Chocolate Fudge That Can Take Over The World

- 3 cups sugar
- 2/3 cup evaporated milk
- 3/4 cup (1 1/2) sticks Margarine
- 1 12 oz. pkg. chocolate chips
- 1 1/2 cup marshmallow cream
- 1/2 cup pecans, chopped
- 1/2 t. vanilla
- Combine sugar, milk, and margarine in heavy saucepan; heat to boiling.
- Stir constantly about 5 minutes over medium heat or until mixture reaches soft ball stage (238 degrees).
- Remove from heat.
- Add remaining ingredients. Stir vigorously until well blended.
- Pour into greased 13 x9x2 inch buttered pan. Cool. Cut into squares. Makes 3 pounds.
Ladies and Gentlemen, this is not just a recipe I am bringing you today, this is ammunition.

Yes, you heard me right, this is ammunition. Put a good fudge recipe in the right hands and you can take over the world. You can get your car tuned up, your grass cut, your clothes pressed, your dog walked, and have the doors to any building opened for you with a red carpet rolled out in your honor. How do you do this, you ask? Just hold out a plate of fresh, homemade fudge.
Trust me on this. I have taken fudge so many places I can’t even list them all. Recently, I went to a social media conference and I was the one passing around containers of fudge in all of the rooms I was in. Did I take over the world that day? Well no, but I bet I could have if I’da wanted to! My goal was for folks to be happy to see me and showing up with fudge was an easy way to accomplish that. I can guarantee you that I got some pretty sincere smiles when I held out one hand for an introductory handshake and the other to offer a piece of this decadent chocolate treat!
This is an easy, no fail fudge recipe that anyone can make. Mama and Grandmama have been making it this way for as long as I can remember. Yes honey, that means you so don’t go fretting because I’m gonna have you being the king or queen of fudge in no time flat!
Can’t you just smell it now? Lawdy hon, git on in hyar and lets git to cookin’!

You’ll need: Margarine, Marshmallow Creme, Evaporated Milk, Vanilla, Semi Sweet Chocolate Chips, and Sugar.
“Did Christy even buy generic chocolate chips for this?”
Well, they were fifty cents cheaper than name brand so you bet your mother-of-pearl buttons I did! ~grins~

Place your margarine, sugar, and evaporated milk in a pot.
I like to get the really big can of evaporated milk so I can use what is left in my coffee. It makes the BEST coffee creamer!

You’ll need a candy thermometer because we are going to cook this to soft ball stage.
The candy thermometer will have that written on it so you know.

While that is heating up in your pan, take some butter or margarine and smear it all over the bottom and sides of a 9×13 pan.

Place your candy thermometer in the pot. Make sure just the tip is beneath the liquid but don’t let the tip touch the bottom.
It has a handy dandy clip that lets it hook onto the sides.
My poor candy thermometer is about as old as Methusela.

Bring that to a boil, stirring constantly.
Keep a watch on your thermometer so you will know when it gets to soft ball stage.
This is going to take about five minutes on medium high heat.

Once it gets to soft ball stage, remove from heat. Pour chocolate chips in.

Add in marshmallow creme.
Stir that up a bit so it will start melting while I tell you a story…

See this sticker? This marshmallow creme was half off. Now those of you who know me are likely already giggling right now because they know full well I have little resistance to a good sale.
I was in a local grocery store a month or so ago and saw this buggy filled to the brim with marshmallow creme on special. So I sashayed over to it and got two jars. But you know, those two jars did save me a whole dollar.
So I got two more jars…
I went on my way but it was still nagging me that there was an entire buggy just filled with half price marshmallow creme. Oh the times I have needed marshmallow creme! Okay, here is the problem, I only use marshmallow creme in this fudge so in reality I need a grand total of one to two jars per year.
BUT CHRISTY! IT WAS HALF PRICE! YOU CAN’T JUST LET A DEAL LIKE THAT GET AWAY!

Oh, I’m so glad y’all understand! By the time I left that grocery store, I want you to know I had FIFTEEN jars of Marshmallow creme in my buggy! ~giggles~
I’ve been making an awful lot of fudge lately…

Add in your vanilla.
Pretend you don’t see that ring of dried vanilla around the rim of my bottle, okay?

Stir that all up until the chips melt. It is gonna take a few minutes but don’t worry, it’ll melt.
This is where you stir in your nuts if you want to.
I don’t add nuts to mine because my kids like it without. Once, when Brady was about three, Mama came by and bought us some fudge around Christmas time. We went out to meet her in the driveway because she had somewhere to be and Brady took a bite and went “MMMM!!!” and then turned his head and spit, spit, spit. Mama and I kinda looked at each other funny but didn’t think too much of it. Then he takes another bite and after a few seconds turned his head and spit, spit, spit again.
“Brady baby, do you not like the fudge?”
“Oh no, I love the fudge. I’m just spitting all of the nuts out”.

Pour into your buttered pan. Allow to cool.

You can mix a jar of that marshmallow creme and 8 ounces of cream cheese then add 1 tspn of vanilla and have a really good dip for apples or any other fruit.
I always add a bit of lemon zest to mine too…soooooo yummy!
and some red food coloring and it is the prettiest fruit dip ever!!!
That stuff is addictive! I try not to make it very often because otherwise I’d never want to eat fruit “plain” again.
I’ve had that before too and I agree with all of you and now I am going to nicely curse all of you because I want it SO BADLY right now! lol
It is SO GOOD on a really tart apple. I have never made it myself because its one of those things that I fear I would lose control over, so I only eat it when we are out or at other people’s houses.
Mama made it not too long ago. I was not a good girl around it, either! lol

It sure seems to me that the doctor’s office/chiropractor always seems to work me in, the vet gives me free samples instead of expensive prescription and my mechanic practically begs to work on our cars….why? Well, cuz I make choc. pecan pies, oreo fudge, monkey bread, banana nut muffins, you name it, all to grease the wheel and hand it out to all the places where I do business. My, and your, strategy is the same, as well as the way we shop. “If it is on sale, then I gotta get……” ~grins~ ~waves, winks at my husband, the breadwinner~

Why, of course, sweet Beverly!
You’ll need 18 oz of White Choc morsels (a pkg and a half),
a 14 oz can of Sweetened Condensed Milk, like Eagle Brand (NOT the Evaporated) , 1/8 teasp. of salt, 2 cups of coarsely crushed Oreo-type cookies. Just line an 8X8 square baking pan w/ foil. Then, in a heavy saucepan over LOW heat, stir & melt the choc morsels, Sweetened Condensed milk and salt together. Be sure to watch it closely, juuuust till it is melted uniformly. Remove from heat, pour evenly into 8×8, and chill for a couple of hours. Turn fudge upside down on a cutting board, peel off foil, and cut that bad boy into small squares. Store tightly covered/cool place! FYI, Dollar stores have little plastic treat bags, sometimes, ziploc with seasonal designs. I got 40 ziploc treat bags for $1 yesterday that are perfect for handing out a couple of pieces of Christy’s fudge and a couple of this Oreo fudge pieces too to the postman, pharmacist etc. Go ahead, make someone’s day.
ok, I jes’ plain got too eager to go eat some fudge and left out a step, so:
AFFFFTER removing the pan from the heat, THEN gently stir in the crushed cookies, THEN pour into 8×8 etc. ~face turns red~

FYI, “fudge” according to Amer. Folklore is most commonly told that in Feb. of 1886, an attempt to make caramel was bungled (or fudged, as in to cover up or falsify) and become what we know as Fudge today. Yummy mistake!

Hey, Christy! That fudge looks great. Makes me wish I had bought some of that sale marshmallow cream when our local store(here in Virginia) had a buggy full of it. They also, come to think of it, had a shelf full of it as well. Kinda makes you wonder what’s up in the world of marshmallow cream, doesn’t it? Thanks for the fudge recipe! I shop the same way you do. I actually go early in the moring and look all over the store for those lil yellow and orange stickers! It’s like a scavenger hunt, and I like to win. Any sometimes I end up with 10 bags of chocolate chips, but we eventually use them all. Nice to see a “real” person cooking, sharing recipes, stories and tips!

Ooh shopping in the morning is the best time! Last year Katy had a preschool that started at eight a few mornings a week. I’d drop the kids off and head off for treasure hunting just like you!!

Hey Gina, right after moving to Pennsylvania from Ga, you should have been there to see our faces as we walked into a treat shop and they had a big sign up featuring a “Fluffinutter” marshmallow creme dessert item. I laughed out loud and joked about the word I thought was made-up. Then a local woman told me it was an actual product in the grocery stores around here. And they laugh at ME here when I call a shopping cart, a BUGGY. See ya in the baking aisle ;-}

You have brought back so many of the things I used to do but had forgotten about. This fudge is “sopt on” and I know my kids will find it in their stockings soon. Your chicken and dumplings are perfect. And Sooooooooooooooo good. I do not think my cardiologist would approve but I will not tell him. A girl has to “pfudge” every once in a while. Oh -I most certainly would have bought that sale marshmallow cream too especially with the rapidly approaching holiday season. I have also made this fudge for years and it is nearly fool proof. I use peanut butter chips often as a sub for the chocolate and it is to die for. I have even on occasion made it into two layer fudge. Make one batch of the chocolate and pour it into the pan to cool while you make up the peanut butter one. Pour it over the chocolate batch which has now hardened and wow-you have double delicious. A little frugal tip I will practice from now until the holidays. When you are getting your groceries get one extra holiday ingredient in your order such as nuts, marshmallow cream, baking bits, eagle milk, dried fruits, whatever you will be using . It is not so painful as having to go buy a truckload all at once, especially when being Santa at the same time, and if you do see a bargain-all the better!

Oh that looks so doggone easy!! I can’t wait to try it! My mama LOVES fudge! She makes it a point to buy fudge & banana taffy every year at the State Fair. I hope she’ll really enjoy this!
On a side note, in reference to the first poster – I mix marshmallow creme with strawberry cream cheese and it makes a delicious fruit dip – especially for strawberries!! Mmm… Think I’m gonna have to make some soon!

I’m gonna have to try your recipe. I make my husband’s grandmothers recipe. It’s really good and creamy but you have to beat the heck out of it with a wooden spoon to finish it. Last time we broke the spoon.

You are a woman after my own heart, a lover of fudge and a bargain hunter. My son once told me that if nuclear waste was being sold at a clearance sale, I’d buy it. I love a SALE!! I personally don’t view 15 jars as excessive. Especially because they were on clearance. It is amazing how many uses you can find for a product when you have an abundance of it and going slightly past the expiration date before using isn’t detrimental to the final product in this instance. Since the holidays will be here shortly, I know all your friends and family would be grateful recipients of your yummy looking fudge. Incidentally, I made your apple dapple cake yesterday and was in heaven. That caramel sauce is wonderful. I’ll just bet you could find a way to adapt the recipe into a caramel fudge. Just a thought.

That is very similar to our fudge recipe. Only thing is the one we make you have to stir the ENTIRE time it’s cooking. But it makes five pounds. Have you ever substituted peanut butter chips for the chocolate? I think it’s the best peanut butter fudge ever.

I’ve never tried using both but now I’m curious if you could do a layered fudge. We always just used the same amount of PB chips as the recipe called for chocolate chips.
I’ve never substituted peanut butter for chocolate. I use a different recipe when I make peanut butter fudge but it isn’t nearly as easy as this one and I dearly love peanut butter fudge. I don’t know why it never occured to me to make this one that way but I sure will now!

You know what’s so good? Making fudge with things like Mars Bars, Snickers and other types of chocolate bars which I don’t think you have there called Cherry Ripes and Bounty, which are a cherry-coconut and a plain coconut. YUM!!!
My co-worker makes fudge that is just chocolate (and chocolate bars if you’re using), condensed milk and butter. That’s it! It was so good. I didn’t like fudge before because I had a very rich fudge that was I think made with dark chocolate, but she changed my mind after she made her Cherry Ripe fudge!

The cherry bars sound amazing, I’ve never heard of them. I have heard of folks taking their leftover halloween candy and chopping it up to use in cookies and such but fudge sounds even better!!!!

Here is another way to use the marshmallow cream to make a fruit dip. Mix together 8 ounce cream cheese and the marshmallow cream; add lemon juice to your taste. This is not only good for fruit but it can be used as topping for other things like cake slices or chocolate pudding. Just use your imagination. Yum

Christy – I discovered your blog a couple weeks ago (a friend forwarded me an e-mail about it) and I’m addicted. I honestly feel like we’re good friends already! Note that I’m that friend with a super busy full-time job that never cooks and hopes that her kids can thrive on McDonald’s chicken nuggets and apple slices. I think we’re a good balance!

Chicken nuggets and apple slices! See? Great minds think alike! I promise you that at the end of the day, we’re all much better mothers than we give ourselves credit for!

I’ve been making this fudge for 40 years!! You can substitute a cup of peanut butter for the chips..and have a creamy soft peanut butter fudge!! Yum!!

You can make the BEST fruit dip with one of your “sale” jars of Marshmallow cream. Just mix one jar marshmallow cream with one softened 8 oz. brick of cream cheese (I usually use the light but not the FF – just doesn’t taste right to me.) Mix all together, season with a bit of grated orange or lime zest if you like. That’s it – it’s a great dip to use with strawberries, fresh pineapple, apple slices. etc.

Now you know, Susie, oranges are a huge weakness of mine.
Big old naval oranges…I could live on them. They aren’t so good for my blood sugar though so I quit buying them because I honestly can’t be trusted when oranges are in the house! I once went to an SCA event for a few days. Those are camping events where you live in a tent and play knights and damsels for a couple of days. I stopped off on the way and bought a case of water and four oranges for each day and ate every blessed one of them! I pretty much lived on nothing but oranges the entire time and BOY WERE THEY GOOD!
Unfortunately, the days of being able to do that are behind me but I think I could manage the zest in this! (and look really innocent if anyone asks who ate the orange that provided the zest!).

Off the top of my head, I think this is like my mom’s fudge recipe. When I married and asked her for her fudge recipe, she said, “it’s the one on the marshmellow fluff can.” Nope! They changed it. So, she had to find it and read it to me.
We also made a straight Peanut Butter one just by substituting equal amounts of peanut butter chips for the chocolate chips. A half chocolate, half peanut butter sounds good too. Alas, I have a child with a nut allergy. ( Thinking: Maybe I can make it for the church festival and send some through quality control first. hmmmm?)

I love this fudge. It’s the same fudge my Mama and I make. And it was actually one of the first “special occasion” dishes I learned to make. (Because we only usually have it at Christmas time!) I live in Alabama too (Mobile to be exact) and I love all the recipes you’ve posted. I won over my husband and all of his friends with my potato salad recipe…. all of their wives are still trying to live up to it!

This is the first year I’ve ever made it any other time. I don’t know why we don’t make it other times of year because it is so easy – but I guess if we made it any time we wanted it we’d not be the healthiest of people! lol

So I just have to ask….why margerine and not butter? AND have you ever tried real mexican vanilla. I highly recommend it. It’s not easy to find (they sell it in Mexico in the liquor stores) but sooooo very worth every drop. It comes in a tall bottle and you keep it in the fridge. You use much less than reg vanilla and it lasts years in the fridge. Get yourself some, you’ll be glad you did.

You know, I get asked about my use of margarine a lot and the reason is really simple, I’m cheap! ~giggles~
Margarine is a fourth of the cost of butter so that is what I always go with. Maybe one of these days I’ll be rich and might be able to bring myself to spring for the real stuff but as long as the kids are eating and growing like they are, I cut budget corners where I can.
I have had Mexican vanilla once several years back and I can see why you love it!
I use cheap cheap cheap vanilla now, about 98 cents a bottle.

Wow, reading all the comments about the fudge was great. And with the chocolate fudge,you have to have Peanut Butter Fudge. Wonder how many ladies hurried out to their kitchens and started a batch of fudge.
When I make my fudge, after I take it off of the heat, and place the rest of the ingredients into the pot, I take my good old hand electric mixer. That’s what I use to beat my fudge. Saves time and most of all saves the arms. I have even stopped cutting my pecans, and or other nuts, place them in there whole the mixer cuts them up for me. Don’t know if you will think this a good hint or a lazy lady hint. But it sure does work for me. lol
What you did with the clearance marshmallow creme? I SO would’ve done the same thing and stocked up! I do it when cake mix, instant pudding, Jell-O, or real butter goes on sale. The people next to me in the check out line always seem to give me funny looks…
Anyway, try this recipe to use up some of that marshmallow creme.

It’s sweet, marshmallowy, and ever so salty… just like the real thing! I’ve filled cupcakes and layer cakes with it, or just spread it on top of a sheet cake.
I just found your website a couple of weeks ago and have fallen in love. My 3 daughters are begging me to make several of your recipes. Today was the dishpan cookies and they are a huge hit.My 2 year old son liked eating them up. This fudge recipe looks almost exactly my grandmothers. You are right about it being the way to take over the world. I have teachers ask for this as their gift at holiday time. Even friends who claim to not like fudge, love my fudge. It is so creamy and smooth. I think I gain an extra 20 pounds at Christmas eating the corners of the fudge (those aren’t good enough for gift giving

My stepmother used to make this fudge at Christmas. She would drop hers onto wax paper from a spoon instead of putting it in a pan and cutting it. (We teased that they looked like Santa-elf poop!)
One year, she mistakenly grabbed a bag of butterscotch chips that was sitting aside for Hello Dolly, and poured it in the pot instead of the chocolate chips! I loved it so much, that she started making both kinds of fudge.
I think your directions are more thorough than hers, since I tried to make this once, and it was a disaster. I’m going to try this this Christmas. But once in a while, we’ll need a chocolate fix around here, and the kids start asking for some chocolate-peanut butter fudge. My sister gave me the recipe years ago, and it makes enough to pour onto a dinner plate, and everybody share–well, after I get my few pieces!

Sandy-I think that is a great deal. I think you are referring to the olive green delicate flowered pattern. If so that was popular in the seventies and is called spring blossom green. They were $20.00 per four piece settings when new. I bought two sets and my ex still uses them daily.My mom had the blue snowflake set at the same time and we thought we had the finest. I now have a full set of the buttefly gold pattern and still find pieces here and there in thrift shops.
This is so not helping me loose the 10 pounds.

Butter for margarine would be fine in this. I just use margarine because it’s so much cheaper. But you can switch with no problem!

Hi Christy! It’s me again!
I just finished making this fudge (and licking the bowl! hehe) because my mama is coming to visit tomorrow! I got a little confused on the measurements so I hope it is as great as it should be – the spoon sure tasted good! I only found 7oz jars of the marshmallow creme and it looks like that’s what you used too but your directions show 1 1/2 cups (or 12 oz) so I bought 2 jars of the creme and kinda guestimated. Was it a 12 oz jar you used?

I’ve tried this recipe before and I love it…but I have to say my favorite fudge is Velveeta Fudge!
This one is much easier though, so I could (potentially) make it much more often:)

I have a strange problem…..my love of sugary fudge! I know the ideal fudge is smoothe and creamy,but I happen to love that “accident” when the fudge turns hard and sugary. I’ve always had good luck with fudge and I’ve never made any that had the grainy taste of the sugar in it. Does anybody have this same love of “accidental” fudge? Or better yet…how do you make it? Thanks…I love this website.
Do you have a hint as to how you measure 1 1/2 cups of marshmallow cream for the fudge receipe. I had a hard time getting it out od the jar to measure it out. I know a jar is 7 ounces, but that does not make 1 1/2 cups. Thanks, Carolyn
Ilived in the south sometime back in the 60′s and my neighbor used to make vinegar rolls for us, I was wondering if you have a recipe for these they were so good.

I should say I get lost on purpose..
I have made this recipe before and I made it with the peanut butter chips. Then I made it again this time with chocolate chips and poured it on top of the hardened peanut butter fudge making it two layered. Really good!
