Pie Crusts
9-10 apples, two different kinds, one Granny Smith
1/4 C Apple Juice
2 T Lemon Juice
3/4 C Sugar
1/4 C Corn Starch
dash of salt
1 tsp Vanilla
1 tsp Cinnamon
1/2 tsp allspice

Preheat oven to 425. Roll one pie crust out into pie plate. Peel and chip apples into large mixing bowl. In separate bowl, combine all dry ingredients and stir to blend. Combine all liquid ingredients in another bowl and stir to blend. Pour dry and liquid over apples and stir well.

Place in oven and bake 15 minutes. Remove from oven and cover entire pie with foil. Cut slits in center of foil and peel back so mainly the outer edge is covered (to prevent it from burning). Reduce heat to 375 and continue baking for 45-55 minutes or until golden.

Thank you for this delicious apple pie recipe, my whole family loves it so much that from now on I will have to make two or more because they go too quickly and I like to share with the elderly neighbor when I can.

Made two today – making three or four next time!

  • Southern Plate says:

Socalmal: What a wonderful comment to receive! You have made my day, thank you so much!
You know, I find that even with a small family, I have to make two of these as well!

I understand your dilemma completely and cannot tell you how thrilled I am to hear that your family likes this pie as much as mine!
Thank you so much for letting me know!
Stay tuned for apple week! A new apple recipe each day for a whole week! I’ve been working on the tutorials for some time now!

I’ve been cooking for over 40 years and never really made an apple pie that I was completely satisfied with. Since it is one of my husband very favorites I do keep trying, though.

Well yesterday I tried this recipe and it is INCREDIBLE! It doesn’t look that different from others I’ve made but it sure tastes different! My poor husband couldn’t do anything but moan while he ate the first piece! And that was even without ice cream!

Thank you, Christy, for a recipe that is going up on the inside of a kitchen cabinet door! (That limited space is reserved for only the very best.)

  • Southern Plate says:

Anonymous (Pretend I know your name there! LOL)
I cannot TELL you how over the moon I am at your comment!!! I’m excited for me AND you!!!
Don’t you just love it when you make something folks brag on? It thrills me to death every time and I am always so excited to take this pie anywhere because thats the effect it has!
I’m SO GLAD it worked out so well for you and WOW, it made the back of the cabinet door! I KNOW what a place of honor that is in my house!!!

Thank you SO MUCH for reading Southern Plate and for letting me know how this pie turned out! I’m so happy!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
    Gratefully,
    Christy

Christy, if I were just a little internet savvy I could let you know my name. I just don’t get how you personalize this thing. Around the internet I am known as Lindakimy and if I ever figure out how I’ll register here that way.

I just love your enthusiasm when people comment on your site and recipes. But you really shouldn’t be surprised any more. You are obviously an amazing cook and a really sweet girl, too. Not to mention the talent it must take to set up such an attractive blog.

Oh…and the recipe is at the very TOP of the MIDDLE cabinet door. With lots of tape.

Wow. Just reading the post where you took the plunge & shared this recipe with us all…. well, I knew right at that moment I would be bringing apple pie to a friend's tonight! It's in the oven right now, husband & child keep drifting through the kitchen eyeing the timer!
Can't wait, will be sure to share your site with everyone at the dinner tonight. Thank you.

  • Pinky says:

I am baking this right now girl!

  • Pinky says:

OK I made this and it turned out perfectly! My son had APPLE week at school and begged me to make Apple pie! The Apple juice helped I think, but next time I will use alot less Granny Smith, it was bit tart for me…I like it sweeter!
I love how you mixed the apples! Another GREAT recipe!

  • lengslog says:

oh that looks delish! Just curious though, I always have a problem with my apple pie being runny. Did you have that same problem? (There was no cut piece). Do you have any suggestions on how to make my pie not runny? :-D

  • Verena says:

It is wonderful! Thanks for all the time spent and patience to share with food lovers from around the world (I am from Brazil!). But what I liked most is the way you share your family memories and the love for food your mom and you have, specially sharing this great recipe.
    Congrats for the wonderful blog!

Hello there… I know this blog has been up quite a while so I don’t know if you will even get this comment but I want to let you know that I am going to make your pie recipe for Thanksgiving tomorrow! I am a college student in southern california and don’t have the money to drive to my parents for Thanksgiving this year. Since my boyfriend’s family is financial struggling right now I have invited them all over for dinner tomorrow. This is my 1st time ever cooking Thanksgiving dinner so you can only imagine how anxious I feel to be making it for my future in-laws!! :o )
I just want to say thank you for not only sharing your recipe but taking the time to make the step-by-step pictures. I will let you know how this turns out — wish me luck!

Oh if you happen to get this today/tonight/whenever, by can I literally use any other kind of apple besides granny smith? Or does the 2nd type also have to be a green apple?

  • I wish you the best of luck and am HONORED and thrilled you are using one of my recipes! Its going to be great!!! I can assure you that you are a heap better cook than I was when I was in college!!

Take care and have a great thanksgiving. Thank you for posting a comment and please post again to let us know how it turns out!
    Gratefully,
    Christy

Having never made an apple pie from scratch I have complete confidence that this pie will be the best ever! We have just put our pie into the oven and are DYING to have a slice. Alas we must wait until tomorrow so this can go with our dinner.

  • Emily says:

    Christy…

My pie came out so very beautiful and delicious! My boyfriend’s family absolutely loved it which made me feel so good :o )

Thanks again for your recipe! — Is there any other recipe of yours you’d recommend I try? I was VERY impressed with your instructions for the pie and even more impressed with my results!

Hope you had a wonderful Thanksgiving,
    Emily

  • Rhianon says:

    Hi, Christy,

I made this pie last night. I realized as soon as I got home from the store that I had forgotten to buy apple juice. I didn’t have any juice other than grapefruit, which seemed like a terrible substitute, so I substituted a sweetish light red wine instead. It turned out delicious!

I visit your blog frequently for inspiration. Thanks for the step-by-step detail! It’s so helpful.

    Best regards,
    Rhianon

  • Alexis says:

Hey there, I just wanted to posted a comment since I used your pie to make this past weekend. First of all I would like to say how much I DON’T cook, nor have I EVER baked anything(21 yrs young) My boyfriend has been on my case lately to get in the kitchen and learn how to whip somethings up( he usually cooks) well….. his face in utter surprise when he came home from work to find dinner on the table and a DELICIOUS apple pie in the oven baking.. it was PRICELESS! The pie was so tasty and perfect!! My first time baking was a true success and I actually enjoyed it!! aside from my doorman coming up to my apartment ringing my bell thinking there was a fire( a little juice spilled in the oven and smoke went every where) i told him no fire- just me cooking =) he later enjoyed a slice of pie also!

Anyway, i’d just like to say thanks again for sharing this pie and I looked forward to saving your recipe and making it again!!!

    lots of lovin’
    Alexis

I made this pie today and my apple pie expert (hubby) proclaimed it the best I’ve ever made. (We stole some coated slices too.)

I love apple pies and this one sounds great. I’m planning on baking this for a Pastor Appreciation dinner next week.
You know that we Baptists really like to eat!!

  • Jane says:

I’ve got a test run of your pie in the oven right now! I love the folded in crust design – and I’ve never used butter on a pie top (usually egg) so I can’t wait to try it! (Everything is better with butter, right?!)
Sadly, I didn’t have any Granny smith apples, but apples from an orchard in Maine that I needed to make into a pie – so it won’t be as tart. I can’t wait to make it with a mix of apples – it certainly looks beautiful!
    Happy Fall!
    -Jane

  • Jessica says:

I just made this pie tonight because it’s fall and it’s apple season:) LOVED it! I also didn’t have granny smith, but used 2 other tart apples and instead of the apple juice which we didn’t have, I used white wine….so yummy! Definitely will be making this for some holiday coming up:) Thank you!!!
