♫ Elvis Presley Cake ♫
This post is dedicated to Su, one of my readers from Australia. Su and her mother are coming to the South US this fall just to go visit Graceland! Her mother is a huge Elvis fan and has had a lifelong dream of seeing “The King’s” home in Memphis.
Lord, how many times have I been to Graceland? My father fancied himself Elvis throughout our childhood. When he wasn’t channeling Elvis, it was Waylon Jennings, Willie Nelson, Johnny Cash, or Conway Twitty. Daddy sang them all at moment’s notice in his best impersonating voice. Any wonder why I don’t listen to country music now?
One things for sure, Daddy has never sang Beyonce’.
So back to my point…I saw this cake and just had to do it for Su’s mom. Su’s Mom, I hope you get to try this! It is said to have been a cake Elvis’s cook made for him on a somewhat regular basis. If you weren’t an Elvis fan before this cake, you certainly will be after!
This is what we call an “Ice Box Cake”. Old folks still refer to their refrigerators as ice boxes. Ice Box cakes and pies are such wonderful treats during the heat of our southern summers! Thanks goes out to another reader, Rachel, as well. She posted on my fruit cocktail thread today about how it was so hot (she is in Bama, too) that she was putting the cake in the fridge and serving it cold. VOILA! I realized that I have a few ice box cake’s all done up with photographs and everything and I haven’t posted them yet. SO, thanks to Rachel, you’ll all be getting series of tutorials on my favorite icebox cakes this week!
For the cake, you will need: Sugar, Oil, Milk, Crushed Pineapple, Eggs, Vanilla Instant Pudding, and a box of yellow cake mix. In the south, we have an unnatural fixation with Duncan Hine’s cake mix. I can probably do a little research and find out why we all love it and are so darn loyal to it but for now its good enough just to say that we love it and you should too.
Continue mixing about two more minutes, until smooth. Try not to taste of this batter. Seriously, try really hard not to taste it. If you do, there may not be any left to actually bake. It’s that stinking good! Okay, now you just HAVE to taste the batter so you know what I am talking about!
* I am baking mine in two 8×8 dishes so I can send one to my mother’s house.
Don’t stop until it looks like a swarm of four fanged mosquitoes took hold of it!
We are doing this to keep from stirring up all of our pineapple into our icing.

I was watching America’s Test Kitchen a while back and they were talking about how awful box cake mixes were due to the powdered vanilla. I remember thinking then, that must be a yankee thing. Bless their hearts. Every southerner i know loves them some Duncan Hines. And it’s even better when you poke holes in it and pour something involving Eagle Brand and puddin’ over it….

As you know Christy, I visited Memphis and Graceland in October ’09 and I was unimpressed that none of the little cafes and diners had this on their menu. Especially those that claimed to serve Elvis’ ‘favourite’ foods. There was however plenty of fried banana and peanut butter sandwiches, which I did not try, but my mum did! She said it was really good. hehehe
I laughed more at your comments while mixing and cookie!! Can’t wait to try this one! I’m a Tennessee gal and loved Elvis!

Kristy, is your new cookbook going to contain your recipes we have been privy to already, or all new ones. You see, I have a cookbook addiction, which I am trying to kick by checking Southern Plate on the internet, but if your book is going to be new recipes, I might have to relapse into my addiction just one more time.
Yummy! sounds good. I would probably have to eat the whole thing because I don’t think my husband would eat the pineapple, but I am definitely going to make it even if I do gain 10 pounds eating it all.

I’m actually one of the few that don’t like Elvis, neither did my family, odd right? But we all have a strange fascination with Duncan Hines and pudding mix, preferably Royal. I am going to love this cake, looks so good! There is just no possible way to exactly measure the ingredients like they do, its always perfect from the box. If you want more vanilla, add some Watkins.

My dad would’ve liked this cake. He was a big pineapple fan–I’m not sure what he thought of Elvis thought! I think Duncan Hines is the best cake mix, too, so it must be more than just a Southern thing!

Ohhhhh Christy… As if you weren’t already loved by me enough, you had to go and play the Elvis card! You see, I am a huge Elvis fan. My most fond memories of time spent with my dad when I was little are listening to him sing (I swear he can sound JUST like The King himself on certain songs… And yes, we know ALL the songs) and dancing on his shoes (to Elvis, of course!). I do believe I’m just gonna have to go on and adopt you in to my family – or beg you to adopt ME!

We used to tease our mother about Elvis — she loved him! Then we got to see him in about 1974 or 1975 at the Houston Rodeo when I was in high school! You have never seen such a showman! We were ALL screaming! He sure did have an effect on the ladies
But I am NOT going to make this cake, because I know I would eat the ENTIRE thing, like I did with the Pumpkin Crumb Cake. Twice. (Can I blame my too-tight jeans on you, Christy?)

I love Elvis and I love this cake! I have a similar recipe but it’s called “Pig Picking Cake” and I actually got it from Dollywood! I guess all of us Southerners like the same stuff! All my growing up years I dreamed of going to Graceland. Two summers ago we finally did, and it was my favorite vacation ever! I love your recipes so much but I truly look forward to your stories! I’m not from the south, albeit southern Illinois. Mt mother swore by Duncan Hines also.Said it made better cakes. She also would put a tiny amount of mace in a yellow cake. Gives it a great flavor.
AND, Christy, the second time you posted this was on his birthday today. Saw his grandson on news tonight… he’s the spitting image of his Papa. This was one of his favorites but not everyone knew that. I’ve actually eaten in his kitchen just before he died, part of being a cop and he loved law enforcement officers, was shocked I was one at that time. I’ve met his cook and his nurse also and they are very special people. You can’t live in Memphis and not know someone who knew Elvis “when”.

Channeled our inner Elvis last year with a spring trip to Graceland. Even our teenaged son loved it. Still laugh at when one of my husband’s friends from Pennsylvania called his cell phone while we were there and my husband asked him to guess where he had reached him. He had a great laugh when told we were at Graceland of all places, just having been through the Meditation Garden. It was a great trip and I recommend it to anyone, whether or not Elvis fans.

I have never, ever, ever said anything bad about you before but this post makes me have to turn to the dark side. Quite simply, you are pure evil and you must hate my metabolism! You may not have come up with this recipe but by sharing it you have cursed me for life! This cake combines so many of the yummiest things that I love the most into one decadent delight!! I don’t know what I’m going to do now! I just KNOW I’m going to make one of these and then am going to have to make another immediately afterward to cover the fact that I ate the whole first one by myself!! I’m just glad I don’t have a kitchen here in the desert or I’d go back 100lbs heavier! hehe

I am a Southern Plate newbie and loving it. I qickly pointed my sister in your direction too. Anyway, Elvis’s cake…we had a Chili Cookoff at church last night and I brought dessert…The Elvis Cake. It was awesome…awesome good and awesome easy. When I made it I got to thinking about how many times I heard Elvis loved pnut butter and banana sandwiches. I love banana and pineapple flavors together and I’ll bet this cake would be good with banana pudding added to the cake mix instead of vanilla. If anyone has tried it tell us what you thought.
