Fancy Mashed Potatoes With Cheese

*This is a continuation of the dinner I am featuring one dish at a time on Southern Plate while I am in Disney World! I do hope you enjoy it!*

Who doesn’t love mashed potatoes? This creamy comfort food is the perfect accompaniment to most any meal. This recipe of my mothers takes them up just a notch and makes them suitable for our “fancy” meal that I am featuring this week.


You will need: Shredded cheddar cheese, margarine or butter, sour cream, and a small can of evaporated milk. All of this in addition to your potatoes, of course!

Peel and slice your potatoes, Cover with water and cook until tender.
(I used about six large potatoes)
Drain them puppies! Keep ‘em in the pot!
Add a stick of butter and the whole can of evaporated milk.
Add a teaspoon of salt.
Mash all of that together with a handheld potato masher. You can do this with your mixer, of course. I normally do use my mixer for creamier mashed potatoes. On these, I just prefer them to be a little more rustic and I enjoy the texture of hand mashed potatoes or “country mashed potatoes” as they are often called.
Add 1/2 cup of sour cream, stir that in.
Oooh, nice and creamy!
Spoon mashed potatoes into deep dish pie plate or other oven safe dish.
Top generously with cheddar cheese. I use about two cups.
Now you want to place this in the oven, at 350 degrees until this cheese melts.

Fancy Mashed Potatoes With Cheese

Ingredients

  • 6 large potatoes, peeled
  • 1 small can evaporated milk
  • 1 stick margarine
  • 1/2 Cup sour cream
  • 2 Cups shredded cheddar cheese
  • salt

Instructions

  1. Cut up potatoes and cover with water. Cook until tender, drain. Add stick of margarine,can of evaporated milk, and about a teaspoon of salt. Mash with hand held potato masher or with mixer. Add sour cream. Mash or stir until blended. Spread into pie plate or casserole dish. Top with shredded cheese and bake in oven at 350 until cheese is melted.

    Oooh Bill, they really are! I kinda felt bad posting it because it is so simple. Some of these things, I think “Are they really gonna want a recipe for that?” but in the end decided to post because I do love them soooooo much. Then again, how can you not love mashed potatoes?

    Speaking of which, had the best mashed potatoes in Magic Kingdom today – twice! I got the recipe for them and several other GREAT dishes and can’t wait to post them. I am holding out for one more recipe……and I am sooooooo determined to get it. Tomorrow, I am making it my personal mission.

    We are leaving here early Saturday morning to head back to Bama. It will be about twelve hours so I won’t get anything done that day. I REALLY MISS COOKING! I hope to get some cooking/blogging time in Sunday in between getting a week’s worth of laundry done for four people. Do I give you all a lot of information or what?

    you know what is funny? Disney World attracts folks from all over the globe. Whenever I hear an interesting accent, I catch myself focusing in on it (as nonchalantly as possible) and listening with great interest. I love how people from different places talk!

    Well, this time, I’ve noticed something…when I talk, folks are focusing in and listening to ME!

    Wow. You gotta laugh when hearing a southern accent in the south is an attention getter! I am looking at it through new eyes though. I suppose if you had lived in another country all your life and then come to visit the US and hear the accents, the southern one is very much different from others. Its just funny to think that anyone would actually want to listen to how I talk!

    Night all, we’re gonna conk out for the evening. We got a Dream Pass in Disney today and were invited to stay for an hour and a half after the park closed to ride anything we wanted! It was GREAT!! The kids had such fun riding their favorites over and over with no lines!

    And p.s. – I’ve always loved listening to southern accents! I had a friend in Rexburg from the south, and she had the awesomest little drawl. It was so cute! I’d probably be one of those people tuning in to you and listening to your accent. :-)

    These will be just perfect for my pork chops this evening! You sound like you are having a blast with your family and that is just fabulous. You and Mommys kitchen have inspired me and my daughter is helping me with my own blog! Maybe I can pay you back for all the great recipes you have given me.

    Stephanie: We were watching the light parade tonight and a couple from England sat next to us. They were very nice and talked to my kids for a good bit, which thrilled my kids (Both of mine are EXTREMELY outgoing)! They commented on our accents and I complimented theirs, then my son chimes in “Are you Spanish?”.
    ~sigh~ I told them that my kids don’t get out of Alabama much. :)

It is difficult to do anything to modify my page over this prehistoric connection I am running on! I am so thrilled!! I can’t WAIT!     Donna: Hey! I’m so glad all of y’all knew what I was talking about when I said “country” mashed potatoes! My family consists of potato lovers as well. Whenever I make mashed potatoes (not cheesey ones, but regular), I save some so I can make potato cakes the next day! I’ll try to get that tutorial posted this week as well. They are soooooooooooooooooooooooooooooooooooooooooooooooooooooooooooogood!
