World’s Easiest Supper: Taco Soup

Y’all said you wanted quick and easy meals and I’ve been listening! I am going to try to post one quick meal idea each week.

This week that has come in handy for me as well as I work on creating a better index for Southern Plate and Slideshows for each category. I’ve finally figured out how to get it all done but its just taking some time. I’ll have a slideshow for every category on the sidebars and when you click on the title of that category, it will take you to a page which lists every dish in that category (Each name will be clickable to take you directly to that page and even though clickable is not technically a word in the real world, it certainly is on Southern Plate though, because I said so).

Whew! Now that I’m done with my rambling, let me show you the world’s easiest supper. This supper is also awfully darn tasty! My son ate three bowls!
I first made this soup about ten years ago (oh lord, that makes me feel so old!). We instantly fell in love with it. Even if it weren’t so incredibly quick and easy, the flavor would have won me over on its own. You’re just not going to believe how great this tastes!



You’ll need: 2 cans kidney beans, corn, Ro-Tel, tomato sauce, 1 package Ranch dressing mix, 1 package taco seasoning mix, and about a pound of beef (more if you’d like). I cook my beef ahead of time and freeze it in individual meal sized portions so I just grabbed a bag from the freezer, which makes this even easier!

You ready for the instructions? Dump it all in a pot. Don’t even drain your cans, just dump it all. Add a cup and a half of water and stir. Bring it to a boil then lower the heat and simmer for fifteen minutes. Serve!


I like to eat mine with sour cream and cheese. You can use your favorite add ins or just eat it on its own.

Ingredients

  • 1 lb ground beef
  • 1 Lg chopped onion, cooked with beef
  • 2 cans kidney beans
  • 1 can corn
  • 1- 15oz can Ro-Tel
  • 1- 15 oz can Tomato Sauce
  • 1 packet taco seasoning mix
  • 1 packet ranch dressing mix
  • 1 1/2 cups water

Instructions

  1. Combine all ingredients, bring to a boil and then simmer for fifteen minutes.

Fall TV is underway, have you found any shows that you particularly like? If so, I’d love to hear about them! In the comments section, tell me what shows you like, what networks they come on, and what day and time!

So far, all I am watching is Army Wives on Lifetime and True Blood on HBO (I just love Sookie!). Those both come on Sunday nights and I’d love to know of something good that came on another night but I never actually watch network TV during the day (It’s all Noggin or Disney Channel here!) so I don’t get to see previews or commercials about anything to know!

    this looks so good! I cant buy Rotel up here in these them parts… LOL… so can you suggest what It contains so I can add or adjust it? so silly that we cant get some products !

      Diced tomatoes and diced green chilies… maybe some cilantro, depending on what type of Rotel you get.

    I hadn’t made this for several years and had forgotten how yummy it is! I make mine with ground turkey, chicken broth, some cayenne and chili powder and use chili or pinto beans but no tomato sauce. Several different versions of this favorite and you can add other things you enjoy like bell peppers. This is a great quickie dinner and I usually have most of the ingredients (or a good substitute) in the pantry.

    I’ve used this soup recipe for years and love it! Sometimes just to change it up a bit, I will substitute 1 or 2 cans of chicken from Costco for the ground beef. (This works especially well when I haven’t got any more pre-cooked ground beef in the freezer!). It’s just as good and works well when my daughter-in-law is visiting since she doesn’t eat beef!

    This is great with Fritos crumbled in along with the sour cream and shredded cheese. I make a giant pot of it and divide it into freezer bags for a quick meal.

      Karen – when you double or triple this, do you just double/triple each ingredient or does it need adjustments to some of the ingredients? Thanks!

    I made this tonight and we loved it. I used 2lbs of ground beef cause we like chunky soup. I also added more taco seasoning. It was perfect topped with shredded taco blend cheese.

    On top of the sour cream I add a lil green onion, olives and shredded cheese, with tortilla chips on the side.

    All the rotel cans in my Winn Dixie are small – 10 3/4 oz. – is that enough or should I use 2. Seems a silly question because it probably doesn’t matter either way but I’m a little exacting ;>)

    A good tip would be to drain & rinse the beans (that thick water they’re packed in has an odd almost slimey texture) & I personally would drain the corn as well. (not a fan of can water!) You could easily add chicken stock if more liquid is needed. I just have issues with the liquid in canned vegetables, & it wouldn’t add even 2 minutes of time, well worth it for a better flavor & texture!

    Good stuff! I’ve never made Taco Soup before because my kids don’t like spicy but I think the ranch mix makes this perfect. My non-spicy kids loved it and my nursling didn’t get indigestion either. I will make it over and over!

    My Hubs hates beans, so I made his w/o the beans and added mine as I put it in a bowl! I used the lime and cilantro Rotel-Oh, yummmmm! this is a fantastic soup for our snowy days in Michigan!!

    Been making this for over 20 years, I use Ranch Brand Jalapeno beans instead of the Kidney beans, and i have never used Ranch dressing will have to try it.

    Love the original recipe, just tried something a little diff…taco seasoning, tomato sauce, 1/2 can corn and Rotel,…used italian dressing mix instead of ranch, a little less water, and ground chicken, and half can of seasoned black beans. I actually forgot the onion, but it tasted good without it. I’m sure it would kick it up a notch if used! Topped it with blue corn tortilla chops and sour cream.

    OMG, just made this soup for ” my son ” but I had to taste it,
    it was fantastic I ended up having a bowl of it myself.
    This comes from a person that does not like anything Taco.
