Tupperware makes a Crystal Wave soup mug that is JUST the right size to stack your muffin sandwich in, and then your egg doesn't have anywhere to fall off :)

I have tweaked this recipe a bit. I always toast my English muffin. I need it to be a little bit warm and a touch crisp, but that is just me. The thing I do differently is to put the egg in a small Pyrex cup for cooking in the microwave. I couldn't stand the egg falling off the muffin. Mine never even came close to staying on the thing. The cup works perfectly. It takes about 35 seconds in my microwave to cook the egg and it just pops right out of the cup and looks perfect. I also buy precooked sausage patties in the freezer section of the store. They take about a minute to heat up.

Here is what I do:

I put the English muffin in the toaster oven, heat the sausage for a minute, place a piece of cheese on top of the hot sausage, cook the egg, and by the time the egg is done, my English muffin is done. I assemble and grab my coffee.

I guess my version is more of a 3 minute breakfast. My kids love them and eat them all the time. They aren't just for breakfast. We buy our English muffins at the wholesale club because we go through the so.

Thanks!

I haven't tried this recipe yet...but I will! My comment at this point is soley on your plates. They made me smile and cry a little. All of my childhood and into my early 20s my grandmother had the very same corelle that was eventually passed on to me and I passed on to another, in favor of my own set of plain white. Seeing it again made me think of her and how many recipes she taught me during her life. Thanks for the smile! :)
