Things are so busy nowadays for families, for single people, for parents, and even for kids. We have schedules, people to take care of,  meals to shop for and cook, chores, errands, meetings and appointments,  bills to pay, and fewer and fewer precious hours of sleep. If you’re like me, everything seems to be coming at you all at once most days. Of course, my ADD doesn’t help matters any, adding an extra dose of clutter into my already packed thought process (and for the record, ADD is a gift, *not* a disorder, but that’s a story for another day). So today, I’m going to bring you a recipe to add a little bit of simplicity to your life. Today, we’re just going to take a collective deep breath, exhale, and then make a simple supper.

As a matter of fact how about we make a simple supper and then in my next few posts I’ll show you how to make a simple lunch and breakfast as well. Because life can be simple, because life is simple – if we just take time to breathe and allow it to be.

Enter my beloved iPhone. ~sighs contentedly~ I’ve had one of these since they first came out. Back in the day I had a stint ghost writing tech articles and two of my assignments were to write about the upcoming iPhone. I used the money I made on those to – buy an iPhone. It seemed fitting. I’ve had one ever since. I don’t have a lot to say about AT&T (bless their hearts)…but I love my iPhone.

This is the new Kraft Foods app known as iFood Assistant. It allows you to browse recipes by category, read reviews of each recipe, post your own reviews, and automatically make a shopping list for the recipes you choose.

On a particularly busy day, this one looked right up my alley.

It had great comments and was quick and easy to prepare with simple ingredients. Count me in!

Having my phone with me meant I had my shopping list all made out, too. I love how you can sort your shopping list by recipe because I had chosen a few other things to add to my recipe box but didn’t want to shop for them at the time. This is a really handy little app. Now lets get on to the cooking part, which won’t take long at all. I had this made from start to finish in just a few minutes.

I made this on a day where it seemed everyone except for Katy Rose had a deadline. They were headed in and then right back out the front door. One of these days I’m going to get one of those revolving doors on the front of Bountiful….

You’ll need: Salsa, canned whole kernel corn, black beans, flour tortillas, chicken , and your favorite cheese.

*I opted for canned which is completely unlike me. I usually keep leftover shredded chicken or turkey in the freezer for recipes like this.

I also left out the green onions because more than one person in my house would balk at them. Personally, I love them. But I also love brussel sprouts, squash, and sauerkraut. I’m definitely in the minority on all counts.

Open all of your cans, drain them,  and just set them by your stove.

Place a flour tortilla in a medium skillet and sprinkle some chicken and corn over the top.

Top that with some black beans.

And a few spoonfuls of salsa.

Now add some cheese.

And fold the other side over.

Brown this lightly on both sides until the cheese is melted. I do this on medium heat for a few minutes on each side.

 

Cut that in half and serve with salsa or sour cream if you like.

We inhaled these, they were so good. I whipped up more for my lunch the next day!

Simplified Quesadillas

Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup drained canned whole kernel corn
  • 1/2 cup sliced green onions (I left these out)
  • 1/2 cup drained canned black beans, rinsed
  • 1 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
  • 1 cup KRAFT Mexican Style Finely Shredded Four Cheese
  • 8-6 inch flour tortillas (I used ten inch and just made bigger ones)

Instructions

  1. LAYER chicken, corn, onions, beans, salsa and cheese evenly over one half of each tortilla.
  2. FOLD tortillas in half to enclose filling.
  3. COOK one or two quesadillas at a time in large nonstick skillet on medium-high heat 3 min. on each side or until quesadillas are lightly browned on both sides and cheese is melted.

    Terrie from Kansas introduced me to this site. She asked for a cookbook from her Tennessee family so I ordered it and Christy’s mom even made it up for me special to send for her birthday a while ago. She has cooked and shipped the dish pan cookies and apple butter and other things from the cookbook and while she was here she made us the overnight pull aparts. I have been looking for a fool proof cornbread recipe and made the Dixie cornbread and waalaa fell right out of the iron skillet onto a plate and it was soooo good. I made the apple butter and gave as gifts at work. One man’s wife has made it twice so far and they just put it back in the apple sauce jars and eat it. He said they ate one of those jars in a week between the two of them. Anyway I appreciate the to the point ingredients and instructions and we love mexican so I’m sure this one will be great on a busy night. I’m so into the cooking now from Terrie who by the way grew up a southern gal right on the Tennessee/Alabama line that I almost can’t make myself spend the money to eat out because it’s nothing like home cooking no matter fast food or sit down to me anymore. I have to tell you that your banana pudding recipe brought tears to my eyes…my Daddy was a southern man and oh man did he make THE best naner puddin! He past away unexpectantly in 2006.     Now why didn’t I ever think to use canned chicken when I wanted a quesadilla & didn’t have already cooked chicken on hand, or didn’t want to take the time to cook a “fresh” chicken?

    This recipe looks yummy & most definitely something my family would enjoy – with the green onions.

    My husband will not eat brussel sprouts but I love them. So, I keep frozen bags of them on hand & just take out what I need for a meal – and we are both happy.

    As soon as I complete this post, I’m off to look download the iFood App. I am in shock that I haven’t discovered it … but then again, that’s why I come to this site. You are a wealth of information to us all.

    This is a great Thursday night meal in my house. Thursdays are study nights for Friday test. I like to make quick & tastey meals instead of boring fast food.

    I think I will use Oscar Myer prepared, deli chicken breast, in the Santa Fe flavor with Spanish Rice on the side.

    I have got to see if there is a Verizon version of this application for my phone.

    I don’t have an Iphone or Itouch or Ipod so sadly I can’t try out the neato app. :c( However, I do love the Kraft foods website almost as much as SP. The one grocery bag meal plans are great and easily tweakable to fit your own family likes and dislikes. Easy to modify for budget by substituting some generics too. (I know Christy would approve of that!)

    I love to make quesadillas but I have never included black beans. I am going to add them next time. Also I noticed you did not warm the one side of the tortilla before adding the fillings. That saves a minute or 2 right there.
