Apple Cream Cheese Cobbler from Bill Gent!
I’m thrilled and grateful to bring you a guest blog post by everyone’s favorite Southern Plater, Bill Gent. I first “met” Bill not long after I started Southern Plate and we took up like peas and carrots right from the start (I’m the cute little pea and he calls me sis!). He’s just another dear friend I have made as a result of getting to know all of y’all and yet another reason I am grateful to you for all of the wonderful things in my life. As I run around like a chicken with it’s head cut off getting ready for school field trips and speaking engagements this week, Bill graciously agreed to write a blog post for ya. Thank you, Bill! Why hello there my fellow Southern Plate friends! So good to see you today! I have enjoyed Southern Plate since Christy started it two years ago…well.. I was there pretty soon after…and she’s regretted it ever since. I love Christy’s recipes for the same reasons you do, they are simple, inexpensive and delicious! The stories about Christy’s family are wonderful to read and her story making abilities make you feel like you were there along with her while she was growing up. There are so many of you I’ve enjoyed meeting because of Southern Plate and I’m glad to call you my friends. Feel free to visit me over at my blog.
Since Christy has regaled us with so many stories about her family, I want to share a little about my mine. About the only claim to fame I can muster up is that my maternal grandmother married a man 35 years younger than her, 20 years after my grandfather passed away. “Nanny” as we called her, married him back in the late 70’s. My mother and her siblings were not real happy about it at the time since “new hubby” was at least 10 years younger than they were. I remember my mother breaking down in tears upon hearing the news and it probably didn’t help that I kept asking my mother “so..are you gonna call him daddy?” Boy howdy I barely escaped with my life with that one..all three times I said it. I guess it didn’t help that I waited til she calmed down before I brought it up again. We grand kids thought it was funny as heck. It turned out very well. He was devoted to her and it was apparent they loved each other deeply. I am convinced that if she had not remarried, she would not have lived as long as she did. They stayed together until her death in 1996 at the age of 90.
Today, I want to bring you a recipe I was given at Church. Now church is a great place to eat. Ain’t nothing better than a covered dish supper that some of the senior citizen ladies have made. All that experience just waitin’ for you to dig in and savor. The recipe I got was a variation of Cream Cheese Squares. It’s about the same thing, only with apples poured over it. The best thing is that any fruit filling can be substituted.. Cherries, Peaches, Blackberries, YUM! It is to die for. Darn the calories, full speed ahead!
The ingredients you will need:
Oh wait.. that’s for changing the oil in my truck.. Dang, that coulda been nasty..
Here they are!
Now you can see that I have followed the directions of our fearless leader and bought store brands for some of it. I KNOW that the store brands are probably the very same as the name brands in an uglier package but since I haven’t used the store brand cream cheese, I didn’t want to chance it. I know Christy buys store brand vanilla and my only explanation is that I was in a hurry so I just grabbed it and ran. My local Walmart was getting busy and I wanted to get the heck out of there. I’m a guy, I hate shopping, even for food. I hate it I tell you. I want to play bumper cars with whoever is blocking the aisle while chatting on their cell phone and knock them into the display of soup cans..sigh.. but I don’t
The first thing you do is take the cream cheese out of the box and let it get to room temperature before you try to.. well.. cream it some more. If you have ever tried mixing cream cheese while it was still cold.. you know why it needs to warm up. You will wind up with calluses on your mixer or burn up your hands. Wait..reverse that last statement. Plus, once the beaters hit that cold cream cheese, it’s gonna hop on out of the bowl and take a little trip on the floor. Don’t ask me how I know that. They call it “a brick” of cream cheese for a reason.
Mix in a teaspoon of vanilla into the cheese mixture.
Do not add the vanilla to the sugar mixture, you will have very hard clumps that will break your teeth.
Next, measure out a cup and a half of sugar into a bowl and mix in a teaspoon of cinnamon. After the cinnamon and sugar are mixed, measure out a half a cup and set it aside for later. DON’T forget to set it aside, ya hear me?
Pour the remaining sugar/cinnamon mixture in with the cream cheese and mix it well.
Lay out one can of the crescent rolls in the bottom of a 9×11 pan.
The dough will be a little longer than the pan just leave it there and press it down or cut it off like I did and put it over a seam.
No biggie..no one will ever see it since it’s on the bottom.
Pour in the cream cheese and spread it evenly and pour the apple pie filling on top, also spreading it evenly.
Place the second can of crescent rolls on top.
Now here’s a dilemma, If you want the dough on top to look pretty, roll it out on some wax paper and push those seams together cause if you try to press it together when its on top of the apples, it ain’t gonna happen. Its gonna slide all over the place and frustrate you then you’ll start crying cause you’re having “one of those days” and you’ll take it out on your husband who will go into panic mode and desperately try to think of what he did wrong then say those words all men think are going to get them out of trouble.. “You look pretty tonight, babe“. He will still be wondering what he did when you throw the cat at him I, myself, do not care if my food is pretty lookin.. I’m a guy. I don’t make pretty. I don’t like cats being thrown at me. Did I tell you I hate shopping too?
Remember that ½ a cup of cinnamon sugar you set aside earlier? You DID do that didn’t you?
Ok.. Spread it evenly over the top of the dough.
Melt one stick of unsalted butter (yes, I said one whole stick, this ain’t weight watchers, people) in the microwave (try 30 seconds at a time or else it can bubble over) and pour over the top. Place the pan in a preheated oven at 350 for 30 to 40 minutes until it is brown and bubbalicious.
I normally sprinkle a bit more cinnamon over the top after I pour the butter over it but it’s just my preference.
This can be eaten hot or cold. The best way I’ve found is hot with a scoop or two of ice cream. This stuff is GOOOOOOOOOD! I have had marriage proposals from two women and it brought $150 dollars at a charity auction at one time. Sit back and bask in the compliments!

- Two 21 oz cans of apple pie filling
- 1 -1/2 Cups granulated sugar
- One teaspoon of cinnamon
- One teaspoon of vanilla flavoring
- Three 8oz boxes of cream cheese
- One stick of unsalted butter
Instructions
- Preheat oven to 350
- Let cream cheese come to room temperature, about 30-45minutes.
- Cream the cream cheese and pour vanilla flavoring in.

Bill; great recipe, just love easy desserts, put up some more. guys always have quick recipes that are yum yum. I have 4 grown sons and they always amaze me with quick recipes. I should have cooked this way when they were little but they didn’t have all the convenient foods that they do today. I get really excited to cook this way now since it’s just me, sometimes i have to cut recipes in half though.

Hey Bill-Just thought I would let you know that I not only buy store brand cream cheese, but I buy the Fat Free store brand and mouth’s drop everywhere when they take a bite and I tell them what they are eating (most recently was Christy’s Fresh Strawberry Cake with Cream Cheese Frosting). I will have to try this out because it looks yummy!

This is definitely a favorite! We’ve made it for years without the fruit and call it “Sopapilla Cheesecake.” It’s always a hit.

Heh, Christy said the same thing when I sent her the pic. Up till then I had no idea what it was called. That is my Mama’s china. That’s the first time that plate has ever had any food on it whatsoever. They went into the china cabinet when she bought them 40 something years ago and were never used. She knew better than to chance it. With my siblings, anything could become a weapon of mass destruction and go sailin past your head.
Did you know that pattern was used in an episode of “MONK” on the USA channel? I was watching it one night and their was a scene where Adrian Monk was with his brother when they were about to have dinner. I had to pause it real quick and get close to the screen to check it out. Thought it was kinda cool.
That’s so cool! I collect Starburst, which looks like something the Jetsons would have used. My mama had Blue Willow. I originally was going to collect Apple but was overruled by my too-hip children….we’ve had random Starburst sightings on TV too. Pretty neat, huh!

Oh that looks good and I think you missed your calling. You could be cooking and selling those plus your blog was entertaining. BTW there is nothing wrong at all with the store brand cream cheeses. My theory is that they were probaly all processed in the same factory. Our town used to have a dairy that processed canned evaporated milk and my Girl Scout troop toured the plant many years ago. It was all the same milk and put in all the same cans and then a variety of labels were stuck on from Carnation and Pet recognizable names to generic and multiple stores. A cow is a cow is a cow.

Yes maam, it sure would. I wasn’t sure how cinnamon would work with cherries though. Maybe nutmeg? Anyone know?
Use a light hand with the cinnamon for cherry filling – and as I suggested in an earlier post, my sainted Nana used almond flavoring and instead of cinn/sugar, just sprinkled sliced or slivered almonds on top. yum yum with just about any fruit flavor
great recipe and lives up to the humor I’ve come to expect on Southern Plate! a friend of mine makes a similar dish without the fruit filling..its kind of like a cheesecake sopapilla…we call it crack.

The recipe looks amazing and I can’t wait to try it! And Mr. Gent, I can so sympathize with you about your Grandmother. My Grandmother came to me two months after I married in 1986 to be the first to tell me she was remarrying. She was afraid it would hurt my feelings. She was 63 and her new husband was 34. The whole family was horrified but I thought it was hilarious at the time. They are still married today and my Grandmother is 87. I have called him Grandpa in public just to see other peoples reactions. Especially when someone has said something about my “husband” and I say “Oh, no that’s my Grandpa.” So Funny!
ha, ha, made my year! I’m a happyly marryed Grandma of 63 yrs., I say go Grandma, what’s good for the goose, is good for the gander,(thats an old saying,for all the youngins’ out there) lol

I am still laughing!!! LOVE your sense of humor! You make sure Christy has you back because I love having a man’s point of view on cooking. My hubby likes anything, even those nasty tiny pecan pies you can buy that come two to a package. (I personally would rather eat cardboard myself!) My hubby and son have both enjoyed my cooking since I’ve hit Southernplate.com. You guys make me look like a Queen with all these easy recipes!
Great post, Bill. Our diet won’t allow it, but that doesn’t mean we can’t drool a bit.
And if you’ll tell me when and where, we’ll have a bumper car derby that those lane-blockers will never forget. It’s not just the cell phones, though, it’s also the chatting friends and the folks who park their basket on one side and then stand beside it to check out the canned peas directly across the aisle.

Yes I think Splenda will do just fine. Do what Christy always suggest and use a little less Splenda than what the recipe calls for in sugar. I’d leave out a tablespoon or two. It gives me the excuse to try out the brand new Kitchenaid mixer I bought yesterday… first time owner of a Kitchenaid — been using a Sunbeam Mixmaster for the last 15 years. Having just creamed the cream cheese, I have decided that I want to marry my new Kitchenaid and have its tiny hand mixer babies. Ahem. Was that too much info?
Anyway, the dessert’s in the oven — I took some liberties and changed it to cherry pie filling, at the request of my mom…it sure smelled good when I put it in the oven! Thanks again

Ahh cool! Congrats on the new Kitchenaid. I have one too. I make fresh bread for my dad quite a bit and it keeps on beating the crud outta that dough with no complaints. I’ve worn two dough hooks down to a nub.
