I am trying freezer meals for my husband and I before the birth of our baby, and also for a friend whose husband is deployed. Since my husband and I rarely eat together due to our schedules, I am trying to make individual portions.
Question: Can I cook these, then portion them out into freezer safe tupperware containers? That's how I've done shepherd's pie, lasagna, and chicken divan so far, but I was really curious about the hashbrown casserole (it sounds SO good!!) Thanks!

After this post, I made some freezer meals for busy days. When I made the hashbrown casserole, I had my DH help. I had him write what it was and the date on the bags. He thought he was clever and added in under that "Danger: Do Not Eat!" LOL Even funnier, is now he asks for hashbrown casserole every couple of days. I got our last bag out to cook yesterday and he asked when I was making it again! :D

Jill,

Freeze bags are the way to go. You can put your casserole in a gallon bag, flatten it out and then stack them in the freezer. It can really save you a ton of space. you can also try using the same size containers for everything and then it will stack up easier. I hope that helps.

I have started utilizing my freezer a lot more lately, but I have never frozen complete meals.

For some reason I thought there was more to it, lol. Thanks to Christy and her sister-in-law I will definitely give it a try!

The whole broccoli thing - cut broccoli is in larger pieces than chopped broccoli. So she bought cut broccoli so it would be big enough for the one recipe, and then chopped some of it to make it smaller for the other recipe. I think she meant to say you can chop the cut broccoli, but you can't cut the chopped broccoli. Make sense?

Anyway, this all looks so delicious. I need to get into the habit of making freezer meals. Not necessarily for an entire month, just enough that I can grab and go on busy days. It really is a wonderful idea, and your sister in law is just wonderful for putting this all together for all of us!

I've never made "freezer food" before and I have been cooking for a long time. This sure would have been handy when I was working outside of the home. I guess I never thought of it because I dont' know anyone in my family who does this. Thanks for the inspiration--I really appreciate it and my family really appreciates all of your recipes that I have tried. Sheila
