We had company over the weekend and I cooked several big meals but decided to do a simple one as well. I can’t help it, I love hot dogs. But to gussy them up a bit, I added my Dad’s hot dog chili. This is one of those recipes you get told over the phone whenever you need it and no one actually bothers to write it down.

So I called Mama “Can you tell me how to make the hot dog chili again?”. She told me the instructions and I was off to the races – only this time, I’m gonna write it down. For y’all. Because I love ya’ll and because it’s summer time and most of us are going to be making more hot dogs over the next two months than we will the entire rest of the year combined.

Did I mention this freezes well? Well it does. So make a big batch and freeze it in smaller batches and have hot dog chili all summer long. Hey, its a double meat on a bun. How can you go wrong?

I am working on the free e-cookbook of freezer recipes. Make sure you’re subscribed by email to get it first! If I had a babysitter I would have had it done by now. I had a babysitter once…for about an hour or so. Got to go to a meeting at a local library. That was fun. I’ll always carry memories of that night with me. Sometimes I think about getting a T-shirt made like my son’s that says “I do my own stunts” only mine would say “I raise my own kids” ~grins~. I think I deserve a t-shirt for that. Maybe a trophy, too!

You’ll need: Ground beef, chili powder, black pepper, salt, and water.

My mom insists on Mexene chili powder. She swears by it. I insist on Morton Salt for reasons I’ve mentioned a few times on Southern Plate. If you don’t know why I am devoted to Morton’s …now is the time for a fun little treasure hunt! Go up to the search box at the top right of this page (right beneath my header) and type in “Morton Salt” and posts where I have mentioned it will come up. Just in case you like digging around a bit!

Truth is I had no idea this was my Dad’s recipe. Have I ever seen him make it? Umm…no. But he must have at some point. Of course, this makes sense seeing as how I don’t remember having it more than once a year or so. So in that case, I guess Daddy could have been the one making it. ~winks~

With that in mind, I wanted to share with you something one of my reader’s sent me. I can’t remember who sent it though and when I went to find it, I couldn’t find it anywhere in my email. My email is a bit congested. So I went on the web to find it again. If you sent this to me, please let me know in the comments so I can thank you!

This is EXACTLY how it is at my Mom’s house. It’s not how it is at my house because…well, I don’t have a grill. I’d like a grill but I don’t currently own one. If that changes at any point in the future you’ll know by the sudden influx of grilling recipes I post!

BBQ Facts of Life:
Men and Cookouts

*Note, if this offends any of my wonderful male Southern Plate readers, I promise to post some female defamation humor in the near future and I’ll even try to feed you a cookie at some point in your life to help make up for it.

We are about to enter the BBQ season. Therefore it is important to refresh your memory on the etiquette of this sublime outdoor cooking activity.

When a man volunteers to do the BBQ the following chain of events are put into motion:

Routine…

  1. The woman buys the food.
  2. The woman makes the salad, prepares the vegetables, and makes dessert.
  3. The woman prepares the meat for cooking, places it on a tray along with the necessary cooking utensils and sauces, and takes it to the man who is lounging beside the grill – beer in hand.
  4. The woman remains outside the compulsory three meter exclusion zone where the exuberance of testosterone and other manly bonding activities can take place without the interference of the woman.
    Here comes the important part:

  1. THE MAN PLACES THE MEAT ON THE GRILL.
  2. The woman goes inside to organize the plates and cutlery.
  3. The woman comes out to tell the man that the meat is looking great. He thanks her and asks if she will bring another beer while he flips the meat
  4. Important again:

  5. THE MAN TAKES THE MEAT OFF THE GRILL AND HANDS IT TO THE WOMAN.
  6. The woman prepares the plates, salad, bread, utensils, napkins, sauces, and brings them to the table.
  7. After eating, the woman clears the table and does the dishes.
  8. And most important of all:

  9. Everyone PRAISES the MAN and THANKS HIM for his cooking efforts.
  10. The man asks the woman how she enjoyed ‘her night off.’ And, upon seeing her annoyed reaction, concludes that there’s just no pleasing some women.

Alrighty, lets get cookin’!

Fill a pot with about enough water to cover up your ground beef.

Take a handful of ground beef and submerge it in the water and …

Moosh it up in there with your hands.

This is super easy if you do it under the water.

Yeah, I know its gross but it’s raw meat and someone has to cook it so buck up, buddy, that “someone” is you.

Besides, it’s gonna be good and I hereby declare that you can have the first hot dog for your efforts!

When you are done it will look like this.

Add chili powder. We add 3 tsp for every pound of meat so for this recipe I am adding 9 tsp.

I’m feeling terribly repressed lately. There are so many things I want to talk about. So many tangents I want to go off on and ideas and projects I want to update you on but I try (believe it or not) to stay somewhat on point on Southern Plate and I realize that y’all are coming here for food so I’ve been trying to avoid straying too terribly far off topic.

~sighs~ But I love to write and I love to share what is going on in my little minuscule corner of the world so preventing myself from doing that has caused it to build and I feel like I am about to explode. I’m dying to do some posts about the summer crafts, science experiments, and general cool stuff that the kids and I are doing around Bountiful so consider this fair warning. It’ll be coming up soon!

Add salt to taste.

You’ll need a good bit though. I am adding a heaping tablespoon. You might even want to add more.

Add a tablespoon of pepper as well (more if you like).

Stir that up and bring to a boil. Reduce heat and boil gently for about an hour. It’ll look like this.

Now get a ladle and skim the majority of the grease off the top of the pot and into a separate bowl.

Don’t panic honey, it’s just grease. I know it may look gross but if you knew half of what was in the food you ordered in a restaurant you wouldn’t think twice about drinking this stuff straight.

Now get out what you need with a slotted spoon but to make the hot dogs really good, you need to put a bit of that juice on them, too!

Alright, now this looks good but it needs a little something…It looks naked to me.

Aww yeah, that’s the stuff!

Dad’s Hot Dog Chili

  • 3 lbs ground beef
  • 9 tsp chili powder (Mama insists on Mexene)
  • 1 T salt (more to taste)
  • 1 T pepper (More to taste)
  • Enough water to cover your ground beef

Place enough water in a pot to cover your beef. Take handfuls of the beef and submerge in the water, mooshing it up with your hands. Add seasonings and stir. Bring to a boil, reduce heat and boil gently for about an hour. Ladle off grease. Remove chili with a slotted spoon to put on hot dogs. Freeze leftovers for your next cookout!

    TAR NATION!!! If you aren’t jes the cutest thang, all squinched up w/ yo lil shoulders, lookin like a purdy little girl w/ an angel’s grin in that frilly, flattering apron. I am bettin a dollar to a donut that none of the male SP readers will be offended at your “male bashing bbq” thingy. Shucks, if they ARE mad and hear your drawl on the videos, surely all that madness will melt away. Then if they make the chili, taste it and make an aaaapple daaaapple cake or banana puuuuddin’……both your specialty, your “hate” mail will be zip/zilch/nada.

    I really need an apron my teenage daughters are always losing the only one I have. I can’t wait to try this recipe my girls were just
    whining about it being hot dog season so this might make them a little more excited about it. And they just love your Mississippi Mud
    Cake!! We took one to my friends house that just had surgery, And about 10 min after they finished making it they called me and said that it was killing them that they weren’t going to be able to eat it
    and if they could please make another one for them. Whats a mom to do I let them make another one it’s to good to pass up. The hot dog chili looks great. and to make things easier 3tsp. = 1 TBS but I know that you know that already.

  7. I am not commenting to win an apron, so you may withdraw me from the contest. I am just commenting about the huge amount of gender stereotyping in this post! Wow! And I thought the cleaning commercials were bad. I would hope that not every home is like this. In fact, I KNOW it isn’t. I know you were trying to be humorous, and it may be that way in your home and many other opposite-sex partnered (but not all!) homes, but not every home is like that. Also, many men visit your blog and love to cook.

    Anyway, with that aside, I must comment about the chili dog recipe. It looks really good! I don’t mind the grease at all. I agree with you 100% about what we eat at home vs. what we don’t know they serve us in restaurants.

      Lord, you are so right on the restaurant. It’s best not to think about what they’re putting in it, especially if you get the rare treat of eating out! I seldom do but have hopes of the future! lol

    I’m definitely gonna have to give this a try! Me and the other half eat chili dogs off and on here, but I’m always using the canned chili and that just doesn’t cut It at times. Leaves you desiring something a bit more tasteful and with a little oomph! hehe

    I never, ever would of thought of boiling hamburger meat like that! Looks rather simpler and much easier then browning It in a regular skillet over and over as I do. Some habits are hard to break though! Especially If your the cook! lol

    In memory of my grandmothers, Lou Newton, and Ora Prince

    I don’t think our kids know what an apron is.
    The principal use of Grandma’s apron was to protect the

    dress underneath,because she only had a few,it was easier to

    wash aprons than dresses and they used less material, but

    along with that, it served as a potholder for

    removing hot pans from the oven.

    It was wonderful for drying children’s tears, and on

    occasion was even used for cleaning out dirty ears.

    From the chicken coop, the apron was used for carrying

    eggs, fussy chicks, and sometimes half-hatched eggs to be

    finished in the warming oven.

    When company came, those aprons were ideal hiding places

    for shy kids.

    And when the weather was cold, grandma wrapped it around

    her arms.

    Those big old aprons wiped many a perspiring brow, bent

    over the hot wood stove.

    Chips and kindling wood were brought into the kitchen in

    that apron

    From the garden, it carried all sorts of vegetables. After

    the peas had been shelled, it carried out the hulls.

    In the fall, the apron was used to bring in apples that had

    fallen from the trees.

    When unexpected company drove up the road, it was

    surprising how much furniture that old apron could dust in a

    matter of seconds.

    When dinner was ready, Grandma walked out onto the porch,

    waved her apron, and the men knew it was time to come in

    from the fields to dinner.

    It will be a long time before someone invents something

    that will replace that ‘ old-time apron’ that served

    so many purposes.

    Send this to those who would know (and love) the story

    about Grandma’s aprons.

    REMEMBER:

    Grandma used to set her hot baked apple pies on the window

    sill to cool.

    Her granddaughters set theirs on the window sill to thaw.

    They would go crazy now trying to figure out how many germs

    were on that apron.

    I don’t think I ever caught anything from an apron.

    Being from the great state of WV.we all eat hot dogs with mustard, onions & hot dog chili.
    I know we could eat them 3 times a week.
    I never knew some people ate them any other way until we moved to NC. for 5 years and learned some people put slaw or relish on theirs that may be ok but I never wanted to try one.
    I make my hot dog chili this way except I’ve never heard of this brand of chili powder,I will look for it at Wal-Mart & Kroger’s I use Tones brand chili powder from Sam’s Club and add a little cayenne powder.
    I really like your yellow kitchen it looks so clean & bright.

    This is similar to a recipe I’ve been using, but you’ve made it so simple that I think I could quickly learn to do it by memory. one of the things I like to do is use a potato masher to “smush” the meat to the bottom of the pan and then “work it” thoroughly until I get a consistency similar to what you showed in your pics.

    LOVE your site! It has given me so much confidence in becoming the gracious southern hostess that God intended for me to be, having been born in VA and raised in SC!
