Every now and then I get a hitch in my step to do something and can’t seem to move beyond it til I done did whatever it was I had a hankerin’ to do (that sentence makes a lot more sense if you say it with a Southern accent, honest). Last week I got to thinking about muffins. You see, my mother thinks muffins are the second coming. She’s always looking for a new muffin recipe. Well, I got to thinking that we didn’t really have a be all, end all peach muffin recipe and isn’t that a shame? Of course it is

What would be the perfect peach muffin? Oooh! If it tasted like Mama’s peach cobbler, that would be good. It would have to have big old chunks of peaches and brown sugar, too, with just enough cinnamon to pull it all together.

So next thing you know I went to my personal playground, which is known to some as the kitchen here at Bountiful, and after adding a little of this and a little of that, Peach Cobbler Muffins were born. I called up Daddy, who was in the area working, and had him stop off to take some home to my most honored taste tester: My Mama.

I received the ultimate praise: She asked for the recipe. So I’m sharing it with y’all today, too. Hope you like it as much as we do.

You’ll need: Quick oats, oil, self rising flour*, vanilla, canned peaches, eggs, brown sugar, and cinnamon.

I just noticed that there are two bottles of vanilla in this photograph. ~sighs~ These kinds of things have been happening at my house ever since I was forced to buy a bottle of pure vanilla because the grocery store was out of imitation. There has been a rivalry and I can only assume it led to the pure vanilla jumping into this photograph at the last moment, front and center. Just ignore one of the bottles there, your choice.

Drain your peaches really well and pour them in a bowl.

You can used diced peaches if you like but I really like the big ole chunks you make this way!

Add your eggs.

and your oil

Stirry, stirry!

Toss in your vanilla.

I FINALLY finished off that little bottle of pure vanilla.

Sooooooooooooo, Sunday I went to Sam’s Club by myself.

~pauses to marvel at that sentence, having never thought she’d ever say such a thing~

Anyway, I bought the biggest whooptee thing of imitation vanilla I’ve ever seen in my whole entire life. Paid less than four bucks for it, too! No more pure vanilla! I prefer vanilla that just comes right out and says “Hey, I’m not the real thing but I wanna help ya cook anyway and I’ll do my best!”.

I find that pure vanilla tends to put on airs. Pure vanilla wants to be all measured out and used sparingly because it’s “pure”. Imitation just lets you pour it on in there straight from the bottle! We’s jes plain folks here, ain’t got room for snobbiness in my kitchen.

Place brown sugar and flour in a large mixing bowl.

I use light and dark brown sugar interchangeably in my recipes, based on what I have on hand, but I prefer dark sugar.

I have no idea how light brown sugar keeps making it into my pantry but it may have some sort of secret association with pure vanilla…

Add your cinnamon.

Add your oats.

I dearly love oats.

Stir all of that up with a fork.

Pour the dry stuff into the wet stuff.

and stir it up.

I’m not gonna encourage you to eat batter that has raw eggs in it or anything like that, coz I know none of us EVER taste the batter, right?

I’m jes gonna say that if you were to pick up that spoon right there and it happened to have a good glob of that brown sugary batter with a big old peach chunk in it, it sure would be good – or so I’m imagining. ~winks~

Spray a muffin tin with cooking spray.

This looks like a mini muffin tin to me for some reason but it’s regular sized…

Fill each cup with batter. This batter doesn’t rise much so you can fill them all the way to the top.

Bake at 400 for about twenty minutes, or until browned lightly on the top. When they come out, let them sit about five minutes and then take a spoon and carefully go around all of the edges before removing them from the pan to cool.

But eat one hot when no one is looking, coz you done worked this hard and you deserve to taste one. Aren’t they perty?

Southern Plate’s Peach Cobbler Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

  • 1 1/4 cup self rising flour *
  • 1 cup brown sugar
  • 1/4 cup quick cooking oats
  • 1 teaspoon cinnamon
  • 2 eggs
  • 29 ounce can peaches, drained well and coarsely chopped
  • 1 teaspoon vanilla
  • 3/4 cup vegetable oil

Instructions

  1. Prepare muffin pan by spraying with Pam.
  2. In large bowl, mix flour, brown sugar, oats and cinnamon. In separate bowl, mix beaten eggs, peaches, oil and vanilla.
  3. Pour egg mixture all at once into flour mixture: stir just until flour is moistened.
  4. Spoon batter into muffin cups.
  5. Bake 20 minutes at 400 degrees or until tested done. Makes one dozen.

      Cooks Digest tried a recipe using imitation vanilla and their tasters could not tell the difference, so they suggested using the imitation.

    Yes, I am not worthy. You see, I’m a bleepity-bleep Yankee and as such there was no requirement for me growing up to like peaches. Some of us Northerns do and some don’t. I fall into the latter category, and so I sincerely apologize and ask for your forgiveness Christy. hehe

    Ok, I imagine if I were to insert whatever kind of fruit I want into this recipe and play with the proportions of sugar and vanilla it would probably come out tasting pretty darn good! So i think that’s what I’ll do, just so all of your hard work isn’t wasted on me. lol

    And BTW, that you for yet another amazing post. I was giggling the whole way through with your comments about the vanilla and the light-brown sugar/vanilla conspiracy. Loved it!!

      Hi Michael. Why don’t you try these with canned pears or with canned pineapple tidbits? Use sissors to cut them up. This is too good a recipe to let a few little peaches stop you. =-)

    • I think it would be DIVINE. I am going to make these soon with mandarin oranges, too. Just be sure you drain your fruit well. This muffin ends up being very moist. Please let me know how it turns out!

    • I made some yesterday with peaches I had canned myself and they were so good! After you peel and dice ‘em up a bit, I’d say 2 1/2 to 3 Cups would work.

    • Hmmm, good question. You know I don’t even know. I think maybe juice…but then again maybe it was syrup…
      I just grabbed some so it really doesn’t matter. Just make sure you drain off whatever they’re in, either way! lol

      Yesterday I made some with peaches in syrup that I had canned myself, but didn’t drain them well enough (bad about not taking my own advice!) The muffins turned out GREAT but a weeee bit too moist for my tastes. They were gobbled up at my husband’s office, just the same!

    Ohhh Christy… I just pulled these out of the oven, broke one in half, and put a scoop of vanilla ice cream on it (my husband buttered his-he’s northern bless his heart) and YUM!!     I jes’ know your Daddy thought “These muffins are PERTY!” when he took a big bite. His stomach sure enough talked to him, telling him to “send more down, ASAP!” too.

    So, are you telling us we can have Peach Cobbler for BREAKFAST in the form of these muffins?!?!? You know…..my personal motto is “Eat dessert first”…. in case you choke on food and die during the meal, so you can die happy. Yep and it drives my honey-pie hubby crazy when I do that too. Driving to our honeymoon destination 19 yrs ago, I opened up and sampled a bite from a tin of goodies his Mama sent for us. It was 3:00 in the afternoon and he said “You can’t eat those, we have dinner in a few hours.” My cold icy stare that burned into his brain at that moment and my chilly words of “Oh, yes I can” clarified things then and there. We reached our first married “understanding” that day. ~grins & winks~

    I must say, Peach (or blueberry) Cobbler is his fav so he just might change his mind on this recipe. Great job on concocting another recipe Christy. I promise to make them for him after we both lose our wintertime-hibernation weight.
    Also, I used to eat my Mama’s raw Dixie cornbread batter, whenever she turned around to get something. That might make me weird, well, I am not sure but it never “kilt” me. Gosh I loved that stuff! Thanks ‘Bama gal….you ROCK! Love ya!

    Hi – I have to agree with your mother about the muffins. I love muffins any time of day. I keep the raisin bran cereal muffin batter stirred up in the refrigerator all the time. I found this great invention…….a muffin top pan. It bakes muffins with big tops and a very shallow base. It’s one of my favorite kitchen “things”. Love this site!!!!

    Delicious! I love peaches. Would melted butter be okay to substitute for the oil? I think this would probably make a nice cake too if you baked it in a cake pan instead ofthe muffin tins.

    I made your Crunchy Beef Casserole for dinner tonight . . . the boys LOVED it! For dessert . . . I made these guys. My hubby was on his way out to a meeting at church and had to eat one quickly.   37. Oh, these look good. But I’ll tell you what is the best vanilla in the world and that’s brandy vanilla. Buy a bottle of vanilla beans, fill it up with brandy and let it sit for a day or two. Use as you would regular vanilla.

    Don’t throw the vanilla beans away–when the bottle is empty fill it up with brandy again, over and over. And it gives you an excuse to have a bottle of brandy in the house if you’re married to Methodist.

    Next time my son goes to Mexico, I will have to have him get you a big bottle of REAL vanilla. It is dirt cheap down there and, yes, I pour it right out of the bottle just like you do. On top of everything else, these are HEALTHY (OMG)since they have oats and oats takes down your cholesterol. Hate to ruin your reputation with that but… can’t wait to try this with fresh fruit this summer!

    These look soooo good, and me and your Mama are of like mind on the muffin issue – there just ain’t nothin’ better than a good muffin (and I’m a poet and I know it).

    So…I have a request. I worked on Redstone Arsenal for about 15 years, starting in the mid-80s. Back then (and maybe still do, for all I know), they had the “roach coaches” that went around to all the far-flung buildings on the Arsenal. (Actually, to be precise, I worked on Marshall Space Flight Center, but now I’m just being picky. It’s all part of the same place.)

    ANYWAY…the Roach Coach showed up about 8:30 every morning and had all manner of breakfast delicacies on board…biscuits with sausage, ham, or bacon, with or without eggs, fried bologna sammiches, but best of all…MUFFINS. Yep, they had the best muffins I have EVER put in my mouth, and I’ve spent the last ten years of my life trying to duplicate them. Far and away the best were the Morning Glory (oh, LORD…just typing the words makes me swoon!) and the blueberry. I have never, ever been able to duplicate the moistness or the flavor of those muffins.

    If you could somehow obtain either (or both!!!) of those recipes, then I would…I would…em…well, I’m not sure what I’d do. Pretty much anything you ask, I’d imagine!

    Love you and your blog! You bring so much of my childhood back to me, when my Mama could make the best meals in the world out of pretty much nothing.

      Ok…. I was a little dissapointed. I think I got over excited and was setting my mouth for “little cobblers”. There was nothing wrong with the muffins. They were pretty and smelled delicious. It was my own head’s fault for expecting something else. Oh… and yes, these will get eaten!
      Hmmm…. maybe my taste buds were unsettled by the River Street pralines from Savannah that my husband walked in with 5 min. before the muffings came out??? Hehehe.

    I made these tonight, and I have to say they are very tasty. I had to stop myself from eating the rest. They smell so good when they are in the oven baking. I substituted applesauce for the oil, and they turned out great. They don’t look as pretty and brown as the ones you made, but sure were tasty. Thank you for the great recipe.

    the only thing im wondering IS, do u put the wet stuff IN the dry stuff or the dry stuff in the wet???

    HAHAHAHAHAHA, i cook and know it doesnt usually matter but in the pictures u add the dry to the wet and in the directions u add the wet to the dry………..LOL, snorts… are u confused yet??

      You are so very kindhearted to bake for him. In today’s world where it’s so easy to reach for a card or even order one and have it sent online , I can’t think of a more compassionate and thoughtful way to physically show someone you care like baking does.

      In the old days folks just naturally tended to do this but in our age of convenience it seems to fall to the wayside, which makes your efforts all the more meaningful.
      My thoughts will be with you and your neighbor today, I know your thoughtfulness will be a sincere comfort to him,
