Chocolate Chocolate Chip Cookies – How To be The BEST _____ Ever!

I received the most lofty praise I could ever hope for yesterday. Deciding I hadn’t made cookies in a while, I whipped up a batch for my kiddies to have as an afternoon treat. Katy Rose took one bite and said “Ma, you are the goodest cooker EVER!”. My heart melted. She went on to add in all of her five year old wisdom “I even think you might be a better cooker than me!”.

Note to self: The goal of having the kids help in the kitchen in order to bring about higher self esteem has definitely been successful.

My earliest memories are sitting at the kitchen table and my mother cooking something for us. She always cooked every meal but took special joy in making us little desserts, especially cookies. Growing up, we had homemade cookies baked for us twice a week - every week. We’d all go into the kitchen and help most days, too. It was wonderful and made us feel so grown up and kept the cookie jar stocked with fresh goodies for us to share with any friends who stopped by. You can imagine how popular our house was with the neighborhood kids.

As much as I love to cook, I don’t like the cleanup and it seems I’m always rushing into the kitchen to get the cooking done so I can get to another task.  I’d love to have all day to toil away at my stove and I really would enjoy it, but this is 2010 so I need me a good shortcut now and again.

Today’s recipe is just that – streamlined ingredients, shortcut cookies – but it will still land you as the title of  “Goodest _____ Ever”!

Sure, we could be the “Best” but I’ll pick “Goodest” over that any day!

Wanna be the “goodest” girlfriend, boyfriend, husband, wife, mother, grandmother, grandfather, employer, employee, coworker, neighbor, etc? Whatever your goal, this cookie will help you reach it. It will most likely put you over the top and then some.

You’re gonna need: Baking mix, Sweetened condensed milk, Vanilla (or the cheap imitation stuff that I use!), one egg, little butter (or margarine)  and chocolate chips -you’ll need a whole 12 ounce bag plus one cup.

You can use Bisquick baking mix if you don’t have Pioneer. I prefer Pioneer because the container just makes so much more sense! It’s handy to be able to put that lid on and place it neatly on my shelf. The Bisquick box really annoys me.

Note to manufacturers: I will pay a little more for a convenient container because it will save me money and hassle in the long run. Seriously!

Pour your package of chocolate chips in a bowl and heat those in the microwave for-

thirty seconds, stir, thirty seconds, stir, thirty seconds, stir…

until melted and smooth and creamy :)

Place your baking mix in a large mixing bowl.

Add your sweetened condensed milk.

If my blood sugar would let me I could drink a can of this a day. As it is, I settle for licking the spatula after I scrape it all out of the can. Calories don’t count when you’re cooking, ya know.

Crack your egg into the bowl.

Add your cheapie imitation vanilla that you only paid a dollar for because you are brave!

You are bold!

You turn up your nose to the REAL vanilla!

We are the people!

We are cheap!

Say is loud with me!

Here we go, all ready.

Now we have our smooth and creamy chocolate..

Dump that in thar, too!

Whoopsie! We forgot our melted butter!

Now we need to mix that up with an electric mixer until smooth and well blended.

I’ve gotten a good bit of slack on my use of margarine versus butter. Apparently this is a very polarizing topic, which is something kinda odd to me because I’m more of a to-each-his-own type person myself. Kind of a you-stock-your-fridge-I’ll-stock-mine type thing.

So, Margarine versus Butter, here is my official stance:

It’s a free country except when it comes to groceries.

Go with what your budget allows and if spending that extra two dollars means you can’t get your kid’s favorite yogurt, pick up that box of margarine with me and hold your head high.

Today I used butter and do you know why? Because so many folks have been giving me slack about using margarine. That’s about the most ridiculous reason I can think of and I’m kinda embarrassed to admit it. I love you butter people, I really do- I even mentioned butter in the acknowledgments section of my book. I admire you and I think you’re grand and I’m sure your dishes are filled with buttery delight that is absent in mine. You’re awesome. You’re the best. I will probably use butter from time to time in the future but my Granny wouldn’t have spent the extra money and its not in my nature to do either so at this point. Just shield your eyes from the blue bonnet box and I’ll do my best to protect you.You’re my peeps - just without the hydrogenated oils.

Now we are gonna pour in our chocolate chips into the well mixed batter and mix those up again until well blended.

I store my extra chocolate chips in a mason jar. I store just about everything in mason jars if I have them around. They’re handy and can be reused forever. They are also kinda pretty sitting around with dried beans and popcorn and such in them. Kinda like edible decorations for those of you who like countrified things. I’m kinda countrified m’self so I tend to feel a kinship with mason jars, I guess.

Drop by spoonfuls onto ungreased cookie sheets.

I love these cookie sheets. They’re called Airbake and you can get them at Wal Mart and many other places. They are insulated with a layer of air in between two sheets of metal and if you get them, you’ll have perfect cookies every time. You can also scrub them since there is no nonstick coating. I reckon I’ve had these for about ten years or so.

Oh, the package says that you can’t wash them in the dishwasher. If any of y’all are ever around my cookie sheets don’t mention that because they don’t know and I’ve been washing them in the dishwasher since day one. Shhhhh!

Wow, I’m feelin’ chatty today…

Bake them at 350 for 10-12 minutes, or until the tops are nicely cracked like this.

You don’t want to over bake them so be sure not to let them go past twelve unless you know your oven isn’t heating like it should.

I put these two photos up on our Facebook page yesterday to see which one folks liked better and it ended up being about 2/3 for this one and 1/3 firmly in the corner of the previous photo so I’m just gonna show everyone the love and put ‘em both here. Thing is, everyone who voted on a particular photo had good reason to and I agreed with all of y’all!

These are deeply decadently chocolaty and chewy. I hope you enjoy them. Brady had one this morning with his breakfast (hey, sometimes we need dessert with breakfast) and he said “You know Ma, you did a really good job on these cookies. These are mine and Katy’s favorite now!”

He says that every time I make cookies. ~grins~


Chocolate Chocolate Chip Cookies

  • 2 cups baking mix (Bisquick, Pioneer Brand, etc)
  • 14 ounce can sweetened condensed milk
  • 12 ounce package semi sweet chocolate chips, plus 1 cup chocolate chips
  • 1 egg
  • 1 teaspoon vanilla
  • 4 tablespoons butter, melted

Pour 12 ounce package of chocolate chips into bowl and heat in microwave at thirty second intervals, stirring after each, until smooth and creamy. In large mixing bowl, place all other ingredients except for additional cup of chocolate chips (the ones you didn’t melt). Mix well until well blended. Add in additional un-melted chocolate chips and mix again until they are incorporated. Drop by spoonfuls onto un-greased baking sheets and bake at 350 for 10-12 minutes. Remove from cookie sheets, cool, and eat. Makes about three dozen cookies.

    Oh Christy, these look immaculate. I’m fixin’ to make MY Mama’s chocolate chip cookie recipe, and when I think back on it, it’s my favorite thing of hers to make because I always helped with it. Anything that had the word “cookie” involved always brought me to the kitchen.

    I am lactose intolerant, but sometimes my tummy will let me get away with it in baked goods. I will most definitely try these!

    Also, I was out driving doing some errand the other day, and I thought of you. Do you have an Aldi’s nearby where you live? You can get butter quarters (salted or unsalted) for about $1.75. They taste every bit as good as any other butter I’ve tried. Personally, like you, I stick with Blue Bonnet. It’s economical, and it makes all my baking taste yummy.

    Those look terrific and that is a recipe I did not have. I made rolled sugar Easter cookies with my grandaughter Saturday night and to save time and get it chilled I already had the dough mixed up. When I got it out of the fridge she asked why I took it out of the store paper. Guess that shows her experience with homemade cookies, but we are changing that, one weekend at a time. I look forward to the day she can look back and say Nana taught me to cook and bake.

    I used to spend most of the day on Saturdays in the kitchen making cookies for my children when they were little. It made me feel better about my mothering abilities and took aways some of the guilt I felt about working. One day my sweet little boy walked into the kitchen after I had spent hours making cookies, looked up at me with big puppy-dog eyes and wanted to know “why can’t we have store bought cookies like the other kids? Are we poor?” All this time I thought I was doing something wonderful for them only to find he preferred the hard, store bought cookies to my soft, chewy homemade ones!

    • LOL That is so funny! when we were little we used to think store bought was a special treat, too! lol
      Because we always had homemade! I can guarantee you he appreciates it now and understands how fortunate he was!

      That brought back memories as we always had homemade bread in our school lunches. Big thick slices of yeasty heavenly bread , but at the time I was embarrassed and would trade the sandwiches for store bought bread. How silly of me!

      • My grandmama said the same thing about biscuits. Their friends always had loaf bread but they had sandwiches made from biscuits and they were always embarrassed. She said she still feels bad about that and is so glad she never told her Mama. Those biscuits mean the world to her now.

    This is not about the cookies, although they look and sound wonderful. My office mates and I are having Senate Bean Soup today for lunch.It’s in the crock pot getting warm as I speak. Only problem we have is keeping one guy out of it. He wants to stir!!!! ;-)

    I, too, love Pioneer Baking Mix. Isn’t the container the best? Struggling with the Bisquick box is such a pain. I keep the mix in a Lock & Lock container in the fridge.

    If you love old homes, beautifully restored (many are now b&bs), this is the place for you. The neighborhood is right on the Riverwalk–absolutely gorgeous! My husband and I stayed in the Brackenridge House during our visit five years ago and would love to go back. We went in April which was smart–summertime in TX isn’t always pleasant as far as the weather goes. But all the good eatin’, friendly folks, and places to see make up for the sultry temperatures.

    Can we substitute something else in place of the baking mix? I never carry this in my house and would love to make a batch today for the other students/teachers tonight when I go to school.

    • There are all sorts of recipes on the net for homemade baking mix if you’d like to make your own. It’s a mixture of flour, leavening agents, and shortening so if you have those on hand you could mix up a batch using a recipe from online if you like!

      I just go the lazy route :)

      Here is a recipe for baking mix. Unfortunately, I neglected to copy the source’s site for this recipe, so I can’t give credit where it is due.

      Easy Biscuit Mixture
      Servings: 24
      “Use as you would a baking mix. The possibilities are endless!”

      10 cups all-purpose flour
      1/2 cup baking powder
      1/4 cup white sugar
      3 teaspoons salt
      2 cups shortening

      In a large bowl mix together the flour, baking powder, sugar, and salt. Cut in shortening until mixture resembles coarse crumbs. Store in an airtight container for up to 6 weeks

    I love my airbake cookie sheets, too. They work really well, and that little lip makes them easy to get out of the oven!

    I am a “real butter only person” when I cook, but I don’t fault you for using margarine :) And I would be happy to eat any of your goodies made with it! lol

    I noticed your comments again on vanilla vs imitation vanilla…And may I share a thought with you…Until a few years ago, I shared your philosophy…until I got hold of Mexican vanilla on a trip back home to Texas one year. I started using it and i will tell you, the depth of flavor it imparts can be compared to none. It never fails that if I prepare something as simple as brownies, the ones with the Mexican vanilla will receive raves while the exact same recipe with regular vanilla doesn’t…Funny to think that a teaspoonful of a flavoring can change the perception of a recipe so much…I think there may be a life lesson in that…

    Really enjoy your stories about your kids and family — and of course that good old Southern cooking…

    And you are, ya know. Anywhooo, I made a Butterfinger Cake for the mechanic who had my truck since BEFORE Christmas because I couldn’t afford the repairs (Yes, I’m ashamed) Picked it up yesterday and he didn’t charge me a cent for storage. I was thankful so I did what I could.

    As for these cookies.. I desperately need to bribe my niece and her chocolate fiend husband to sponsor me in a 5k walk my church is having for our assistant pastor’s family. (They are adopting a little girl from China and need help financially.) This came at the exact right time to suck up to him.

    I think it’s great that you try to help your kids have good self-esteem. It seems like that wasn’t always done much in my family’s history, especially with girls. It reminds me of the scene in Fried Green Tomatoes where the main character’s friend tells her, “Honey, what you need is a self-esteem class for Southern women, but that’s an oxymoron!”

    I use real butter, but I bought the knock-off insulated cookie sheets from Big Lots instead of AirBake so I definitely economize, too. You just have to decide what works for you!

    Our family gave up lots of things recently so that I could fit the use of whole, organic foods in our diets. We gave up soda, candy, fruit roll up type things and the like, cookies too plus…chips and snacks of all kinds and many others….we are just fine without them and I can now afford Organic milk, and all the organice fruit and veggies we want! This too includes butter…but I haven’t ever bought margarine so that doesn’t really count. :0) ( We now snack on nut and dried fruit mixes happily!)

    We have all lost weight and feel better than ever!

    I buy Pioneer, too – cheaper than Bisquick, but the BEST reason to buy it it’s made right here in Texas. And now that you’re an official Texan, it’s only right that you would use it, too. Check out the website http://www.chguenther.com. It’s an old German family that settled in Texas and started baking. Now they have the old family home turned into a wonderful restaurant (that offers “authentic Southern hospitality, just like you, Christy!) and bakery in San Antonio. You should come visit!

    OH MY OH MY!!!! Saw this recipe and just HAD to try it. Had my 11 year old homeschooled boy help with measuring and stirring (he has SO much enjoyed your website as much as I have.. he just LOVES your kids!!! lol) So, we’ve dubbed this cookie: Christy’s Fudge Brownie Cookies because that’s exactly what they tasted like (in that order). That first luscious taste of chocolate….just like our family fudge… then the moist, richness of brownie, and finally cookie… just SOOO SOOOO good!!!

    You know.. as I was testing these, it came to me, Christy, you are the composer of beautiful food “music”. Not only can you “perform” your “music” to perfection, but, you make it fun, easy, and interesting for the rest of us “musicians” of food to attempt it for ourselves. Not only that, you don’t even ask for royalties. You give your “music” sheets out for free! Thank you for helping to make each of us better “musicians” in our own kitchens.     My plans for the evening had suddenly included cookie baking and the accompanying temptation,til read about sneaking some Eagle Brand….and I suddenly remembered I have a fasting glucose test in the morning! We’ll have to bake them for the co-workers later on in the week. I had hidden a bowl of banana puddin for them on Easter but it looks like my sneaky grandchildren beat them to it. There was still a spoon in the empty bowl….

  23. I haven’t commented in a while and find myself with two comments today!
    During our annual holiday, neighborhood cookie exchange, we had a great conversation about how differently our cookies turned out than our mama’s. After much discussion, the oldest lady at our shindig turned to all of us girls and said that we were all too fancy using real butter in our baking—she said that margarine or oleo (!) didn’t cause the cookies to spread so much! and she was right! I’ve changed my cookie baking procedure to using margarine except for my sugar cookies (I’ll used 1/2 of butter, 1/2 margarine!)
    Comment two:
    I started making my OWN vanilla!
    get a small bottle (about the size of a tabasco bottle)with a tight fitting cap, put in two vanilla beans (good ones!) that you have split lengthwise and fill with vodka or bourbon. Good Episcopalians always have a little libation in the house! Let it sit in a dark, cool pantry for 4-6 weeks, shaking once in a while. Each time you use it, refill with booze to keep the beans wet! It will work forever!!

  25. I’ve been told by a very reliable source(the little voice in my head) that if you eat these outside in the sunshine- the calories don’t count because of the counter-effects of the fresh air and sunshine and such.

    I’m headed outside to eat a couple dozen of em!!

      Well, I’m in the midst of baking these and I’ve done something wrong, I’m not sure what but my cookie dough looks like cookie soup =/ I’ve double checked and I think I got all the ingredients right…and it sure tastes good =) I subbed mint chocolate chips for regular chips though so maybe they’re just more liquidy when melted…hm.

        How did your cookies turn out? I think the mint chips may have had something to do with it. My mom used to only bake cookies once a year at Christmas (and then eventually stopped doing even that, sadness), and she always made a batch of chocolate chip cookies as well as a batch of mint chocolate chip cookies. They were the exact same recipe, just the mint chocolate chip ones had peppermint extract in the dough instead of vanilla. The regular ones always turned out fine, but the mint ones were SO thin that the chocolate chips actually stuck up out of the cookies. Something about the mint just did something to them! My mom made them anyway because my brother loved them regardless, but it always annoyed her.

    Thank you for acknowledging us “butter-lovers” because I have never cooked w/ any substitutes and butter “is my friend”…..just ask my hips ;P
    I am still stunned & amazed that you were chatty on your post…I have *never* known you to be the least bit chatty. ~giggles~ I always have so much fun reading posts on Southern Plate and my family thanks me often for “reading” it too.
    Since my house went on the market this week as we strive to return to GA, I won’t be cooking any bacon/sausage etc. and lucky for potential homebuyers, the “ONLY” thing recommended to fill the house with odors is baked goods. YIPPEEEEE!

    Oh hallelujah, blessed day! The day has come when I actually have ALL the ingredients available to me in this little island country of mine to make your recipe as intended. There sits in my pantry my very own box of Pioneer baking mix, of course, your gift to me, Christy! :)

    I actually made cookies last night and left them in for a touch too long in the oven and instead of chewy, they’re the crunchy sort. I looked at them and thought “No way, they’re not done, waaaay too soft” not realizing how much they’d firm upon cooling down.

The first batch stuck to my tried and true cookie sheets, so I sprayed them for the second batch and they practically slid off the pan! But, that’s okay because broken cookies contain no calories, right?? These are very good!!

    I have to tell you I’m one of those butter people because “ain’t nothin’ like real butter” but also because of the whole trans-fat issue. That’s one of those things I don’t mind paying a little extra for, but I search out the best deals/sales. But like anything else that’s so sinfully good – it’s best in moderation!

    These cookies look so good! I’m dying to make them, but I think they’ll have to wait until next week. All that melted chocolate… yummy :) I wanted to say that I support you 100% in your margarine buying. There’s no need for you to feel embarrassed about it, ever. I figure you’re doing pretty well if the only thing you have to be embarrassed about is buying margarine :) Also I think it’s a little inconsiderate of people to keep trying to get you to use butter and real vanilla when you’ve said many times that you don’t want to. I actually do use real butter and vanilla extract (because my fiance loves them, he gave me sad eyes when I used imitation vanilla even though I like the “fake” flavor better!), but we use light margarine on toast and steamed veggies and those things. I use Airbake pans too, they’re what my mom always had and using cheapo pans once that resulted in burned cookie bottoms was enough for me to go buy the good ones!

  44. I am making a double batch of these today and a double batch of your Dishpan Cookies today tomorrow to use for birthday presents for three of my favorite people. My husband lost his job over a year ago, so we can’t afford fancy presents, so cookies it is. I felt bad about that, but then I got to thinking: I’d probably rather a batch of homemade cookies over a store-bought present any day. I hope my recipients feel the same way!

    I made these tonight, since we’ve been snowed in for 3 days and have been bored and craving sweets. They were AWFUL! They have a medicinal aftertaste like you wouldn’t believe! I don’t know what I did wrong, but I won’t be making these again.

    However, two nights ago, I made the fried pies (did the cherry version) and OMG! Can’t wait to go to the store and buy more dried fruit so I can make them again! I had some lard from making homemade tortillas, so I used that instead of shortening. I think it made them even better! Thanks, Christy, for that FAB recipe!!!!

      I really am surprised about the cookies, I’ve never heard from anyone who didn’t love them, deeply chocolate and so rich and moist. I wonder if it one of your ingredients had an issue with it or…Did you add vanilla? If so, I wonder what kind. Thats the only ingredient I know of that would add that taste in there unless the chocolate chips had an issue or perhaps the baking mix had gone rancid, it is prone to do that even quicker than flour does. This may sound odd here, but sometimes when I am coming down with something my sense of taste gets off and everything will taste the same to me or I’ll start tasting an odd flavor that isn’t really there. I know that is a long shot but I’m groping here because they really are wonderful :)

      Glad you liked the pies at least and hope y’all get out of the snow soon. We are going on day four here and I’m about to lose my ever loving mind. :)
