*This is a continuation of the dinner I am featuring one dish at a time on Southern Plate while I am in Disney World! I do hope you enjoy it!*
Who doesn’t love mashed potatoes? This creamy comfort food is the perfect accompaniment to most any meal. This recipe of my mothers takes them up just a notch and makes them suitable for our “fancy” meal that I am featuring this week.
You will need: Shredded cheddar cheese, margarine or butter, sour cream, and a small can of evaporated milk. All of this in addition to your potatoes, of course!
- 6 large potatoes, peeled
- 1 small can evaporated milk
- 1 stick margarine
- ½ Cup sour cream
- 2 Cups shredded cheddar cheese
- Cut up potatoes and cover with water. Cook until tender, drain. Add stick of margarine,can of evaporated milk, and about a teaspoon of salt. Mash with hand held potato masher or with mixer. Add sour cream. Mash or stir until blended. Spread into pie plate or casserole dish. Top with shredded cheese and bake in oven at 350 until cheese is melted.
