Quick Beefy Fiesta Bake
Courtesy of Pioneer Brand
- 1 pound ground beef
- 1 package (1 oz.) Williams Chili Seasoning Mix
- 1 cup Pioneer Original or Buttermilk Biscuit and Baking Mix
- 1 can (16 oz.) refried beans
- 1 can (4 oz.) chopped green chilies
- ¼ cup water
- 1 cup thick and chunky salsa
- 1 cup cheddar cheese, shredded
Heat oven to 375ºF. Crumble and brown ground beef in large skillet. Add Williams Chili Seasoning Mix. Drain fat if desired. Set aside. Combine Pioneer Biscuit and Baking Mix, refried beans, green chilies and water in a large bowl. Spread in a 2-quart baking dish. Top with prepared meat, salsa and then cheese. Bake 25 minutes.
Garnish with one or more of the following: guacamole, sour cream, green onions, sliced olives, crumbled corn chips. Yield: 6 servings
Prep. Time: 10 minutes, Cooking Time: 25 minutes

I’ve never had Pioneer Brand, but, thanks to Christy, I’m dying to try. My biggest problem is…….I can’t find it ANYWHERE!!!

I love your site. I love Pioneer Brand products, I use them all the time. Today is my birthday. I am 49!!!! How did I get this old? I am in Myrtle Beach and having a great day. I should win these products. I love love love casserole dishes from the same time periods as you it looks like. My mom and grandmothers had several of the ones you showed and it was a blast to see them. I have a few myself. I want to win…lol I use your recipes all the time. these products would be fantastic to help me get supper (or even breakfast) on the table when Im in a rush but dont want to skip a good meal, they seem to be quick to prepare, easy on the wallet, and doesnt take rocket science to cook.

Pioneer doesn’t sell their product where I’m living so I have been having my mom scour the groceries stores of Atlanta looking for baking mix to send to me so that I can make your cookie bars to send to my husband. So far she’s found the buttermilk biscuit packets but not the canister you’ve talked about. I would LOVE to win this, if not this time then I will eventually! haha, I’ll enter every single time. My husband is deployed and we tried the cookie bars before he left using Jiffy baking mix, it didn’t look quite like yours it didn’t seem to puff up as much and was near impossible to cut into bars but it tasted great! I’d love to send him the real deal (I’d make a double batch because me and my daughter would need to try them before we sent them, right?! Plus the other wives here need some cheering up too!) I had always made my own gravy from scratch. Then I was in a rush and saw the Pioneer peppered gravy – bought it, tried it and it turned out super. And the great thing was nobody knew! I am a convert!

I love Pioneer and I would love to win the basket. I love your website and have got my whole family to subscribe to Southern Plate. In fact, I made the banana pudding yesterday for a family reunion. It was a hit.

OMG if any1 hasn’t tried their products they neeed to right now.Before my dad passed we couldn’t get him to eat anything.I tried everything.SO I picked up a package of the peppered gravy mix.Well let me tell u.He finally started eating.He had to have the gravy on everything.My dad had cancer and it was a task within itself to get him to even eat.Since then (he passed in 03)Pioneer products is the only brand I keep in my house.Before my mom passed she raved about the products also.All I can say is keep up the good work and keep those recipes coming.God Bless Pioneer Products.

Hi Christy and congrats on all the good things going on in your life. I love Southern Plate and you! I have your cookbook and am having a blast trying all your recipes, haven’t found a recipe in it that my family does not like.
We have the Pioneer brand gravy mix here and it is a staple at our house but haven’t had any luck finding the baking mix. I would really LOVE to win this as I am stuck using either Bisquik or Jiffy baking mix while searching for The Pioneer. I recently discovered your blog and OH MY GOSH, I LOVE it!! I can hear my aunt’s sweet southern drawl when I read your posts and It makes me fondly remember our yearly trips to Alabama to visit my Granny and Grandaddy. My Granny had some of those casserole dishes, and your corell plates are the same as hers too. She is gone on now but reading your posts brings her back to me so vividly, its like I am in her home again. Thank you for bringing a fond part of my childhood memories back to me again.

My girls and I love to read your posts daily, and we ooh and ahh over all your recipes. We have added several to our meals and have a list of cakes waiting to be made. What on earth could be better than a Pioneer giveaway on Southern Plate? Not much in my mind. My grandmother made the recipe you have in the picture – Apple Pie Biscuit Pudding. My sister’s drove up from NC to visit me in Virginia this weekend because I am finally graduating nursing school.
Thankfully I found your site a while back and have been going through your recipes like a crazy person. I have made the chicken stew (my favorite), doughnuts, fire and ice, sweet and sour green beans, spaghetti sauce, banana bread, corn, laundry powder and the list could probably go on…
This weekend I made the banana crumb cake (super moist and delicious) and the breakfast skillet recipe using the Pioneer baking mix and it was super EASY and YUMMOLICIOUS!
I had never heard of the Pioneer products until I saw it on your site and now I hope to use it more often. My store only sells the small packets of mix.

It is so much fun to try your recipes, and I always get raves from my hubby when I cook something from your book. I really like the Pioneer tin, because of the recipes on the back. I don’t like to keep sugar, flour, etc. in boxes or paper in my pantry, so the Tin is like a double bonus with recipes included.

Your emails and blog are terrific!! I like you collect pyrex because it is what I grew up with in the ’50’s…but we collect the bowls and have a big stack of yellow green red and blue bowls on our counter!
I also love collecting cookbooks and the Pioneer Cookbook looks terrific, although I have never used Pioneer products, because I’m too “north” in St. Louis most likely…winning would introduce me to their products.

My grandmother has been using the same Premium cracker tin for forever, and it makes me happy to think I can start using my own tin for baking mixes. Pioneer is an old brand which brings back good memories of grandmas kitchen! You knew immediately when seeing the name on the package that whatever was cooking was going to be good!!!!!! What a comforting thought!=—just to be back in grandmas kitchen again, and seeing the pioneer brand1 knowing that whatever was cooking was going to be goooooood!!!!
Hey Christy! I have the fondest memories of Pioneer Pancake mix. My grandmother is one of the greatest cooks in the world. As a child spending time with my grannie in Sandusky, Ohio I didnt know how she made those pancakes of hers so fluffy and light as air. Once I started cooking and learning from her she shared her secret, that it’s pioneer mix that she used. So of course I use the same now for my family.
Even if I dont win, im glad to honor my Grannie with this story.

Oh my gosh, I LOVE LOVE LOVE LOVE LOVE LOVE LOVE LOVE LOVE Pioneer products but I gotta have that tin and that cookbook!!! Pioneer was what my mama used whenever she used a mix and I grew up with it. Well, not only would I LOVE that tin and of course all the products, but I LOVE LOVE LOVE cookbooks, especially ones with old-timey recipes like that one!!! I’m one of those people who sits and reads cookbooks like a novel. I find it interesting what people make and enjoy and I’m always on the lookout for something my picky eaters (husband included who isn’t exactly picky but is known for saying “I know what I like and I like what I know…”) would eat!!

We soon will celbrate our 55th. Wedding Anniversary and ever since I was able to find the Pioneer brands I have used them with the exception of the Baking Mix and the Pancake & Waffle Mix I have not seen those yet in our local Wal-Mart but I plan to speak to the Manager Monday to ask if they will carry those two products.

I have used Pioneer Products for so many years I can’t count them. I don’t like biscuits unless they are made from Pioneer biscuit mix. My kids also love them and my oldest daughter only uses these products. I collect tins and I think this one would look wonderful in my kitchen. If you can believe it I had never tried Pioneer Brand Baking Mix until I saw it on Southern Plate. I will not go back to my old way of baking biscuits. Pioneer Brand is quick,easy,& delicious my husband loves everything I have baked using it.

I don’t think that I can find Pioneer Brand products here in our tiny town in the foothills of the Washington State Cascades. I am always on the lookout for a good food buy combined with great nutrition. I have utilized other baking mixes, including my home made ones this past year as I have returned to teaching full-time in our tiny little Christian school here. I can certainly utilize these mixes to the max! My mama also taught me to cook well and frugally, and attending college as a home economics major yea-lo-these-many-years-ago, added to that knowledge. (I think majoring in home economics is something that you and I have in common, if I remember correctly) Added to this, I love trying new products and finding new recipes to feed my family (3 growing children & busy hubby). This is definately one of those opportunities.
On another note, and forgive me for getting long with this post, I must tell you that you inspire me to possibly start my own Pacific Northwest Cooking blog or something like that. My husband would roll his eyes at that thought, as he thinks (or should I say knows) that I am really busy already, and don’t need to add another thing to my list of stuff to do…Sigh. Keep up the good work, and congratulations on all of your success. You make it all sound so fun.

I am 57 years old and have been using your products forever! I will be forever one of your greatest fans and promoter of all of your products. All of your gravy mixes and baking mix make a great wedding gift for newly weds! I have always been known for my cooking and Pioneer figures dailey in my recipes. Your company does most of the work and I get the glory of “home made” gravies and biscuts I present with the meals I prepare. I have passed on my fabulous secret recipes to other cooks ….. I first subscribed to your site after a friend shared your post about planting vegetable gardens in kiddie pools…I have been a devoted fan since. Great recipes, wonderful and clear instructions, and a cheery and down-to-earth author! Takes me back to my younger homemaking years, especially the post about the apron giveaway. Even though I will be 70 in a few months, I still bake and cook for my family and manage to keep a veggie garden (we have at least 3 growing seasons here in Florida). I, like you, use many receipes from my mother and both grandmothers, especially during the holidays. Wow! As some others mentioned, I can’t find Pioneer Brand anywhere around where I live. Especially as it’s right there in Texas and I’m in California, I was hoping it’d be more around here. =(
It would be lovely to win this giveaway! I’d jump at the chance to try all those mixes and the recipes! Plus that tin would be so helpful. Right now I’m just using plastic bags but then they start tearing and next thing you know everything needs to come out of the cupboard to clear up all the spilled flour.

I so want to win the Pioneer giveaway because as a grandmother, I love to treat my family when they visit to old-fashioned foods such as I ate in my forbears’ homes. I want them to have the joy of eating food prepared at home and eaten at our table with family. I hope those traditional foods of the pioneers continue to be cooked and baked whether from scratch as our ancestors mixed up and/or with packaged mixes such Pioneer has developed. I love your site, your cookbook and Pioneer Products and that tin … oh how wonderful it would look on my counter!!!! I use to be Bisquick girl but found Pioneer a while back and I am now a Pioneer girl. It makes getting dinner on the table for the three wonderful men in my lift easy and fills them up good … and it can be hard to fill growning teenage boys and a hard working husband!

I am a transplanted southerner,who longs to go home to Arkansas. But since I can’t because of hubby’s work I will endure!!LOL. Anyway I sure do miss the Pioneer products. Mom always used Pioneer flour and such. But here in Indiana where I live a person just can’t buy Pioneer products of any kind,so I have had to adjust and use other products of the like. I love the pancake mix, so easy to make Sunday breakfast, and nothing’s better than the gravy and biscuits with sausage. I have to say I’m a cookbook junkie, so I would enjoy it so much and the canister is so retro and cool looking. It would look great in my pantry.

Pioneer brand makes the best biscuits and pancakes. the only one i buy.
pioneer , makes the pizza crust,
put the crust on a pan bake for 5 mins and take out of oven and ad
some italin crush tomatos in a can and your toppings and cheese and bake. this is so good

I love the pioneer baking mix! I have used it for ages! It makes the best pancakes ! I use it for my sausage balls,too! Oh, too many things to list them all! It’s just good stuff,and I always keep it on hand!
I haven’t had the opportunity to use this product. Our grocery stores doesn’t carry Pioneer brand products. After reading several of the comments, I’m sure I would like to try them. I do enjoy baking and with a little luck maybe I’ll win.

Whenever I can find Pioneer products, I do buy them but sadly, the only thing our local stores stock is the Poneer brand sugar. Gee, if I had that tin to store my flour in maybe my ants wouldn’t be able to get through….I had it in a glass jar with a canning seal and I guess it was an old seal….they got in anyway! Ah well, at least it wasn’t Pioneer flour they got, just regular old Walmart brand…LOL

I have used Pioneer Brand mixes before, and love them. Many times it is the least expensive brand of mix. The cornbread and biscuit mixes are my favorites. I would really love to win this special basket.

I know not being in the US I probably don’t qualify for this competition but I just wanted to say what a great idea the give away is, the Pioneer products look great, when I visit the US I always stock up on this sort of stuff as we just don’t seem to get similar products in the UK, I haven’t come across the Pioneer brand before but everyone seems to rate it highly so I will look out for it on my next trip . I also think the tin would look great on a kitchen counter top. Good luck to who ever wins.
