Responding to my own post! LOL

This was AMAZING! Added the ham and it was the perfect entree for a cold night! Served it with fresh green beans and some sliced tomatoes.

While we were enjoying it, I was dreaming of other ways to serve it ---- make it without the ham and use it as a base and pour leftover chili on top?!?!?!?! Yum!

Ken...you are a man after my own heart. I had to LOL at your comment because of the conversations I and my husband have had. I didn't grow up with sweet cornbread, but my husband did (to the point I told him it was more like cake) and I've slowly converted him to a non-sweet or less-sweet cornbread. It is a little sweet using the Jiffy, and this is the ONLY time you will see this Southern girl using Jiffy in her kitchen, but the way I make the casserole, it seems to balance out the sweetness a little. You might try to make it using Martha White's Cotton Country Buttermilk Cornbread Mix in the packet, but it's only 6 oz. (as opposed to Jiffy's 8.5 oz.) so you will have to get two packets and use one whole one and nearly 1/2 the other packet. I've never tried the recipe using this, so I can't vouch for how it will turn out, but it's worth a try and will definitely have only the sweetness of the corn.

I make the same casserole, but I don't put sour cream or cheese in it and I use 2 cans of cream-style corn (instead of 1 cream-style and 1 whole kernel), 4 eggs (instead of 2) and add 1/2 cup of milk and some chopped parsley or parsley flakes for color. It's so good, I'm always asked for the recipe and I have to make a BIG batch every time I make it because people want seconds and thirds! It's one of the best casseroles ever. I bet this version is really good, too.

Christy, can this be made in a 9x13 metal cake pan? I don't have a glass dish that size.

Was just trying to figure out what to have for dinner tonight, and VOILA! Here it is! lol Cook up the fresh green beans (with boiler onions, of course!) and maybe find a ham slice or throw a package of frozen diced ham in with the corn.

Thanks, Christy! You're a lifesaver again!

HAHAHAH On that Post script...I cam here to browse a bit, find something good for our Thankgiving dinner and since I got voted for two sides, I need something to go with my green bean casserole. This corn will be the perfect accomplice!!!! I will let you know how it turns out!

I made this tonight to serve with a homebaked ham (compliments to your easy cooking instructions) and some scalloped potatoes. YUMMMMMMM:) The kitchen smells heavenly:) Thanks for the wonderful step by step instructions; loving your web site as it's like a taste of home from when I was growing up.

My 8 year old daughter and I made this last night. She loved that everything was easy enough for her to do without much help from mom! I cooked this as a side dish to fried ham steaks, fried okra, and macaroni and cheese. Everyone was a little skeptical as they tried it but it was a true winner! I cooked it in a 9x12 and there was literally only about a 2inch row left!! My husband looked at me like I was crazy! He said, " I am not eatin no cornbread!" but I made him try it and not only did he eat the slice on his plate but he took it to lunch today! Thank you so much!

I made the corn casserole last night. My wife and I both liked it, but wish it wasn't SO VERY sweet. I guess Jiffy Mix must be made for yankee tastes ... lol. I might try it with some other brands ... Gladiola, Martha White, etc.
