Christy Visits Texas -Brings Back Slow Cooker Meatloaf!

Today’s post has been mulling around in my head for a few months now and it was all I could do to wait until today to write it. I had this neat idea a while back when I was thinking about how much I would love to get to visit some of y’all. I got to thinking of how neat it would be if I could see what types of foods you eat in your neck of the woods, what your family does together, what your town is like. See, I’ve always had a bit of a travel bug its just that I have seldom had the opportunity to travel! Soooooooo, I had one of those light bulb moments where I figured out how I could economically travel around, visit with some of you, and still be home every day to take care of my kids and put supper on the table. ~grins~ Flat Christy!clothes

I presented the idea to several people to see if it was too far fetched (I tend to dream big at times so I try to gauge my ideas when I can) and it was well received by all. The next step was choosing my first guinea pig family! The Southern Plate Facebook Family page made that easy enough because I’ve gotten to know the Coer’s family pretty well through there. I sent a somewhat cryptic email to Amanda (the Mama of the bunch) and she was a good enough sport to reply with her mailing address. Two days later, Flat Christy was packed up in a box filled with goodies and an introductory letter (also a poem that I wrote to go with her, because I do love to pull out my rhyming abilities when I can!) and on her way to the great state of Texas!

I asked that they document her time with them and send back photos. My special request was that Flat Christy got to eat a family dinner and bring back a special recipe as s souvenir of her trip. Boy, did we hit pay dirt!

Amanda sent the most wonderful series of photos and the recipe looked so good that I just had to make it for our supper last night. Special thanks to Amanda’s neighbor, dear Miss Faye, who originally gave her the recipe for this delicious meatloaf. Amanda says it was a favorite of Miss Faye’s beloved husband and I have to tell you, my beloved husband went back for seconds AND thirds! (I think Miss Faye is onto something here).

Dear Christy Jordan,

We were overjoyed when Flat Christy came to visit us! She arrived on a Saturday. We came home after a Girl Scout event and our special guest was waiting for us. She was so thoughtful to come bearing yummy cupcakes and fun coloring pages!

The kids had a wonderful time helping Flat Christy get dressed for a busy day with our family. Each child chose something specific for her to wear: our youngest wanted to see her in a lovely striped shirt, our dear cousin who came to visit raved about Flat Christy in a cute denim skirt, our oldest daughter felt Flat Christy would enjoy wearing some colorful leggings and our son insisted she should be equipped with a set of martial arts “knuckle crunchers,” in case of a ninja attack.

Once she was dressed (and armed) we headed to the park. While the children played, Flat Christy and I walked a mile around the track and jammed out to some awesome Turkish pop music.

When we returned home, Flat Christy was so gracious to help prepare dinner.

She enjoyed playing “Cooking Mama” on the Wii (she’s a natural!) and then she traveled outside to play with the children after dinner.

Once the sun was down, we all sat down together for a family Bible study with Flat Christy seated next to Dad.

Sunday morning we all got up and headed out to Midtown Baptist Church!

Flat Christy loved the wonderful coffee and breakfast items available in the Sunday school room.

We felt that our guest needed a nice lunch after all she did to help, so we took her to one of our favorite Mexican restaurants.

Belly Dancing

While the older kids were busy finishing some projects, Flat Christy, Vivian and I snuck into the living room to shake what our mamas gave us with some fun belly dance moves and great tunes.

Later that afternoon, we baked the cupcakes and enjoyed a nice treat after a long day.

We saved the rest to share with our church’s Monday night high school study group.

We dearly loved having Flat Christy over at our house. Give her a big kiss and hug from the Coers family!

Flat Christy brought back a slow cooker meatloaf recipe for us!

To make Miss Faye’s Slow Cooker Meatloaf (courtesy of the Coer’s family) you’ll need: 2 lbs ground beef (I’m using ground chuck because it was on sale), tomato soup, cream of mushroom soup, package dry onion soup mix, and one egg. Note: My eggs were a bit on the small side so I’m using two :)

Place meat, eggs, and onion soup mix in a large bowl.

Moosh it all up really good with your hands.

Cooking is not for the squeamish so just get on in there. Hands are washable! Besides, it often takes someone dealing with the messy side of things in order to be able to produce something lovely, such as dinner. There is a valuable life lesson in there that I could pull out and drive home for ya but I’m woefully lacking in caffeine today and seeing how busy Flat Christy was has gotten me flat tired!

After its all mixed up well, shape it into a loaf and place in bottom of slow cooker.

A loaf can be whatever shape you’re in the mood for. I was in a round mood today.

Pour can of cream of mushroom soup over it. I spread mine around a bit with the can.

Pour can of tomato soup over.

Cover and cook on low for 8 hours.

(or high for four hours)

It kind of had a Salisbury steak taste to it – family gobbled it up!


Slow Cooker Meatloaf!

Ingredients

  • 2 pounds ground beef or turkey
  • 1 large egg
  • 1 packet onion soup mix
  • 1 can condensed cream of mushroom soup
  • 1 can condensed tomato soup
  • *1/4 cup ground flax seed (optional)

Instructions

  1. In a large bowl, mix beef, egg and onion soup mix. Roll into “loaf form” and place in slow-cooker. Cover with condensed cream of mushroom soup. Pour one can condensed tomato soup over the top. Set slow-cooker on low and cook for eight hours or high for four.

*Amanda sometimes mixes in a quarter cup of ground flax seed with the meat to sneak in Omega 3 and fiber… don’t tell her kids!

  2. Oh, gosh, I got SO excited to host Flat Christy that I thought it up all on my own before I even read that YOU wanted to send her someplace else next!!! So, I commented before I read the post, THEN I read the post and found out that there are some requirements for my “entry.” So, shame on me for jumping the gun, but I hope you’ll still consider our family as a vacation destination for FC. I have one sweet baby boy, Will, who is 18 months old and I am pregnant with a little girl, Emma, due in July. We’d show you the Seattle stand bys, like the Space Needle and Fish Market, but we’d also show you a day in the life of this busy, tired SAHM. Of course, what Flat Christy would see would really depend on the day. You know how it is. . . teething, colds, impromptu playdates, etc. But every day is special and fun in it’s own unique way, as I know you understand.

    Squeee! I hope we’re chosen!!!! We are a gosh darn fun family and about as far as you could send Flat Christy in the continental United States!

  3. I would love to invite Flat Christy up to Eastern Iowa in the middle of July. I am on the creative arts committee for the county fair, plus a 4-H leader and the mother of two 4-H members. I am sure that Flat Christy would enjoy visiting our county fair and helping with judging the food categories for the open class. She might also enjoy helping the girls carry in their items for judging and waiting to see what their results are. This will be my youngest daughters first year in regular 4-H so she is 10 and just finishing the 4th grade. My older daughter is almost done with 4-H as she is 16 and completing her sophomore year of school.

    From a teacher (actually staying home with the kids for now), this is the most fun thing I’ve seen someone do on a website! I love stuff like this and I would love to host Flat Christy at our home. We live in Alabama just like you, just a different part. We have 1 girl and two boys…5, 3, and 1. Depending on when she’s here would determine what she did but we do have a birthday party, Easter, T-ball games, a recital, family outings, and much more coming up in the next few weeks! So fun! I have no idea what she would eat while she’s here because I’m not the best cook (the reason I read and subscribe to your site) but I’m sure I could whip something up that I didn’t learn from you. Ooh. I’ve already got it!! It’s a surprise though!! Yay for 3-D Christy!

    Flat Christy can come visit us up here in Columbia, SC. She would get to ride around in a state troopers car (hand cuffs optional :^)than she would get to come to work with me at the hospital. If she comes and visits in the next few weeks she would even get to go to a civil war reenactment and dress up as a southern lady from the 1860′s, she could keep an eye on my 21 month old while I cooked us all dinner and I promise I would keep our boxers and cats at a safe distance from her.

    Flat Christy is a wonderful idea!! We would love to have her visit us here in CT.! We have twice hosted Flat Stanley from NC. and enjoyed our adventures! Flat Christy could enjoy the beach, apple or berry picking, the Seaport,and visiting Stew Leonards (one of Stanley’s favorites),and s’mores around the fire bowl! Our sons and daughter-in-laws would enjoy that too! What fun it would be to cook along side Flat Christy…I already have a recipe in mind!
    I loved hearing of her adventure in Texas with the Coers family and look forward to trying the slow cooker meat loaf!

    such a great and fun idea. I would love to have flat Christy come visit us here in middle TN (Murfreesboro to be exact). Our town is gorgeous, rich in history, and growing bigger every day so there is lots to see and do around here.

    I am a sahm to 2 kiddos who also keeps 2 kiddos during the day, so to say she wouldn’t be lonely is an understatement:) Depends on when she comes but we are always busy with something. Baseball is about to get up in running full force especially this spring since the youngest has started playing also. My hubby will be running in the Music City half marathon in April with his sister and BIL and could definitely use one more in his cheering section. Mid July we will be off to the beach for our annual trip. There will be lots of fun going on there from fishing to scalloping to snorkeling. During the summer we hag out around the house alot with friends and visit the zoo alot. We plant a huge garden every year and another helping hand is always appreciated.

    I love to cook especially when I can find a recipe my entire family will love-which I am sure you know all to well how that can be. My daughter is my budding chef’s assistant and loves to get in the kitchen with me.

    Flat Christy should make her way out to Utah. We can take her to our scuba diving trip in the Caribbean this July. We would have to get her a tiny wetsuit to wear (laminated) but I bet she’ll love it! She could help my two kids 11 and 13 invent a new dish. I’m so lucky that my son likes to invent new dinners and my daughter is quite the baker!

    What a great idea, if Flat Christy is up to it, I would love her to visit the Walkers in England. We would show her the local castle and market town etc. I’m sure she would appreciate an English High Tea. haha

    I made the meatloaf, but put Royal Game Soup on the top instead of the mushroom and tomato as my husband is not a fan of either.- sighs-I know, I know. – and it turned out great.

    Once again, what a great idea, and am waiting for another trip of hers to be posted.

    I think Flat Christy should go international. My three kids and I would love to have her come visit us up in Saskatchewan, Canada. We would give her a grand tour of our hometown and treat her to all kinds of Canadian treats such as, perogies with melted butter and fried onions, keilbassa or Saskatoon berry pie just to name a few things…mmmmmmm soooo delicious!!!
    Please, please, please, please, PLEASE!!! ~on my knees~ Consider us…since we may not see you on your book tour this may be as close to the real thing as we can get!

    I would like to invite you to my humble abode for a visit. Okay, maybe it’s not “humble” all the time. It can get quite chaotic. I live in the wonderful state of West Virginia. I’ve been married for seven years to my wonderful husband. I have a five (almost six!) year old son who would love to take you on a tour of his world. I also have two cats. One of my cats, Smokie, is an oldie. She’s pretty go-with-the-flow type, so she wouldn’t mind your visit. I also have a six month old kitty named Shadow. She’s quite the curious kitty. She would sniff you… a lot. While you were here, I’m sure I could take you on a few adventures. Perhaps I could take you with me when I volunteer in my son’s Kindergarten class twice a week. Or maybe we could go to the park & take a nice stroll if the weather cooperates. I know my son would take you & let you help him build a Thomas track in his bedroom. I would even let you in on a recipe or two while you were here so you could take them back to 3D Christy! Thank you for considering coming to my house for a visit.

      Forgot to tell you I live in Ga and have a 10 year old son and 16 year old daughter. My son is the one who loves to cook. I told my daughter maybe she could hire him when they grew up since he is the one that knows how to cook.

    Hi, Christy, from the mountains of Colorado near the Sangre De Cristos (Blood of Christ – they turn pink in the morning) Mountains! We don’t have kiddos in the home although some find their way here. But we have the wildlife and the view from heaven! Jeff & I’d love to host flat Christy and take her sledding and hiking to some of the most gorgeous views I’ve ever seen! Is Flat Christy afraid of heights? Flat Christy might be in danger from the scary deer that mull around, or the bunnies under the deck, or the bobcat that’s stalking the bunnies or the grass volls all around. Also my blue birds might wonder at her. Perhaps we’d take in a sunset. I’m sure the 3-legged cat would be very accommodating. All in all, hope to see you sometime!

    Made the crockpot meatloaf yesterday for dinner. Sooooo easy and it tasted great. My boys both had seconds! Yay!! Served it with some sweet tea (first time I made) which was also great. However, not something to give to a 3 y after 2 in the afternoon. He was up til 11 p.m. lol

      Altho I am reading your post in December, I am laughing at your comment about the sweet tea and the 3-yr. old. We give our babies sweet tea in their bottles at about a 3 months. Never seen a baby or anyone else react negatively to sweet tea :) We have it morning, noon, afternoon, suppertime and a glass to take to bed on the nightstand. Now to plan my meatloaf and sweet tea supper! Merry Christmas from SC.

I live in a small town called Clover and have lots of recipes I’d love for flat Christy to peruse and take home. I have 4 children and 1.5 grandchildren and a Maltese named Bailey, I’m sure if flat Christy came to visit she’d have loads of flat fun!! We have a garden out back that needs to be prepped for this season, grass to mow, laundry to fold and most importantly our house is FAMOUS for family fun time.   26. I would so LOVE to have Flat Christy come for a visit here on our little farm. We live in Kansas and are gearing up for the Spring season so I could really use her help with farm chores…. the barn needs cleaned, stalls need mucked, cows need fed, horses need worked, and I may even have time to take her on a trail ride! On top of that, being in a house with a husband and three boys leaves me craving some girl time and we could totally bond while doing chores and playing the Wii.

  27. I think Flat Christy had a great time in Texas! I think she would have a great time in MARYLAND too !!! :) We live in Jefferson, Maryland. Two children, two dogs, one fish, one mommy, one daddy. Flat Christy could go to the firehouse with daddy where he works and also stay home with the girls and I which is probably no where near as exciting as the firehouse !! Flat Christy could experience life with a tween daughter (totally crazy, let me tell you) and she could go to multiple sporting practices, games, tournaments, etc. She could also help us potty train the new puppy!!!   30. Seems like flat Christy is in demand in Maryland. We live in the small, dry town of Damascus, MD. We’re 38 miles from Washington, DC and Baltimore.
    My husband and I are empty nesters for the school year, as our son, James, is in his 2nd year of college in NC.
    We’d probably show flat Christy some of the sites in DC and introduce her to some amazing Thai, Vietnamese or Indian food – we have such a diverse population and the best food ever!

    Just had to say that I didn’t read the post in time to put this in the crockpot, so I baked it in the oven in a casserole dish. The last 5-10 minutes, I sprinkled on some canned french fried onions (like you put in a green bean casserole) until they browned. It’s now our new favorite meatloaf recipe – yum!! Now, I can’t wait to try those buttered potatoes….

    We’d also love to have Flat Christy for a visit. We live in Fredericksburg, Virginia, which is about the half-way point between Washington, D.C. and Richmond, Virginia.     We would love to host FC at our house in Brazoria, Texas (about a hour south of Houston). We live in a small rural area but there would be lots for FC to do. Our two girls (ages 8 and 3) would make her feel right at home. We live on what we tease is a “small ranchette” of 20 acres and we have 6 cows and a number of other animals. When we moved here my sister started calling it “Southfork” after the show Dallas (because if you ever really saw the set of Dallas…it wasn’t as large as the show made it feel). So I thought it was funny when you gave your house a name too. :)
    Besides just the daily chores around the house, we could find plenty to do in town. Brazoria is full of history and is known as the Birthplace of Texas. My oldest loves museums so we would probably take FC to a couple of our local ones and let her soak up some good ol’ Texas history (everybody could use of that). Our town has the “No Name” Festival every June so if we timed it just right we could take her to the carnival, parade, bake sale… maybe even get her face painted.
    So consider sending her back to Texas… this time for the country experience. Oh, and we would probably cook my momma’s (who is from Alabama) beefy-noodle casserole. It was my favorite as a kid and now my kids love it. I bet FC would too.
    So send her on down for a visit.

    Thank you, Thank you, Thank you. One for being the wonderful person you are and not only sharing these recipes with us, taking the time to do picture by picture. But for giving me another idea (via flat Christy) of what to send my grand-daughters ages 5 (as of 7/12)and 6.) They live in Texas it’s been two years since I’ve seen them, (fight between brothers, mom is some how in the middle, please say a little prayer for me.) Anyways, since I am not allowed to talk to them, I send them boxes with things to make or do, this week I sent everything they need (unless meltable) for them to make frozen pudding pops. Last month they had thier dance recital and I made them candy bouquets. I would post a picture but don’t know how too. Anyways, thank you so much for yet another goodie box.

    My nephew is leaving to go back to Canada on Tuesday for college and he teaches there. The family is getting together tomorrow after church to have a going away party. We’re all fixing our dinners and combining them so we can fill him up before he leaves. This meatloaf is headed with me to grandma’s!!! Poor boy won’t get any home cooking again until Christmas. Also making 2 chocolate cream pies, too.

    I’m just craving kraut and wieners but nobody in my house eats em but me and I don’t wanna have to eat the whole pan full….Mmmm, not a bad idea eating it all!!! I’ll just wait and let mama cook it one night for supper and go to her house. Gosh, Christy……I’m so happy you’re part of our “family” now. My cooking sure has improved.

    My family and I would love love love for Flat Christy to come for a visit to Richmond, VA! She would come peruse the famer’s markets with us and enjoy taking in the sites of Richmond!. I have a 17 year old son, and a great husband that I have been married to for 11 years! I know they would enjoy getting to know and sit down to a great dinner with Flat Christy! I hope Flat Christy will come join us!

    What an awesome idea and a fun way to get recipes. I would love for Flat Christy to visit my family in Tennessee. I have 4 kids between the ages of 19 and 10. I watch a 2-year-old in my home and I drive a school bus. I am sure there would be plenty for Flat Christy to see and do in our busy household.

    I can’t wait to try the meatloaf. Meatloaf is my absolute favorite dish. I so enjoyed reading about Flat Christy’s adventures in Texas. I am looking forward to her next visit. Two of my kids sent Flat Stanleys out in third grade and it was so much fun. I look forward to hearing from you soon! God Bless you and your family!

I am a 68 year old,single , retired school teacher and grandma. 3 of my 7 gdks live nearby and call me Mimi..11 year old Claire has a way with animals and you would love her. FC is welcome to stop by anytime she is in the neighborhood. I’ll leave a light in the window.

    Dear Flat Christy,
    My family has a position available which is open immediately. The opening is temporary, and includes both some light housework and fun family outings/gatherings. Typical outings include trips to museums (mostly the science/learning kind), visits with family (Grandma has chickens!), and the occasional movie or sporting event.
    They also enjoy the local attractions here in the Ohio River Valley; Oglebay Park is known worldwide for it’s Festival of Lights, but they have plenty to offer during all four seasons. There is lots to do in Pittsburgh, just 90 minutes away, home to many interesting innovations and loads of history, like the Duquesne Incline (worth the trip if that’s all you do!)
    My family is a mix of a transplanted husband and dad, originally from Texas, and three Yankees from SE Ohio. Because of this, our meals and celebrations are a combination of Southern, Texan, and distinctly Appalachain foodstuffs. While the position we offer does require some assistance in the kitchen, please note that the mama (Katie) is always on-hand to train and nurture both you and her kids (and sometimes hubby Dave) as you learn and help. Also, Tuesday is generally “Cook’s Night Off”. That might mean pizza or take-out, or even “Brinner”, with Dave making pancakes or eggs and bacon.
    Hannah and Caleb are great kids, although when they are at home they do a LOT of reading, so if you really want their attention, you might have to hop in front of a book! They are both in band, too, so be prepared to listen to some solos – they love to show company how their studies are coming along.
    I hope you will consider accepting the position at our house. It doesn’t pay money, but there are lots of rewards that are even better than cash. If you come, mom is likely to bake her special “Zebra” chocolate and vanilla cake, or her Black Forrest cake, both with her (locally) famous Italian meringue buttercream. In fact, please come. I like when they have cake. They eat less dinner and I might get some leftovers in my bowl!
