I&#039;ve never had a recipe for mac salad, but anytime I made it for a get-together. I put everything in the fridge that I thought would taste good; carrots, bell peppers, dill pickles, olives, zuccini, sharp cheddar cheese and Best Foods mayonaise. (The two things I never skimp on are mayonaise and oil.) 
If you are afraid of the mayonaise going bad, there&#039;s another mac salad made with feta cheese, olives,  bell peppers, zuccini and italian salad dressing. There are a lot of variations of that one, too.
I love them all. (While I don&#039;t like &quot;chunks&quot; of onion, if you grate it finely, you get the taste, but not the bite.)

		<description>I was born and raised in charlotte,nc....have lived in appalachia for 17 years or so...every summer is started with a craving for fresh cold mac salad.... all the ladies in my family would make it the same way...with good ole fresh out of the garden tomato and cukes, a little onion, real mayo,(you know the ones, dukes,hellmans or jfg,..sauers was common when i was little.) add a little salt, celery seed, and alot of black pepper. chill overnight....especially if its for company.....mmmmmm.</description>

Its made like yours except no relish and add cubed cheese (you have to put cheese in everything in Wisconsin...and not that Velveeta stuff - I&#039;m pretty sure you would be shot if you used that) and defrosted frozen green sweet peas (toss &#039;em in to the macaroni water just before draining).</description>

		<description>I had never even HEARD of macaroni salad until a restaurant here in Decatur substituted it one day for the pea salad, which they were out of. I LOVED it! And I do eat it from the grocery store, because I never could figure out how to make it. Thanks for the recipe! The restaurant is now gone, along with the divine pea salad and chicken salad - sob!</description>
