Christy Visits Texas -Brings Back Slow Cooker Meatloaf!
Today’s post has been mulling around in my head for a few months now and it was all I could do to wait until today to write it. I had this neat idea a while back when I was thinking about how much I would love to get to visit some of y’all. I got to thinking of how neat it would be if I could see what types of foods you eat in your neck of the woods, what your family does together, what your town is like. See, I’ve always had a bit of a travel bug its just that I have seldom had the opportunity to travel! Soooooooo, I had one of those light bulb moments where I figured out how I could economically travel around, visit with some of you, and still be home every day to take care of my kids and put supper on the table. ~grins~ Flat Christy!
I presented the idea to several people to see if it was too far fetched (I tend to dream big at times so I try to gauge my ideas when I can) and it was well received by all. The next step was choosing my first guinea pig family! The Southern Plate Facebook Family page made that easy enough because I’ve gotten to know the Coer’s family pretty well through there. I sent a somewhat cryptic email to Amanda (the Mama of the bunch) and she was a good enough sport to reply with her mailing address. Two days later, Flat Christy was packed up in a box filled with goodies and an introductory letter (also a poem that I wrote to go with her, because I do love to pull out my rhyming abilities when I can!) and on her way to the great state of Texas!
I asked that they document her time with them and send back photos. My special request was that Flat Christy got to eat a family dinner and bring back a special recipe as s souvenir of her trip. Boy, did we hit pay dirt!
Amanda sent the most wonderful series of photos and the recipe looked so good that I just had to make it for our supper last night. Special thanks to Amanda’s neighbor, dear Miss Faye, who originally gave her the recipe for this delicious meatloaf. Amanda says it was a favorite of Miss Faye’s beloved husband and I have to tell you, my beloved husband went back for seconds AND thirds! (I think Miss Faye is onto something here).

And now, a letter from the Coer’s family…

Dear Christy Jordan,
We were overjoyed when Flat Christy came to visit us! She arrived on a Saturday. We came home after a Girl Scout event and our special guest was waiting for us. She was so thoughtful to come bearing yummy cupcakes and fun coloring pages!

The kids had a wonderful time helping Flat Christy get dressed for a busy day with our family. Each child chose something specific for her to wear: our youngest wanted to see her in a lovely striped shirt, our dear cousin who came to visit raved about Flat Christy in a cute denim skirt, our oldest daughter felt Flat Christy would enjoy wearing some colorful leggings and our son insisted she should be equipped with a set of martial arts “knuckle crunchers,” in case of a ninja attack.

Once she was dressed (and armed) we headed to the park. While the children played, Flat Christy and I walked a mile around the track and jammed out to some awesome Turkish pop music.

When we returned home, Flat Christy was so gracious to help prepare dinner.

She was also introduced to Duke.

Duke was not the least bit put off by the knuckle crunchers…

Her cooking advice was invaluable and dinner was a big hit.

She enjoyed playing “Cooking Mama” on the Wii (she’s a natural!) and then she traveled outside to play with the children after dinner.

Once the sun was down, we all sat down together for a family Bible study with Flat Christy seated next to Dad.

She helped us tuck the kiddos in bed.

Later that evening we struggled through a very tedious passport application together.

Sunday morning we all got up and headed out to Midtown Baptist Church!
Flat Christy loved the wonderful coffee and breakfast items available in the Sunday school room.

She was also very happy to help out in the church nursery.

We felt that our guest needed a nice lunch after all she did to help, so we took her to one of our favorite Mexican restaurants.

If you come to Texas, you just have to have some tex-mex food!

After lunch we showed her some of the sights of our little town.

We then headed home to play some dominos.
That Flat Christy is one savvy domino player!

The next day she helped us get through all our school work.

While the older kids were busy finishing some projects, Flat Christy, Vivian and I snuck into the living room to shake what our mamas gave us with some fun belly dance moves and great tunes.

Later that afternoon, we baked the cupcakes and enjoyed a nice treat after a long day.
We saved the rest to share with our church’s Monday night high school study group.
We dearly loved having Flat Christy over at our house. Give her a big kiss and hug from the Coers family!

Flat Christy brought back a slow cooker meatloaf recipe for us!

To make Miss Faye’s Slow Cooker Meatloaf (courtesy of the Coer’s family) you’ll need: 2 lbs ground beef (I’m using ground chuck because it was on sale), tomato soup, cream of mushroom soup, package dry onion soup mix, and one egg. Note: My eggs were a bit on the small side so I’m using two

Place meat, eggs, and onion soup mix in a large bowl.

Moosh it all up really good with your hands.
Cooking is not for the squeamish so just get on in there. Hands are washable! Besides, it often takes someone dealing with the messy side of things in order to be able to produce something lovely, such as dinner. There is a valuable life lesson in there that I could pull out and drive home for ya but I’m woefully lacking in caffeine today and seeing how busy Flat Christy was has gotten me flat tired!

After its all mixed up well, shape it into a loaf and place in bottom of slow cooker.
A loaf can be whatever shape you’re in the mood for. I was in a round mood today.

Pour can of cream of mushroom soup over it. I spread mine around a bit with the can.

Pour can of tomato soup over.

Cover and cook on low for 8 hours.
(or high for four hours)
THIS WAS DELICIOUS, thank you Miss Faye!!!
It kind of had a Salisbury steak taste to it – family gobbled it up!
Slow Cooker Meatloaf!
Ingredients
- 2 pounds ground beef or turkey
- 1 large egg
- 1 packet onion soup mix
- 1 can condensed cream of mushroom soup
- 1 can condensed tomato soup
- *1/4 cup ground flax seed (optional)
Instructions
- In a large bowl, mix beef, egg and onion soup mix. Roll into “loaf form” and place in slow-cooker. Cover with condensed cream of mushroom soup. Pour one can condensed tomato soup over the top. Set slow-cooker on low and cook for eight hours or high for four.

*Amanda sometimes mixes in a quarter cup of ground flax seed with the meat to sneak in Omega 3 and fiber… don’t tell her kids!

After the cold winter you’ve had up your way I think flat Christy needs some time in florida to warm up. There is lots for her to see and do up here. I cook everything from scratch including baked goods. I feed my whole street at one time or another,’cause I love feeding people!I don’t have children at home anymore but it’s good since that would leave more time to be on the go with flat Christy. I have visited your area several times and really enjoyed it.Hope to hear from you!

I am so glad to see that Flat Christy had fun in Texas! I am grew up in Texas and lived there until I got married and moved out here to North Carolina. I like it here, but I just can’t get use to the pork BBQ! I need me some BEEF BBQ! Oh and some smoked brisket! Man oh man I can’t wait to go back to Texas to visit!
I can’t wait to try this crock pot meatloaf! I love love love my crock pot! It gets lots of use since I am working mom that commutes to work. So by the time I get off work and get the kids picked up and get home it is after 6:00 and I am wore out. Oh, and that is only if we don’t have soccer, gymnastics, or something else going on that evening. So the crock pot has become my friend!
We would love to have flat Christy visit us in Concord. Maybe take her over to Lowes Motor Speedway for a visit! I have 9 and 4 year olds and they would love to show Christy around town!

we are in south alabama in troy. i have two girls who would love to design a new outfit for flat christy!
This is totally cool! My family and I would love to host flat Christy. We live in SE Indiana (20 minutes outside Cincinnati, OH). Our family all enjoys cooking, my oldest has become a regular in my kitchen. Even my husband enjoys cooking when he gets to go all out. We’d love to show flat Christy our home DIY projects that are currently underway (or when they are finished so you don’t have to see the mess!).
Since Flat Christy has already been to Texas, this may be a bit redundant … but we’d love to have her come visit us in Lago Vista, just outside Austin, in central Texas! She could go to all our Scout events with us (both Girl and Boy), come to the home school co-op and the elementary school, cheer at our soccer games for Andrew (12) and Sarah (9), help Mom with work, and return home with a delicious vegetarian recipe (or several) you could serve to the most determined carnivore and not have him know the difference!
We’d purely love to host FC. She could just come by her own self, without a box of goodies, even; she’d be that welcome. (We’d purely love to host the real Christy too, but we understand her family comes first.) Please put us on your visiting list!

What a fun way to travel around! My daughter’s orthodontist did that with her “kids” last year and we took Flat Stokes with us on our trip to Houston and Galveston. I can’t wait to see where else you get to go!
The meatloaf looks yummy, too. I’ve always wanted to try meatloaf in the slow cooker, so this is the recipe I’ll use. I heard about a trick for getting it out of the cooker, too. Make some “handles” out of aluminum foil and put them into the bottom of the slow cooker before adding the meatloaf. Then you can use your handles to lift it up and out.
Flat Christy can come to Central Pennsylvania.

* Travel with us to The National Boy Scout Jamboree (we leave in Late July) to help out at the Electronics and Electricity Merit Badge booths at the Merit Badge midway [She would have to be mailed FROM the Jamboree if she's only staying w/ us for a week, because Jambo run 10 days, and we have to be there early to set up our booth ... we're there for 2 weeks]
* Travel with us to Campaganza in Moraine State Park (Sept. 24-26) to help staff the event — and see a concert by Smashmouth. We expect 10,000 to 15,000 scouts at this event. Kind of a mini Jamboree. Camping for a weekend and a concert for just $35 a person … can’t beat that w/ a stick!
If she travels to us from May to September, there is a good chance that she will also join us on hikes/overnights trying to earn the 100 Miles of Hertiage patch(es) offered by Huntingdon County, PA. [Scout Out Huntingdon County -- scouts.raystown.org ] We don’t have our weekends picked out for those yet — we’re going to judge on the weather to see if it’s going to be a ‘good weekend’ to go hiking/canoeing/camping.
If you can’t tell, we’re heavily involved in the Boy Scouts.
Most of the things that we do are Boy Scout related. I’m the District Commissioner, and serve on my local Pack and Troop Committees. My hubby is a Unit Commissioner, and also serves on the Pack and Troop Committees.
Let me tell you … “Scouting Rounds a Person Out”
[those boys know how to eat! and we adults don't necessarily need all of their calories.

Oh, we’d love to entertain Flat Christy up here in the north! We live in West Michigan .. if she visited during the 2nd week of May, we could show her the Tulip Time Festival, the Dutch Dancers .. we could take her to Dutch Village or the Tulip farm …. The teens will have band concerts and plays … the toddler would LOVE to take Flat Christy on some play dates … oh please say you’ll come! What fun!! (And, by that time the snow should be long gone, thank you very much! LOL)

Flat Christy would have a grand time here in Smithfield, NC. We are close to the Triangle area (Raleigh, Durham, Chapel Hill) and get to enjoy big city life while being far enough away from it to consider ourselves rural! My daughter, Anna Jane, loves to help me cook and sometimes sneaks into the kitchen to “cook up concoctions” of her own (mashing bananas and blueberries with cinnamon sugar and freezing it in little Dixie cups! imagine my surprise when I saw that business in the freezer!!!) We are an active family so Flat Christy might end up on our nature trail identifying snakes or floating down Middle Creek in a canoe! We would have a great time entertaining her and wow-ing her with our culinary skills!

We would just love to have Flat Christy over for a visit. My hubby and I were born and raised in SC, but we now live in Maryland…just shy of the Mason-Dixon. We have two boys, ages 4 and 9. And, we are waiting for the phone call to adopt a daughter from China. There are all kinds of things we could do together. If she came in the next few weeks, she could go with us to see our oldest son compete in the State level of the National Geographic Bee. If she would rather visit when it is warmer up here (and I don’t blame her one bit!), she could come around the end of June when our whole family will be traveling to the Gulf Coast of Mississippi doing continued Katrina relief work. We’ll be driving a long way, and there’s lots to see. It’s my job to run the kitchen in Mississippi and feed 30+ workers for a week, and with her expertise in the kitchen, I would love to have her help! We would love to have her visit any old time at all…our door is always open! We’ll even be like Motel 6 and leave the light on for her
I can’t wait to try this recipe! I love that it has a swiss steak taste b/c that’s my husband’s favorite and for the life of me I can’t ever get it just right, my meat always ends up tough but with ground beef there’s no worry of that!
We’d love to have Flat Christy come visit us in Hawaii. We’d dress her up in a wet suit (read: laminate her) and take her surfing! My daughter Zoe (18 months) and I would take her to the North Shore to watch the big waves and have some fish tacos and shave ice. We’d stop by the roadside stands and pick up fresh fruit and banana lumpia (because it’s my weakness). And before she left we’d stop by the Dole Plantation and get some fresh pineapple for Flat Christy to take home. Because honestly, nothing comes close to fresh pineapple, it’s like sunshine in a fruit and you can hollow it out and drink out of it. =) And if she comes before the end of March she’d get to go to our Welcome Home Luau for my husband…and you know there’s going to be tons of good food there!
I do just about the same recipe for my meatloaf because I don’t like all the green peppers and tomatoes, etc…..the only differences are that I season my meat with garlic, pepper, etc (you know, the usual southern additives) and I use the “Golden Mushroom” soup which is basically the same thing as mixing the two soups together. It is wonderful and makes a fabulous gravy!

Love love crockpot meatloaf. I usually cut up some red potatoes and spritz em w/ olive oil and sprinkle with seasoning and wrap them in foil and cook in my crock pot right along with my meatloaf. I’ve never tried the soup combo but it sounds delish!
My kids love flat Stanley.. so I know they would love flat Christy just as much! I am quite sure my 2nd grader daughter would have you in a crown tout de suite. (Hurrah for high school French!) My 1st grader son would probably build flat Christy a lovely home out of legos. My hubby is chief onion chopper and follows directions really well. And me…I’m the mom.
There’s lots to do and see here in the piedmont area of NC. Did you know we are the birthplace for Krispy Kreme? I know… deep fried mecca. Wait… I think the red light is on…
Hey Flat Christy if you come over to the great state of Louisiana next weekend you can partake in a super Irish St Pattys Day parade, or attend one of the great Easter Egg hunts we’ve got coming up! Plus daughter’s 3rd birthday party is on the horizon- and I know you LOVE cake- as she’s the only child of ours, they’ll be plenty of cake!!
Dad has promises to share with you the secret family BBQ sauce- the man can bbq a mean rib girl- you would LOVE them!

What a creative and fun idea! Oh the things I could do with flat kids this summer….and we have a yummy recipe to boot.
We live in San Jose, CA, the “Heart of Silicon Valley”. There are three adorable young kids in our family, 6, 3 and 1. Life is always moving here.
If Flat Christy were to visit us, she might make it to school as show and tell, to MOPS and most definitely to the park. If it’s during the summer she may even make a trip with us to Tahoe, San Francisco, Monterey, Oakhurst (outside of Yosemite), and we wouldn’t want her to miss a dip in our pool. We enjoy the many natural and other amusement activities that are abundant in this area.

Looks like Flat Christy had a great time.
My favorite meatloaf is a crock-pot recipe I found on http://www.recipezaar.com It didn’t call for tomato soup, but it did call for everything else plus cheese, and you lay onion and taters on the bottom of your crock and then lay your loaf on top. It’s mine and my hubby’s fav. I use to not even like meatloaf until I tried this recipe. Just thought I’d share a couple of tip there. Hope you have a great night!

Anytime you want to send Flat Christy to me , I will show her around
and probably take her to work with me. I would take her to the Oldest town in Tennessee. Jonesborough. Take her to visit family and friends. Also to the big Fossil Site we have here. It might not be as exciting as some of the other places that you have been invited to but maybe you will have time to come around to me sometime in the future. Thanks for sharing your trip to Texas with us. That was a real fun trip.
I don’t think I could make meatloaf without filling it full of onions. I do like onions.
By the way, call me pernickity if you want but I always wear thin rubber gloves when handling raw meat. Especially chicken. I am so aware of samonella and clean up with clorox spray on my counters when I am finished even though I set it on newspapers. I guess it is the nurse in me??? I pull off my gloves and then roll up the newspaper with the meat tray , gloves and other stuff to thow away and it is one clean up.
Well it looks like Flat Christy had a really good time! Ummm…I didn’t mean it that way I swear! lol I really like the idea! That’s a pretty cool way to engage everyone and kinda bring this group of folks together. I also think it’s really cool that we get to see a sampling of dishes from all over. Really neat!
Oh, but don’t send Flat Christy my way unless you think she’s up to eating hot dogs and mac n cheese for dinner. lol j/k I’d find something worthy to serve up I’m sure.
