2 Minute English Muffin Breakfast – I Want To Raise My Kids In A Barn!

Don’t get my wrong, I dearly love Bountiful (and have already dug in my heels and hung my heart on the wall ), but I have this dream of finding an old barn and completely remodeling it into a big old house, with heavy oak beams and polished wood floors. The outside would have to be red, barn red to be exact, and I’d likely have someone paint “SEE ROCK CITY” on one side of the roof as a nod to where I’m from. I’d have a big old southern style front porch going all the way around it with white railings and rocking chairs, lush green ferns hanging at regular intervals.

I’d have the original doors fashioned into sliding ones and paint their little support beams a contrasting white. We’d fix a new door on the sides, traditionally sized with a screen that had a wooden frame and spring so it would bang a few times whenever anyone shut it.

Of course, it would have to be atop a hill so that the sun hit it just right every morning and silhouetted it against the sky. And it would have to be int he South, because I can’t leave my homeland and I want the grass to be always green for my little view atop the hill.

Just think of the fun we’d have, especially the kids. Living and growing up in a house that echoes. With walls the color honey wood and real clocks with real pendulums that tick-tock tick-tock. We’d have to fashion several windows because I have found that my level of happiness is directly related to how much sunshine I get on any given day, and I want the house to be lit with as much natural light as possible.

I’d put my great grandmother’s chair right there in the lving room and drape her woolen plaid blanket over the back just as it was when she was alive. Beside it I’d set a large basket filled with embroidery supplies and a mason jar of candy corn just like my Grandaddy always had by his chair to offer to  kids who peered over his shoulder to see what he was up to.

The yard would be even, with the perfect slope atop that hill for rolling down. Kids would find it irresistible to run in and I’m sure I’d join in as well from time to time. Each window would have to have a window box, filled with daffodils in the springtime, geraniums in the summer, and pinecones that we collect for the winter time and would use to help start fires in the massive stone fireplace in the center of it all.

I could finally have those chickens I have always wanted and we’d have at least two more cats along with a friendly old lab who’d thump his tail against the porch railing every time someone came near him and dive after rocks folks threw in the pond for sport.

Just think of how much my children could get away with when they grew up. No matter what they did, they could always fall back on the excuse of “Hey, I was raised in a barn!”.

Today I’m bringing you a hearty breakfast that is no muss, no fuss and made in a jiff. Folks, did you see that gorgeous pic up there? That was made in the microwave. Seriously. No skillets to clean, no muffin pans or baking sheets to wash. Get you a plate and have breakfast in under two minutes flat.  I try to start my day off with protein rather than carbs and this is a great way to do it. In case any of you aren’t morning people (I am soooooooo a morning person – but married to the opposite) it might encourage you to know that you can also make it , start to finish, with one eye still closed.

You’ll need: An egg, slice of cheese, slice of lunch meat ham, and a english muffin.

Here is where you can go crazy with the healthy stuff if you’re so inclined. They have high fiber muffins, low fat cheese, lean lunch meat, and nowadays they have eggs genetically engineered to do just about anything so just go shopping and knock yourself out.

Me? I just use what we have on hand and my only preference for eggs is that whatever laid it clucks of its own accord.

Another cool thing about these ingredients is that if you buy them just for this, when you run out of English muffins you got the makings for a nice little sandwich.

Slice open that English muffin.

If you want, you can toast it. I like to toast mine but its a toss up on any given day whether or not I’ll go to the trouble.

I think it depends on how long before the coffee is gonna be done :)

I am somewhat in between toasters right now so I just stick mine under the broiler for a few minutes.

Here is the careful part. Crack open your egg onto one of the english muffin halves.

Try not to let it run over but if it does, don’t sweat because it is no big deal. It’ll just cook on the plate alongside the muffin and when you’re done you can scoop it back up onto your muffin with a spoon. I was just realllly being careful for this tutorial but normally – blah! Crack the egg and don’t fret.

Now take the other half off the plate and microwave the half with the egg on it for about a minute. Keep an eye on it because each microwave will be slightly different. It will puff up a bit but should be done in 45 seconds to one minute.

Note: I use the smallest egg I have on these to help keep so much from spilling over onto the plate.

Some of y’all have wisely suggested pricking the yolk with a fork. While I don’t do this, because I’m such a wild child and all of that, its a good idea for you to to help vent the egg a bit.

Then I like to put a dash of salt and pepper on mine.

Now this egg will be hard cooked, not runny in the middle, just so ya know – And it won’t taste at all like it was cooked in the microwave.

I’m trying to think of a cute little jingle about eggs to sing here but drawing a blank…

Okay so that’s cooked, put a piece of ham on it (or whatever critter you prefer to use)

Last week I told this entire long winded story to Katy about how we didn’t have chicken nuggets growing up and whenever we wanted chicken nuggets we’d have to go in the back yard and hunt squirrels with bb guns and then Mama would cook the squirrels so that they looked like chicken nuggets and we’d pretend…

It was just one of those fifty thousand question sessions five year olds like to spring on you that sometimes go wrong. Haven’t decided when I’m going to tell her I was kidding about it yet… We were in the sun room a while ago and a squirrel clamored up onto the deck. I saw her cast this wide eyed look of expectancy towards me. Like she thought I was about to go into some mad hunting frenzy.

Top with piece of cheese and other half.

Nuke that again just until the cheese melts, about twenty to thirty seconds (again, depending on power of your microwave)

Enjoy you breakfast (or lunch!)

2 Minute English Muffin Breakfast

Ingredients

  • Slice Cheese
  • Slice ham
  • 1 Egg
  • Salt and pepper

Instructions

  1. Slice muffin open. Toast if you’d like.
  2. Place one half of muffin on microwave safe plate and gently crack egg open onto it.
  3. Microwave for forty five seconds to one minute, or until done.
  4. Sprinkle salt and pepper over egg to taste. Add ham and cheese slice and replace top.
  5. Microwave another ten to twenty seconds, just until cheese melts.

    I made these delicious sandwiches today. I found that toasting the cut side of the muffin under the broiler helped it cup a bit so it did a better job of holding the egg in place. I was concerned about the yolk exploding in my microwave so I took a toothpick and poked a single little hole in the yolk (it didn’t run) and…perfection! Thank you so much for this quick/easy recipe. I no longer have to go to the “Golden Arches” during their breakfast hours and can have this whenever the mood strikes me. :D

    You have just made my day! I tried this last week and my egg ran everywhere :( …….so, I discovered a GREAT way to cook the egg. I had some heavy duty plastic lids that I bought at Wal-Mart in the canning section. They fit a large mouth mason jar, which just happen to be the perfect size of an English muffin!!! So, I sprayed the lid with nonstick spray, cracked the egg into the lid, added salt and pepper, pierced the yolk (it still pops and makes LOUD noises in the microwave ;) and cooked for 45 sec’s..viola!!!! It slid right out! By the way, it is also the perfect size egg for a hamburger bun if you don’t have an English muffin :)

    I make something very similar, but I nuke the egg (in a bowl) while the english muffin/bagel/sandwhich bread is toasting. After the egg is done/very close to done, I place the meat (I also use lunch turkey, chicken, sausage, or canadian bacon sometimes) on top of the egg and then the cheese and nuke for 15-20 seconds longer. Then I nicely scoop the contents out with a spoon and place on the bread.

    I make this for my husband at least twice a week. I usually will scramble the egg in a coffee mug before microwaving it. This keeps it nice and round to fit on an English muffin (or hamburger bun if you have a lot left over from a picnic). When it is done cooking i just flip the mug over and the egg usually falls right out onto the bread. Also, I add sausage patties and on occasion a hash brown patty. Can’t forget the hot sauce either! Try Cholula for a slightly different taste than tabasco.

    I made this today, read about it last night. It was delicious, really tastes JUST like McDonalds EggMcMuffin without the extra oil. With 2% american cheese and a slice of smoked turkey, it was a breakfast sandwhich of just 255 calories. Great with coffee!!

  12. Christy, I used to fry sausage and add cheese (velvetta sp) and put on top of english muffins for my kids for breakfast. Make up a batch on Saturday and freeze in sandwich bags during the week. Pull out of the freezer and microwave +/- a minute and what a great breakfast. Had one kid who didn’t eat eggs so this made it easy! As they got older they could make breakfast on their own! From the freezer to the microwave to their little mouths! Thanks for all the great ideas Christy I will try this form my DH.

    I have been making something similar. I use hamburger buns (toasted or not), bacon (but any meat will do), a hashbrown patty (you can by them frozen), any kind if cheese you prefer. an egg any way you like it, and of course a little salt & pepper (hot sauce is good too). If you’re in a hurry wrap in foil and it will stay warm until you have time to eat it. Always good re-heated too.

    Christy! I have always wanted to make a barn into a house! I read a book years ago that I still like to take back out and read from time to time. The Enchanted Barn, by Grace Livingston Hill, which is a story of a family who moved into a barn and made it into a house. I was so enchanted myself with the story, that I look longingly at every big barn we pass wherever we go and think of making it into a house!

    I make a similar lite version of this. I toast a light whole wheat hambuger bun, top it with a slice of canadian bacon which I heated in a small nonstick skillet, top that with a Kraft fat free sharp cheddar cheese single, and then top that with 1/4 cup eggbeaters which I cook in the same skillet I used to heat the canadian bacon. Put the other half of the bun on top. The heat from the eggbeaters makes the Kraft single get melty. Yum! I believe the whole thing comes in under 200 calories.

    Amanda (Dec. 2010), I like your idea of scrambling the egg in a coffee cup. I don’t care for hard cooked “fried” eggs, but love them scrambled on a plate or in a sandwich. I’m going to try this your way.

  23. I do the microwave thing in the cup or a lid or whatever is handy when I just need one hardboiled chopped egg for tuna or chicken salad or quick egg salad. Sure beats letting it boil away on top of the stove and heating up the kitchen since summer is coming.

    I have been looking for something like this because I am not a morning person! I have never thought about cooking the egg in the microwave. I am trying this as soon as I get some english muffins. We have chickens and get about 18 eggs a day, so this will be a good way to use up some of those eggs.

  26. Occasionally, I’ll cook up a whole bunch of these with sausage patties and wrap them individually. I pop them in the fridge and everyone gets one as they want one. Hubs LOVES them.     Your barn description really got me excited. I want the very same thing, down to the sunshine , screen door and landscape. No animals though. Except outside ones. The only difference is, I want a log cabin in the woods. I’m too old now to ever have it, but I can dream, can’t I?

    I make these constantly, since I have a 45 minute drive before I have to be in my classroom at 7:45 and I just hate to get up at 5:30! with one of these in the car with me, I can wait till 6 to get up! :-)

    I started using the sandwich bun thins that are so lovely now days in the store. I have never cooked the egg on the bread, but I picked up a little cooker at walmart that poaches two eggs in a minute and a half in the microwave. Slide those puppies on to the buns, top with the cheese and meat and zap for another 30 seconds, wrap in paper towel and off I go! Yum and cheaper and healthier than hitting the fast food joints.

    I’m making a batch of these to take to work next week. I used Whole Grain (1/3 less calories) muffins, 2% cheese, and Canadian bacon, so I can save money and have a little less guilt.

    (Okay, so I threw a tiny bit of “I can’t believe it’s not butter” on one side.)

    I had to reduce the power on my microwave. At full power egg white went everywhere. Thank goodness I had pricked the yolk. I went down to 80% for the second one and it was still too high. I think I will try it at 50% next time. They are yummy even if I had to clean out the microwave! Even hubby liked them. I’m going to try them for my picky eater daughter tomorrow morning!
