Spinach Dip (Popeye Would Be Proud)

I’m going to tell y’all something today and I need this to stay just between us. You see, I love Alabama. I have lived in Alabama all of my life (except for a three month sabbatical to Georgia) and I plan on spending the rest of my days residing in this great state. If this secret gets out, though, I just might be deported.

~takes a deep breath~

Here goes: I don’t watch football.

Whew! That felt good to get off my chest! Not only do I not watch football, I don’t even care about football. Whats worse than that, I think of Alabama and Auburn as the school you go to if you want to be a lawyer/doctor and the school you go to if you want to be a Veterinarian/Engineer.

This drives my son stark raving mad. Just about everyone in Alabama follows football religiously and you’d have a hard time finding a house who didn’t support Bama or Auburn. The rivalry is legendary. My son wants so badly to know where we stand and whenever he asks which is the best, my reply is “Well, that depends on what you want to be when you grow up. They’re both good schools”.

Yeah, I know, I’m awful. Most of my family are Bama fans (Roll Tide! for y’all…) but I’m married to an engineer and and navy is my favorite color (War Eagle! for y’all…). I’m awful, I know. Trust me, I live with my shame (I have just been told to state that the two male beings residing in this house are Georgia fans. Well heck, I’m a Georgia fan, too. I love to go to Georgia. There is some awesome shopping in Atlanta and have any of y’all been to the North Georgia Premium Outlet mall? It sooo rocks…oh wait. I have just been told the “Georgia fan” thing was a reference to football. ~sighs~.)

I actually called my husband and asked him if the super bowl was this week because I had been seeing commercials and blog posts about it. I may not be a football fan, but I AM a football FOOD fan! So, in honor of the Super Bowl (which I am told is this Sunday), I am posting a recipe for classic spinach dip. For all you football fans, don’t ever second guess whether or not to invite me to a football party because I just look at this as another great occasion to make food for and show up loaded down with dishes! You watch the game, I’ll serve. Gosh, I love to feed people.

Oh, and I just broke my rule again of not discussing Politics, Religion, Football, or Pyramid marketing schemes on Southern Plate (cause either of those’ll gitcha good and kil’t in the south!). So far I’ve broken it twice and football was the cause each time. Maybe I’m more of a sports person than I thought…

You’ll need: Mayonnaise, Sour Cream, Green Onions, Spinach, and Knorr Vegetable Soup mix. That’s right, this recipe is right off the Knorr package. Hey, its good and its simple, and you know I’m all about not over complicating things!

The original recipe calls for water chestnuts but I shudder at the thought of ever eating a water chestnut so I always leave them out.  A great substitution if you still want that crunch (and don’t like water chestnuts) is to add slivered almonds. YUM!

This is what your spinach is gonna look like in the box. Thaw it well. I place mine in a plastic bag and stick it in the fridge overnight to do this.

Now you’ve got to squeeze all of the juice out of your spinach. Its amazing how many tools we can do without in the kitchen if we just get in there and use our hands!

Once it is squeezed dry, you’ll have this.

Add sour cream.

and your green onions. To chop mine, I just use kitchen shears and cut them over the bowl.

Add mayonnaise.

and your vegetable soup mix.

 

Stir and you have spinach dip! Let this sit in the fridge for several hours to allow the flavors to blend. I like to make mine the day before. This can be served warm or cold. Those Great Value brand wheat crackers at Wally World are excellent with this!

Ingredients

  • 1 package frozen chopped spinach, thawed and squeezed dry
  • 16 oz sour cream
  • 1 cup Mayonnaise
  • 1 package Knorr Vegetable recipe mix
  • 8 oz. water chestnuts, drained and chopped (eww! Use slivered almonds instead if you want!)
  • 3 green onions, chopped

Instructions

  1. Combine all ingredients and place in the fridge for at least two hours before serving. MAKES 4 cups dip

My brother’s sense of humor. He put this on the sign by his BBQ restaurant and has had folks stopping all week to have their picture made next to it! No, we don’t really eat possum in Alabama, but we do like to make folks wonder!

    Don’t worry not a football fan either…and I live a hop skip and a jump from UGA (tells you how in the dark I am, we moved to Dacula in the heart of football season, figures we had to go look at the house the Saturday of the Tech/GA game(major rivalry) took me forever to figure out what was going on (you would think that I would have paid attention to the fact that EVERY car had a goofy looking flag on it))

    Anyway, shopping, the outlets are dangerous I tell ya, but FAB…the dip looks yummy, gotta try it, have you found a Smothered Pork Chop recipe? or a Corned Beef? I have been dying for both (plus I just got a really cool new crock pot that needs to be put to work)

    My nameis Linda Madden… I currently live in Keithville La, but I’m a transport from Northern California in the wine country area.It’s the most beautiful part of California I think.
    This spinach dip has been one of my all time favorite for years. What we do is take a big round French Bread…. Hollow it out and serve the Spinach dip inside the Round French Bread. Use the pieces you cut out of the bread for dipping into the dip.
    Anyway…. Just a different way to serve the dip…
    Thanks for all your Wonderful recipes… I print most of them out and have a HUGE binder full.
    You’ve helped me in so many ways when I didn’t know how to prepard something Southern. Beings that I’m from the West Coast.

  5. I too am not a football fan, and I was lucky enough to find a husband that wants nothing to do with the game either. But I do enjoy snacks! This dip looks really yummy, spinach dip is one of my favorites. I do have to admit that I would probably enjoy it with water chestnuts, though almonds would be good too. Hmm, maybe it would be good with both…

      Oh yeah.. the possum thing.. We have them here. One day I opened my garage and found a HUGE possum standing between me and my car door. That sucker was-a foamin at the mouth and it hissed at me. I screamed like a 12 year old girl at a Justin Timberlake concert.

        Yep I came eye to eye with a mad possum once and it made me scream just like that. haha.. loved your post.. I pulled down a box off of a shelf in the garage and there he was in that box and we were nose to nose…. didn’t take me very long to finish lookin at him and leave the garage. My daddy was laughing his head off at me.. Wasn’t fun when it happened but now its a fond memory of my Daddy…

    To all: I try to keep up with who and what of sports but it is just not interesting to me. My FIL and husband are Bama fans and being a GA girl well I am a Dawg fan. When watch a bama game with the guys (ok I read they watch)every so often I pipe up with the war eagle and watch thier heads spin.
    I love this recipe. we also serve in a bread bowl, anykind will do and serve the bread chunks and crakers… It is one of my favorite appetizer…

I do miss the cow pasture and baseball field across from the big church (I cannot for the life of me remember the name of it) I just hope that it doe not lose that old town feel that is what I love about it.

    Nope, don’t watch football either. Nor does my husband. Yes, I know that makes him really strange. But this Sunday, at the Elks Lodge, we will be having a Super Bowl Party. We’re both going. He’ll drink beer with the guys and pretend he likes football for awhile. I’m thinking I’m going to take some cards and see if I can’t get a good game of Hand and Foot going. And I think I just may make some spinach dip to go along with it. Yes, I’ll be useing slivered almonds also. My strange husband also does not like water chestnuts. But I bet we have fun anyway! Yeah!!

    Oh, bless your guys’ hearts! It must be hard being Georgia fans in the middle of Alabama. My husband is also a Georgia fan (thus I am by marriage), and we are fortunate to live 5 minutes from the Alabama/Georgia state line, so even though he works with Bama/AU fans, fellow Georgia fans are never that far away.

    By the way, this dip looks great, a sneaky way to get my kids to eat some veggies!

    Hi, just wanted to put my two cents worth in, I don’t like football either and neither does by husband………so we don’t watch it on TV at all. I am going to try the spinach dip, really looks yummy…I would like to try it in a bread bowl……also will get us some crackers too. Hope everyone has a great day…..

    This was my mommy’s favorite recipe to make at all of our big family gatherings. I have probably had it 100 times and it’s still one of my favorite things to eat. Served in a bread bowl and a sliced french baguette along side. Yum-O!!!

    Christy, I’ve lived in Alabama all my life (55 years) and I have absolutely no interest in football…so, you’re certainly not alone!! Oh, I get the look of total horror when I say that I’m neither an Alabama nor Auburn fan…nor football in general!!! I live in a “mixed” family…my brother (who lives in Tallahassee nowadays) is a HUGE Alabama fan and my daughter is a rabid Auburn fan, so much so that one of the very first thing she taught each of her daughters to say when they first started talking was “War Eagle!”…although, much to her horror, her older daughter (just turned 12), has defected to Alabama!!! So, my job in our family is to play the role of Switzerland…I have to remain neutral, in order to provide counseling on any given Saturday!!

    Oh, and here’s a shocker…my husband, of 28 years, isn’t a football fan either!! Truly a match made in heaven!!

    Anyway…I LOVE your site and all the awesomely delicious recipes I find. Oh, and my daughter loves this Spinach Dip SO much, she’s been known to kinda hide it so it doesn’t all get eaten up!!

    Hey Christy! Tell my nephew that when he was born, the hospital called me (because they knew how football challenged you are) and asked if he was going to be an Alabama fan or an Auburn fan. I asked the doctor why. Then he reminded me this was standard birthing procedure in Alabama. This was a very important question because they needed to know what type of shot to give him there in the hospital. The shot ensures you will always be faithful to your favorite football team and when you get cut, you will bleed you team’s colors. Since I have lived in Georgia for over 25 years, I had completely forgotten this! I of course told the doctor he was to be an Alabama fan! If he doesn’t believe you, tell him to pay attention to the color of his blood the next time he gets cut. His blood will NOT be blue and orange. It will be as crimson as the Crimson Tide itself. Tell my nephew he is an Alabama fan, just like his Aunt Tina. ROLL TIDE!

    This is one of the favorite recipes in my family. But I have to disagree with you on the water chestnuts. They are pretty gross by themselves, but they seem to soak up the flavor of what they are stirred into and we LOVE the crunch. We simply must have it in the spinach dip.

I wasnt really a big fan of Spinach for many years ( understatement, I hated the stuff), but after shacking up with a vegetarian I kind of had to put up with it, and have slowly come to totally love the stuff. Spinach curry is now my absolute favouritest! I recently found an entire spinach recipes website which is my new favourite site now, you should take a look!

  33. I don’t watch football either and eating Spinach Dip is right up there with my #1 things to do in life. Nobody else in my little family likes it so I get to eat the whole bowl. Sometimes I take some to work to share. That puts me in good with everybody. Life is good :)

    Hey, I discovered this dip a few years back – the funny thing is, I’m not a fan of either spinach or water chestnuts, but I love them in this dip! I usually cut the mayo down to a half-cup, that works just fine and lets the other flavors shine a bit more. I also chop the water chestnuts to itsy-bitsy pieces, so you really just get a bit of crunch. My in-laws LOVE this stuff. I’ve also just used regular onion, chopped VERY fine, when I didn’t have green onions on hand, and that works too.

    Don’t watch Football and I can’t stand water chestnuts. I think it’s the texture. They are like eating styrofoam. I only like (ok love) cold spinach dip. I could eat it on anything, including sandwiches!

    When I lived in Alabama (Blountsville) our neighbors were so passionate about football that they named their daughter ‘Crimson’ and “roll tide” was used instead of “goodbye”.

    Hey… I’m a Georgia Fan, too!

    In the sense that I love the whole idea of being a football fan and sporting anything with UGA on it. I just don’t care anything about the game itself. LOL

    Superbowl Sunday is just an excuse for me to fix and eat some of my favorite finger foods. This dip is definitely going on the menu. I love spinach dip, but I’ve never made it with Knorr. I usually use a ranch dressing mix.

    Who is playing in the this year’s Superbowl, anyway?

    Girl, I DON’T WATCH FOOTBALL either!! I’ve lived in Alabama all my life too but I’ve never liked/watched football. I don’t deny my sweet hubby the opportunity to watch him some football, but I’ll be sitting with my nose in a book while he is a few feet away with his nose in the TV. :)

    First time I had this dip was at my wedding 25 years ago and my mom has made it for every family event since. We add green peppers and garlic salt, and chop everything (including water chestnuts) very small. She always serves it in her “apple” Corelle bowl which was my mamaw’s or a bread bowl. I love it with carrot and celery sticks, as well as, potato chips. It will be at my SuperBowl party which I never watch either, except for the commercials…lol! Love ya Christy!

    I grew up in Alabama and never paid any attention to football, either. When I had to attend a high school football game to write an article for Journalism class, I described scoring a touchdown as “running across the finish line.” My teacher just cracked up!

    But now that I live in Iowa with a hard-core Green Bay fan for a father-in-law, I’m learning the ropes. And for the Super Bowl, I’m planning to make your Texas Caviar and Butterfinger cake. It’s all about the food for me, personally. :)

    I am a big football fan, ROLL TIDE! Although I don’t think we should be ugly to each other over a game. I actually made this very dip this past weekend. Just to let you know, I used lite sour cream and lite mayo and it was delicious. I included the water chestnuts cause I really like the crunch. YUMMMMM!

    Not a sports fan at all!!! But enjoyed watching my sons play little league, basketball, tennis, run track while in school. But I just loved seeing the boys and cheered for all of them. One mother jumped on me for cheering for a friend on the opposite team!! Oh ,mercy,they are just children.

    But I do like making all of the wonderful recipes for the parties.

BTW, That spinach dip is really nice put in a hollowed out loaf of Hawaiian King bread….it makes a beautiful plate presentation~ from one “foodie” to another~winks and giggles~

    Christy, we all love the spinach dip too. After we make it up we put it in the food processor. Makes it smoother and easier to eat and you still get all the flavor.
