This post is brought to you because of Dolly Parton – and bless her heart, she has no idea! You see, there is a song of hers on called “Berry Pie” that Katy and I have taken a shining to – and by “taking a shining to” I mean that we have taken to listening to it on a repetitive loop anytime we are in the car together :)

Have you noticed how easily music can affect your mood? Preferring to be happy and upbeat, I choose my music accordingly. Berry Pie is one of those toe tapping, dancing-a-jig-through-life types of songs that you can’t help but smile as you sing along with it.

I know we all struggle at times to maintain our positive attitudes and to focus on appreciating the good things in life rather than bemoaning the bad, so in order to do this I go for a full out assault on negativity. I try to surround myself with optimistic people whenever possible, read motivational quotes on a regular basis, listen to happy and uplifting music, and if I ever feel like I’m still being dragged down into the pit of despair, it always helps to take a moment to mentally list of all of the wonderful things in my life that I am grateful for - I hope you know that you are on that list and I’d like to invite you to leave your own gratitude list at the bottom of this post as an inspiration to others.blackberry cobbler 006

So if you’re struggling right now, either with life situations or depression of some sort, take a good look at what your listening to and consider altering your music to a more cheerful, optimistic tunes. Every little bit helps – and as you have seen with negativity, the little things add up to big things pretty quick. Instead of allowing circumstance to continually build big mountains of darkness in our lives, isn’t it time we formed our own constructions projects of big old mountains of sunshine?

As your second assignment I want you to pick someone you love and make them this cobbler. Because I’m a firm believer that the best dishes aren’t made out of a necessity to eat, they’re made out of love for the person who is going to be eating them.

This is one of those super simple recipes from the old days. Most of the recipes from the old days were simple. Folks seemed to really understand the value of “simple” back then, and I think it allowed cooks more time to put love in their dishes. You knew what you were gonna make and you walked into the kitchen and made it from the heart, without even having to look at a recipe. All that time agonizing over complicated instructions was spent instead thinking of how happy Junior was gonna be when he came home from school and found you’d made the family’s favorite cobbler. Thoughts like that just naturally make a body smile, don’t they?

I really don’t understand the thinking behind complicating things but I know folks who prefer more complicated and sophisticated cooking likely look down their nose at my ways. You know what? I’m perfectly okay with that.

I’m a whatever cranks yer tractor kinda gal anyway.

Right now, this cobbler has my engine revving up something fierce so lets get at it!

You’ll need: Self Rising Flour, Sugar, Milk, Margarine, and about two cups of berries.

You can use any type of berries you like, fresh or frozen. I’m using frozen blackberries. YUM!

Now the rule is, ya gotta sing and dance a bit with me as  you make this.

Sorry to have to force ya but you know how rules are :)

Place your berries in a bowl and add about a tablespoon of margarine. Sprinkle 1/2 C sugar over them.

Heat these in the microwave for about a minute or two, until the margarine is melted and the berries are warm.

I’m using frozen blackberries I got from the grocery store. They came in a 16 ounce bag for a little over $2.00

It will look like this.

Give them a taste and make sure they are sweet enough for you.

These are just right for me but you may have berries that are a bit on the tart side and prefer to add a touch more sugar to your taste.

In a medium casserole dish, place 1/2 C margarine.

If you don’t have a dish like this, you can just use an 8×8 pan.

Mama used to say, “To really please a man
Put somethin’ in a bowl or somethin’ in a pan
Make him somethin’ tart, make him somethin’ sweet
To get to his heart, make something good to eat”

Place that in the microwave for a minute or so until the margarine is completely melted.

I like to cook and I love to bake
Bread and cookies and pies and cakes
I’m convinced my mama was right
So I’m gonna bake him a berry pie

In a separate bowl, place your sugar and your flour.

Stir to combine.

Yoddle-dee-yay, yoodle-dee-yie

Add in milk.

A little bit of that, a little bit of this
A lotta lotta sugar and as sweet as his kiss
I wanna give him presents so why don’t I
Show him my love in a berry pie

Then stir that up a bit

Berry pie, berry pie
I’m gonna make him a berry pie
He’s the berry so why don’t I
Get out the fixin’s for a berry pie

Pour batter mixture over melted margarine.

DO NOT STIR

A berry pie, a berry pie

It’ll look like this, with margarine floating on the top.

Pour in your berries.

Again, do not stir.

Eee-eye, a berry pie

Sprinkle just a little sugar over the top of it.

Bake at 350 for 50-55 minutes.

Old Fashioned Berry Cobbler

Ingredients

  • 2 C Berries, frozen or fresh
  • 1/2 cup sugar
  • 1 cup milk
  • 1 cup self rising flour
  • 1 cup sugar
  • 1 stick butter or margarine

Instructions

  1. Preheat oven to 350 degrees. Melt stick of butter in oven proof casserole dish in oven while mixing ingredients. Place 1 T margarine on top of berries in a small bowl. Pour 1/2 cup sugar over berries. Stir. Heat in microwave for 1 minute so that sugar begins to melt.
  2. Mix together 1 cup flour and 1 cup sugar until blended. Pour in 1 cup milk and mix until blended.
  3. After butter is melted, take casserole out of oven and pour batter on top of melted butter. Pour berries on top of batter. DO NOT STIR! Sprinkle a tablespoon of sugar over cobbler. Place in 350 oven and cook for 55 minutes or until golden.

    Going to have to make this once we finish our 7 Up pound cake (which by the looks of how much is left, will be probably tomorrow, that cake is so darned good that the 2 of us are just plowing through it). Christy, there’s something I’ve been wondering about for a while- do you microwave things in your Pyrex bowls? It looks like you do. I read that you shouldn’t, so I haven’t because I don’t want to ruin my bowls, but it would be so nice if I could just stick them in the microwave! I have one with gold stuff on it that obviously shouldn’t go in, but what about the others? Any advice?

    My Great Grandmother called this “Washday Pie” because it was an easy dessert to make on washday. I got the recipe from a distant cousin last Thanksgiving and have made it several times since then – using my Pyrex casserole dish. I love using frozen fruit because I’m too lazy to prepare fresh. The only difference is I melt the butter in the oven while it’s heating up and sometimes I’ll add a touch of cinnamon or nutmeg. Try it with peaches or blueberries and a scoop of vanilla ice cream or whipped cream from a can while it’s still warm. It’s tastes so good and it’s extremely easy.

    This is my Mother’s recipe. The way I have always made any cobbler. We usually made peach cobbler when the peaches were fresh off the tree. The best part was the homemade ice cream that was made to put on top. Miss my Mother, but love making some of her recipes.

  9. Oh, I just decided I needed to use up a cup of fresh blackberries and made a half cobbler. I can’t wait to try it here in a bit. I used a pyrex bowl since it is small. I know this recipe is what I use for my peach cobbler, so I bet it will be amazing!

    I made this last night, and my husband said it may be the best cobbler he’s ever eaten! It was wonderful. I didn’t have self-rising flour, so I just added 1 1/2 tsp baking powder and 1/4 tsp salt to my unbleached flour.

  11. This is so good for so many kinds of cobbler. We used to make peach
    cobbler with the same recipe, and self rising flour makes it so easy. I
    think we may have used evaporated milk….it has been a while!! But I love
    berry cobblers and this looks wonderful!!

    this recipe is in your cookbook and calls for a total of 2 1/2 cups sugar, but i don’t see where the extra cup of sugar is “used” in your cookbook recipe. i am thinking the one on the website is correct with only 1 1/2 cups sugar?? thanks!

    • The extra cup is used if you are using fruit that isn’t sweetened yet. you add it in when you microwave it for a minute or two :) That is a type o in the cookbook that has haunted me again and again, lol!

    For every 3/4 cup of flour add 1 tsp baking soda and 1/4 tsp salt. Voila, self rising flour!

    Have used one about the same for years, easy to remember:
    1 cup sugar
    1 cup flour
    1 cup of milk
    1 stick of butter
    Melt butter in microwave, add other ingred. and stir well. Pour over fruit and bake. (Sometimes add a cap of vannila extract, depending on the fruit used)

    You know how they say everybody has a twin? Well Christy I saw your twin this morning ! I go to Curves to exercise three mornings a week. When I walked in this morning I did a double take and said to myself, Is that Christy, what’s she doing here(Here being Conyers, GA!) I know the poor girl kept wondering why I was staring at her. Curves this morning and here I am reading cobbler recipes ! Blackberry is my absolute favorite, ever tried mixing peaches with the blackberries? Oh my you’ll think you died and went to heaven !!
