We had company over the weekend and I cooked several big meals but decided to do a simple one as well. I can’t help it, I love hot dogs. But to gussy them up a bit, I added my Dad’s hot dog chili. This is one of those recipes you get told over the phone whenever you need it and no one actually bothers to write it down.

So I called Mama “Can you tell me how to make the hot dog chili again?”. She told me the instructions and I was off to the races – only this time, I’m gonna write it down. For y’all. Because I love ya’ll and because it’s summer time and most of us are going to be making more hot dogs over the next two months than we will the entire rest of the year combined.

Did I mention this freezes well? Well it does. So make a big batch and freeze it in smaller batches and have hot dog chili all summer long. Hey, its a double meat on a bun. How can you go wrong?

I am working on the free e-cookbook of freezer recipes. Make sure you’re subscribed by email to get it first! If I had a babysitter I would have had it done by now. I had a babysitter once…for about an hour or so. Got to go to a meeting at a local library. That was fun. I’ll always carry memories of that night with me. Sometimes I think about getting a T-shirt made like my son’s that says “I do my own stunts” only mine would say “I raise my own kids” ~grins~. I think I deserve a t-shirt for that. Maybe a trophy, too!

You’ll need: Ground beef, chili powder, black pepper, salt, and water.

My mom insists on Mexene chili powder. She swears by it. I insist on Morton Salt for reasons I’ve mentioned a few times on Southern Plate. If you don’t know why I am devoted to Morton’s …now is the time for a fun little treasure hunt! Go up to the search box at the top right of this page (right beneath my header) and type in “Morton Salt” and posts where I have mentioned it will come up. Just in case you like digging around a bit!

Truth is I had no idea this was my Dad’s recipe. Have I ever seen him make it? Umm…no. But he must have at some point. Of course, this makes sense seeing as how I don’t remember having it more than once a year or so. So in that case, I guess Daddy could have been the one making it. ~winks~

With that in mind, I wanted to share with you something one of my reader’s sent me. I can’t remember who sent it though and when I went to find it, I couldn’t find it anywhere in my email. My email is a bit congested. So I went on the web to find it again. If you sent this to me, please let me know in the comments so I can thank you!

This is EXACTLY how it is at my Mom’s house. It’s not how it is at my house because…well, I don’t have a grill. I’d like a grill but I don’t currently own one. If that changes at any point in the future you’ll know by the sudden influx of grilling recipes I post!

BBQ Facts of Life:
Men and Cookouts

*Note, if this offends any of my wonderful male Southern Plate readers, I promise to post some female defamation humor in the near future and I’ll even try to feed you a cookie at some point in your life to help make up for it.

We are about to enter the BBQ season. Therefore it is important to refresh your memory on the etiquette of this sublime outdoor cooking activity.

When a man volunteers to do the BBQ the following chain of events are put into motion:

Routine…

  1. The woman buys the food.
  2. The woman makes the salad, prepares the vegetables, and makes dessert.
  3. The woman prepares the meat for cooking, places it on a tray along with the necessary cooking utensils and sauces, and takes it to the man who is lounging beside the grill – beer in hand.
  4. The woman remains outside the compulsory three meter exclusion zone where the exuberance of testosterone and other manly bonding activities can take place without the interference of the woman.
    Here comes the important part:

  1. THE MAN PLACES THE MEAT ON THE GRILL.
  2. The woman goes inside to organize the plates and cutlery.
  3. The woman comes out to tell the man that the meat is looking great. He thanks her and asks if she will bring another beer while he flips the meat
  4. Important again:

  5. THE MAN TAKES THE MEAT OFF THE GRILL AND HANDS IT TO THE WOMAN.
  6. The woman prepares the plates, salad, bread, utensils, napkins, sauces, and brings them to the table.
  7. After eating, the woman clears the table and does the dishes.
  8. And most important of all:

  9. Everyone PRAISES the MAN and THANKS HIM for his cooking efforts.
  10. The man asks the woman how she enjoyed ‘her night off.’ And, upon seeing her annoyed reaction, concludes that there’s just no pleasing some women.

Alrighty, lets get cookin’!

Fill a pot with about enough water to cover up your ground beef.

Take a handful of ground beef and submerge it in the water and …

Moosh it up in there with your hands.

This is super easy if you do it under the water.

Yeah, I know its gross but it’s raw meat and someone has to cook it so buck up, buddy, that “someone” is you.

Besides, it’s gonna be good and I hereby declare that you can have the first hot dog for your efforts!

When you are done it will look like this.

Add chili powder. We add 3 tsp for every pound of meat so for this recipe I am adding 9 tsp.

I’m feeling terribly repressed lately. There are so many things I want to talk about. So many tangents I want to go off on and ideas and projects I want to update you on but I try (believe it or not) to stay somewhat on point on Southern Plate and I realize that y’all are coming here for food so I’ve been trying to avoid straying too terribly far off topic.

~sighs~ But I love to write and I love to share what is going on in my little minuscule corner of the world so preventing myself from doing that has caused it to build and I feel like I am about to explode. I’m dying to do some posts about the summer crafts, science experiments, and general cool stuff that the kids and I are doing around Bountiful so consider this fair warning. It’ll be coming up soon!

Add salt to taste.

You’ll need a good bit though. I am adding a heaping tablespoon. You might even want to add more.

Add a tablespoon of pepper as well (more if you like).

Stir that up and bring to a boil. Reduce heat and boil gently for about an hour. It’ll look like this.

Now get a ladle and skim the majority of the grease off the top of the pot and into a separate bowl.

Don’t panic honey, it’s just grease. I know it may look gross but if you knew half of what was in the food you ordered in a restaurant you wouldn’t think twice about drinking this stuff straight.

This is what we have left.

Yummmmmmm

Now get out what you need with a slotted spoon but to make the hot dogs really good, you need to put a bit of that juice on them, too!

Alright, now this looks good but it needs a little something…It looks naked to me.

Aww yeah, that’s the stuff!

Dad’s Hot Dog Chili

  • 3 lbs ground beef
  • 9 tsp chili powder (Mama insists on Mexene)
  • 1 T salt (more to taste)
  • 1 T pepper (More to taste)
  • Enough water to cover your ground beef

Place enough water in a pot to cover your beef. Take handfuls of the beef and submerge in the water, mooshing it up with your hands. Add seasonings and stir. Bring to a boil, reduce heat and boil gently for about an hour. Ladle off grease. Remove chili with a slotted spoon to put on hot dogs. Freeze leftovers for your next cookout!

    Ohhhhh I love chili dogs!! But even better I love Chili Cheese Burgers and this recipe is almost the exact one I make…give or take a few hot peppers once they get going in my garden! A big old fat grilled burger topped with chili, some mustard and as much cheese as that bun will stand! Nummy!!! Man! I wish I had one right now and if you don’t let that chili and cheese drip onto your fries or chips you don’t know what you are missing!!!! Next thing you know you will be making chili cheese fries, chili cheese buns, chili cheese chips, chili cheese chicken strips……the possibiities are endless!

    This is very similar to the chili sauce my grandmother made when I was growing up and it is DELICIOUS! One thing my grandmother did was drop the uncooked weiners into the chili a short while before serving; grandmother didn’t grill so this cooked the weiners. And your juice comment is right on; be sure to add some to your hot dog. GOOD EATING!

    Hmm My Husband loves Chili, sometimes he adds a little hotdog to it (He actually hates hotdogs, he will eat them only with every condiment known to man on top). This is pretty easy, I bet I could do it when I forget to buy him chili.

    Oh Something you may want to try with your next Hotdog: Sourcream! I know it sounds gross, my brother got hooked on it when he was in the Army (I think while in Iraq) and he forced me to try it, and it was the best condiment. Especially with Chili, cheese and mustard!

    Now I am on tangents!

    I absolutely love your tangents, and I don’t have a problem reading them. I figure you will get to the food eventually and in the meanwhile I have something worth reading. I had a great time talking with you the other night on FB!

    That was too funny. Except yours truly does the grilling along with everything else. My dad does stand around and offer “advice” though.

    Mexene chili powder is great.we use it most of the time as long as we remember to get it @ Wally World cause it’s too darn expensive at the local stores if they have it at all.

    The apron is cute and love the yellow walls as well. I guess consider me entered.

    my daughters favorite meal! we add old bay seasoning, cause, well, we add it to everything (ok ok, i have a yankee grandmother, you do what you can ya know?)…..

    my daughter is 2 and already has 2 aprons to cook in- she loves them and insists i wear one too- which means i’ve had to start haunting antique stores cause i like to half aprons…love the link to hip hostess. i see 2 of their aprons at least in my future and lots more christmas presents for friends!!!!!!!!!!!

    I love hot dogs too and never could see why some people think them beneath them. A chili dog is even better and I want chopped raw onion on mine. A toasted bun and it is a meal fit for a king in my opinion.

    I love this chili. Have you ever heard of a cafe in Huntsville called Mullins? It is on Andrew Jackson Way. They have been around for years and they are known for their chili dogs. slaw dogs and hamburgers. They make their chili this way.
    I know what you mean about men and cookouts. Everybody in my family loves my husbands steaks and just rave over them. But all he does is put them on the grill. I am the one who marinates them all day and gets them ready just like you said. We went to a marriage thingy at church a few months ago and they showed a video of exactely this scenerio. It was hilarious and so true.
    I just love your blog and cant wait to see the new posts every day and the emails. I really want to try that cold coffee recipe.

          The Lincolnettes meet there some. They meet every month at a different restaurant. MY mother in law and her sister went to Lincoln way back in the day. The Lincoln Reunion is coming up the end of June, so I will be taking her if her sister in law doesnt.I sub there too. It is the best little school and community.Your 5th grade teacher, Patti Moss is a good friend of mine. Love her!!

        Yes!! We loved the corn dogs and upside down banana splits. I am taking care of my mother in law (she is 88) and has to go to Mullins EVERY DAY!So they know us very well there.I remember when they were 10 for a dollar. They were better back then though. I just got through grating 3 bars of that soap to make your recipe for laundry detergent.It lools like cheese. Hahaha

    Christy, I want you to know that I am VERY offended by that post about Men. Thats just WRONG…I mean if the woman was on the ball she would have already noticed he needed a beer and brought it BEFORE he had to ask…

    Do not enter me into the apron contest. Real men do not care if they get food stains on their clothes. It’s not like we have to wash them. Thats what women are for after they make sure we have a beer in our hands.

    I love the yellow color of your new kitchen ( attached to the house) and the apron is great. I love aprons and wear one every day of the week. Have 3 dresser drawers full and am always adding new. Of course I cook for 425 to 450 people 5 days a week so need the aprons .

    I also must share some news! We live in Massachusetts and while I do not miss the weather down south, I sure miss the good food. We found out last week that my husband’s company is transferring him to Arkansas. I can’t wait for good mexican food and catfish! And being able to find cornmeal in the stores besides on cereal aisle in small boxes. We will be moving about 30 mins from Memphis so if anyone is in that area, give me a holler. (Yes my Texas accent and words will once again be understood! LOL)

    I’ve never made chili with water! I just brown a lb of hamburger, drain, stir in 1 tsp salt & 1 Tbsp chili powder, then add 1 cup ketchup. yummmmmmmmmmmmm

    I’m happy to know that this chili freezes well, because if my husband likes it, he’ll want it all the time : ) About the apron, I would LOVE to have one, because I am a Tennessee gal living in Northern California. Well, let me tell ya – there are a lot of, um, hippies who are too proud to think that women should be the ones doin’ the cookin’ anyway. So, it’s near impossible to find a cute apron anywhere besides on the internet. The ones I can find here might say things like “MEAT IS MURDER”, and I thought about getting one and painting “(but it sure is delicious)” on the bottom of it, but I would prefer one that has some sort of print and color to it. So, I don’t own a single apron (thank the good Lord for Oxy Clean spray), but I would be thrilled to start a trend for us ladies in NorCal who aren’t such feminists and make meals with real butter, fried meat grease, and (heaven forbid) BEEF : )

I have always loved having lt. yellow kitchens in my houses, but now am trying lt. green for a change. I love the Chili sauce recipe, and plan to give it a try and freeze it like you recommended. I crave a good ole fashioned chili dog with mustard and onions……and always hate to open a big can of canned chili.     I make my chili with the water too!!!! Actually, I do it anytime I am cooking ground beef and then drain off the water/grease. This is the first time I’ve seen anyone else do it with water!!!!! Makes me feel a little better after pulling my yucky greasy hands out of this water/beef mixture!! :o )

    I have been looking for a great hot dog chili. Our favorite place has what they call “Yellow Jacket Dogs”, and they are so good, but homemade dogs are never as good. I have started lightly buttering and toasting the buns, which greatly improves the flavor in my opinion. Now I will try with your chili. Thanks!

    Your recipes are a breath of Springtime.As the mother of three young women, I have to tell you that it is my experience that kitchen aprons, such as the one featured on your site, can be a powerful motivator to getting in the kitchen and discovering the joys of cooking. Each daughter spent more time in kitchen with her new apron.
    Since I was a stay at home Mom during their growing up years, no one had time to learn how to cook – too many activities, too much homework, etc. Later,all three learned to cook by phone, “Mom, how do you make biscuits and gravy?” and many other dishes. The old boyfriends called from college asking for recipes that were their favorites. Skills now range from gourmet to OK and wear their cute little aprons all the time. Our youngest married on Maui and I found an apron in a tropical print. Guess who wears it all the time? They also give the aprons as gifts to friends. It’s a winner!

    Thanks for the hot dog chili recipe! I am doing the Low Carb diet again and really enjoy chili, but so many call for flour or masa. I just want plain old chili and this fits perfectly. I looked up the Mexene and found that it is actually a blend of chili powder with cumin, oregano and garlic. Everyone else probably already knew that. Kind of a shame too, with me living here in TX and all!

    Hi – My husband loves chili dogs and mine never turned out right. This way of making the sauce is certainly different from anything I have tried before. Hope this tastes like he wants them too. I like to buy aprons at antique stores, yard sales and auctions. My mother and grandma’s always wore aprons.

    I wish I had my Mom’s aprons — sure don’t know what happened to them. I do have one of Paula Dean’s aprons that says — if you leave hungry, it’s not my fault!!! Would love to have another apron, because they really do come in handy a lot. I use them often during canning season.

    My mother who has been passed away for a few years, use to make this
    recipe for us all the time when I was home.
    But, she added chopped up onions to it and flavored it with a little ketchup (had to be Heinz though).
    It sure did make a hot dog taste so much better.
    Then in the Winter time, she would toss a can of beans into it and we would eat that as our main dish for supper and for some reason, we always had saltine crackers with it.
    This sure does bring back a lot of wonderful memories.

    Thanks for the hotdog chili recipe. I’ll be giving it a try. I looooooooooooove hot dogs. My husband was in the Air Force for 30 years and every where we lived or visited I seached until I found the best hotdog joint in town (still do). After all that searching, my favorite is still one from my high school years. The Dew Drop Inn, on Old Shell Road in Mobile Alabama. The chili dogs there are to die for! They are so popular in Mobile that they serve them at some of the Mardi Gras balls. I’ve got to plan a trip over to Mobile.

    You have the “best” trophy that sits at your kitchen table every day. They grow up soooo fast, soon they will be driving and then off to college and oooohhh now they’re on their own. (Keep sharing them with us)

    I wanted a chili dog Sat. night, but no one to go to the local drive-in. Don’t know why I only make chili in cold weather, but eat them from drive-in in the summer. I’ll make some this weekend.

    I loved the apron with the pockets. It gave me a great idea. I use a walker or my rolly chair in the kitchen. An apron with pockets would allow me to carry spices and small packages to the table or stove.

    I enjoy your comments and have tried a few of your recipes. My father in law, son and I do try our hand at cooking. By the way, maybe at your house the grill routine is what you described, but where we come from the man can and does cook the whole meal when required. My dad taught me how to cook hamburgers and fried potatoes, the right way. I have never found anyone who could cook them better. Do you have any manly aprons? Oh, thats right REAL MEN don’t use aprons. I guess women are just messy. Thanks for all the great southern recipes and tips.

I also have seen “egg-white” separater cups w/ nostrils…….I cracked up!! ..~get it, the pun? get it?~ Good luck now.

      Really impressed with you though! But I think pretty much all of the men who read SP are good cooks. I’m raising a good cook in my son! My brother owns a restaurant, too, ya know. I think my Mama raised us to live in the kitchen.

      Except for my sister…who doesn’t even grill! lol
      But she can order a mean burger, I’m sure!

      Now, whats a gal gotta do to get one of your hamburgers with a side of taters?

    I kept looking at that chili and couldn’t figure out what wasn’t right to me….and finally it hit me, you don’t use any tomato sauce, paste or anything like that! I’m going to have to try it this way for sure!

    I was watching Diners, Driveinn’s and Dives last night and they were showing somebody make hot dog chili similar to this. Looks good, love hot dogs too. Hubby will eat them cold out of the fridge (yuck)! Not me, give me the works and heat em up!

    It seems so simple. I love the idea that you can freeze it. I am the only one in my home that likes hotdog chili…so i’ll make a half a batch and freeze enough for one portion in individual packs.

    Well, I was going to wait until the 4th of July to make this chili, but I ended up making it last night after my daughter Caroline told me she wanted to have hot dogs for dinner. Boy, was it good! I made the chili and used it for chili dogs along with some fresh cut Vidalia onions. Mmmmmm mmmmmm. For a side, I oven-roasted some home fries with olive oil and seasoned salt (skins on, of course). Talk about good! My husband even commented on how good everything was, and he’s not real big on hot dogs usually.

    By the way, I LOVE LOVE LOVE your sunny kitchen. You just can’t help but be happy when you look at something yellow :-) Yellow reminds me of my daughter’s favorite song, too–the one she likes to sing in the shower – “Walking of Sunshine.” She likes yellow too.

    I’d love an apron, too, and I might have to order one if I don’t win it here. The only trouble is which one to choose – avocado or espresso. They’re all so cute!

    Also, I can’t wait for my cookbook to arrive. We enjoy your recipes at our house. I just found your site a couple of weeks back, and we’ve already had your dad’s chili, fire and ice salad (made with fresh cucumbers form the garden), sweet and sour green beans, one dish pork chops, banana crumb cake, and homemade banana pudding (couldn’t let those eggs white go to waste, though, so I made a meringue, and my neighbor said it was just like his mama used to make). Everything has been so easy to make and so good. Thanks again for all the recipes!

    I really need an apron my teenage daughters are always losing the only one I have. I can’t wait to try this recipe my girls were just
    whining about it being hot dog season so this might make them a little more excited about it. And they just love your Mississippi Mud
    Cake!! We took one to my friends house that just had surgery, And about 10 min after they finished making it they called me and said that it was killing them that they weren’t going to be able to eat it
    and if they could please make another one for them. Whats a mom to do I let them make another one it’s to good to pass up. The hot dog chili looks great. and to make things easier 3tsp. = 1 TBS but I know that you know that already.

    I am not commenting to win an apron, so you may withdraw me from the contest. I am just commenting about the huge amount of gender stereotyping in this post! Wow! And I thought the cleaning commercials were bad. I would hope that not every home is like this. In fact, I KNOW it isn’t. I know you were trying to be humorous, and it may be that way in your home and many other opposite-sex partnered (but not all!) homes, but not every home is like that. Also, many men visit your blog and love to cook.

    Anyway, with that aside, I must comment about the chili dog recipe. It looks really good! I don’t mind the grease at all. I agree with you 100% about what we eat at home vs. what we don’t know they serve us in restaurants.

    I’m definitely gonna have to give this a try! Me and the other half eat chili dogs off and on here, but I’m always using the canned chili and that just doesn’t cut It at times. Leaves you desiring something a bit more tasteful and with a little oomph! hehe

    I never, ever would of thought of boiling hamburger meat like that! Looks rather simpler and much easier then browning It in a regular skillet over and over as I do. Some habits are hard to break though! Especially If your the cook! lol

    In memory of my grandmothers, Lou Newton, and Ora Prince

    I don’t think our kids know what an apron is.
    The principal use of Grandma’s apron was to protect the

    dress underneath,because she only had a few,it was easier to

    wash aprons than dresses and they used less material, but

    along with that, it served as a potholder for

    removing hot pans from the oven.

    It was wonderful for drying children’s tears, and on

    occasion was even used for cleaning out dirty ears.

    From the chicken coop, the apron was used for carrying

    eggs, fussy chicks, and sometimes half-hatched eggs to be

    finished in the warming oven.

    When company came, those aprons were ideal hiding places

    for shy kids.

    And when the weather was cold, grandma wrapped it around

    her arms.

    Those big old aprons wiped many a perspiring brow, bent

    over the hot wood stove.

    Chips and kindling wood were brought into the kitchen in

    that apron

    From the garden, it carried all sorts of vegetables. After

    the peas had been shelled, it carried out the hulls.

    In the fall, the apron was used to bring in apples that had

    fallen from the trees.

    When unexpected company drove up the road, it was

    surprising how much furniture that old apron could dust in a

    matter of seconds.

    When dinner was ready, Grandma walked out onto the porch,

    waved her apron, and the men knew it was time to come in

    from the fields to dinner.

    It will be a long time before someone invents something

    that will replace that ‘ old-time apron’ that served

    so many purposes.

    Send this to those who would know (and love) the story

    about Grandma’s aprons.

    REMEMBER:

    Grandma used to set her hot baked apple pies on the window

    sill to cool.

    Her granddaughters set theirs on the window sill to thaw.

    They would go crazy now trying to figure out how many germs

    were on that apron.

    I don’t think I ever caught anything from an apron.

    Being from the great state of WV.we all eat hot dogs with mustard, onions & hot dog chili.
    I know we could eat them 3 times a week.
    I never knew some people ate them any other way until we moved to NC. for 5 years and learned some people put slaw or relish on theirs that may be ok but I never wanted to try one.
    I make my hot dog chili this way except I’ve never heard of this brand of chili powder,I will look for it at Wal-Mart & Kroger’s I use Tones brand chili powder from Sam’s Club and add a little cayenne powder.
    I really like your yellow kitchen it looks so clean & bright.

    This is similar to a recipe I’ve been using, but you’ve made it so simple that I think I could quickly learn to do it by memory. one of the things I like to do is use a potato masher to “smush” the meat to the bottom of the pan and then “work it” thoroughly until I get a consistency similar to what you showed in your pics.

    Thanks for the recipe, although I’ve been using a slightly different approach for years (setup is the same; don’t bother “spooning” off grease; after “mashing” up meat and adding chili powder, bring to a boil – occasionally stirring – and let boil down until almost no water – or “juice” – remains. Just be sure to keep it stirred (especially toward the end), or it will boil out, stick, burn, and taste terrible. Have you ever tried chili burgers ? (Hamburger meat, onion, ketchup, mustard, and several oversize spoonfuls of the chili) – almost like a sloppy joe, only better…good luck and thanks for all your hard work on this site…

    Also, not sure if anyone has already posted this or not. Store leftover chili in refrigerator, take some out, put in put, barely cover with water, bring to boil, let boil down to desired “wetness”, and it’s just as good as fresh…

    sounds really good….my husband was from a small midwest town that had one of those “greasy spoon” places that served a great spanish hot dog…..we finally go the recipe years after it closed, and the sauce actually had ground up hot dogs in it in place of the ground beef.

    Hi – My husband loves chili dogs and I have never made a topping like he wants. He always had chili dogs at this little restaurant when he was growing up. It was this little place in Kentucky, ran by Greek owners who made these memorable chili dogs. He still remembers and that was over 50 years ago. Needless to say, I’ve gotta’ try this!!!!!
