Hello!

Love your website, and i cant wait to try some of your recipes.

A quick suggestion about onions and peppers.....I have a lot of these so-called picky eaters in my family as well. What i have discovered is that they don't dislike the taste of onions and peppers so much as the sensation of biting into a vegetable....When cooking for these picky palates, i grate my onion and pepper into the food and then cook it. The vegetables literally disappear into the food but the taste is greatly enhanced. I also find that grating can be a lot faster than chopping vegetables, i just hold it right over the pan on the stove. Of course i can never let them see me doing this or they surely won't eat it!

But, what you don't know cant hurt you, right?

I have read a few of the receipes you have on here and I really want to try some. My Daughter is so picky and likes only the chicken or Pizza stuff that I make, and she refuses to eat my ground meat receipes. Do you have anything for picky eaters, around the ages of 15? She is actually worried about gaining weight and wants to eat healthy but I feel limited by her "standards"!
I am also writing to tell you that you have made such a great impression on me, the receipes and the way you tell them are really
interesting. I lost my mom 8 years ago and you have set a comforting impression on me. I love to just read how you write and seem to be enjoying what your doing. I was right along with you was the way you made me feel. WOW!! You are doing a great thing and for all single moms out there that have a desire to cook good delicious meals out there for there family, friends and loved ones this is really AWESOME! Thanks for blessing me with your sweet personality I enjoyed reading these and look forward to more of what your doing there. GOD BLESS YOU!!

Hey gang! I think anonymous was a little uppity on the "hurting the environment" but I think you can always go healthy if you want to by changing things just slightly as they suggested. Christy's recipes are great because you can use the recipe and just change the ingredients a little if you feel bad about something- like white bread, for instance. I don't eat white bread, I would switch out to sourdough rolls, however, the recipe still works. And the suggestion of wrapping in foil and putting in the oven- that is what I would do because I NEVER put plastic in the microwave! There is supposed to be microwave safe wrap now, though- for ya'll who are dead set on "I want to microwave food with wrap!" I would suggest that.

Just my two cents :) Be well!

Here I am again, next morning, Christy. I got out my old black 3-ring cookbook that I have been writing my favorite recipes in for 40 years, and found my recipe for Cheese Boats. They are like your pizza rolls, but with a more Southwest flavor. There was a drive-in years ago in the Globe-Miami,Az. area that made these. This isn't "my" recipe, as I stated above. It is just in my book. These are so good to have in the freezer, if you can actually get them IN the freezer before we eat them, and a good sandwich to have stashed for a lazy day.
                Cheese Boats
1 small (4oz) can of diced green chiles
1 1/2 lb. grated longhorn cheddar cheese.
1 small can chopped olives
1 bunch sliced green onions
8 hard-boiled eggs, peeled and chopped.
1 8 oz. can tomato sauce.
Garlic salt to taste.
French rolls, cut almost half the way through, and a little bread pulled out of the center.

Mix all the ingredients together, then stuff french rolls. Roll sandwiches in foil. Put in the oven about 15-20 minutes at 400 degrees. Enjoy!
Maybe frozen before heating in the oven.

Christy, I love your blog and am so glad I found it. You cook like I like to eat! And it may be "unhealthy" to some people, but not to Southerners or Okies! My Mom and Dad were both from Oklahoma, and she cooked just like this and so did my Grandma and NO ONE left their tables hungry. If there wasn't food left on the table, that meant someone didn't get enough to eat, OR (Heaven help you) you were a picky person. Regardless which, if there was no food left, they both would get up and fix something else, or give you more pie, cake, banana pudding, whatever. You were going to be satisfied when you left the table! But in those days they were working in the fields from before daylight until after sundown, and when they ate, there was no complaining about the food! Women sure
didn't expect praise for their cooking, but they didn't need any words to feel the gratitude when all you could hear was forks hitting plates and chewing. So that was just the way people cooked and ate then. Most of us don't work in the fields now, (and thank God for the ones who do!) but we still have that ingrained memory of good food going along with hard work and still want it no matter if we do sit in an office and do computer work all day. So keep up the good work Christy! The ones of us who love what we eat can sure enjoy every recipe you give us, and those of us who want to watch our weight and worry about all that stuff, can just go to one of those other websites and enjoy those recipes. I have a recipe to send you on the order of these delicious pizza rolls at another time. I apologize for rambling, but can't help it when I think of my Mama's and my Grandma's cooking. Thank you for that.
