Bacon Breakfast Pizza

I’m working on filling up my bacon grease jar today so I followed my mother’s advice and decided to make her breakfast pizza, starring bacon. In it’s original form, this recipe could feed an army. Literally. Mama made it on those mornings my dad or brother had friends over getting ready to go fishing, camping, canoeing, you name it. I made it a bit smaller but still large enough to feed company. If you like, you can use the small can of crescent rolls and half everything else to make it an 8×8.

After I post this I’ll be hitting the ground running. We already have crepe paper twisted and draped in the living room and kitchen. Balloons in a rainbow of colors litter our living room floor and the layers of my son’s soon-to-be-lego cake are waiting for me to decorate on the kitchen counter (I’ll post pictures on Facebook). That’s right folks, my son went and got another year older despite my pleas not to. He turned eleven yesterday and we’re having a slumber party with his cousins tonight (all boys – the cupboards will be bare by morning!).

Yesterday when he woke up we had the den all decorated and little strips of crepe paper hanging from his door. He came out with a huge grin on his face and we all sang as he blew out the candle in his birthday biscuit – an old family tradition. We spent the day together and ended it by seeing the Star Wars exhibit at the US Space & Rocket Center which I feel quite certain would be really something for anyone with the slightest interest in Star Wars or anyone who had watched just one of the movies – since I don’t fit into either one of those categories I am happy to report that it is also fun for mothers who want some pictures of their kids having a good time.

So today as I rush around (and squeeze in an eye exam for my little girl who will surely pick the loudest colored eyeglass frames available) I’m feeling all nostalgic and emotional. My babies are growing up. Katy Rose even has the nerve to start Kindergarten this year. For eleven years I’ve had a baby at home and now they are both going off and having little lives of their own. They’re growing up on me and no one will listen when I try to stop it. ~sighs~

Thank goodness they come back home when I set the dinner table. A Mama’s secret weapon :) .

You’ll need: frozen shredded hash browns(can use cubed), shredded cheddar, eggs…

You can also add your favorite things into this. Veggies, sausage, different cheeses, have fun with it!

and bacon of course!

Go ahead and fry that up.

You know, you can cook up a few packages of bacon at once and just store the cooked bacon in the refrigerator to make meal prep easier. When I do this, I try to use mine within a few days.

Open your can of crescent rolls and place them evenly in the bottom of a greased 9×13 inch pan.

Eh, that looks even enough for me.

Spread your hash browns over them. The hash browns are still frozen, don’t worry about thawing them.

Salt and pepper to taste if you like. I’d start with about 1/2 teaspoon of each.

Crack all of your eggs in a bowl and beat them up well.

Pour the eggs over your hash browns.

Now that your bacon is done, crumble it up a bit and sprinkle over the top of your eggs.

Like so!

Bake this in an oven at 35o for about 45 minutes, or until set in the center.

Sprinkle cheese over the top and return to oven just until cheese melts.

Now for the good part! Lets preserve all of that miraculous substance that is bacon grease, or drippings if you prefer.

I let mine cool in the skillet first, then pour it into a mason jar.

Now a lot of people strain off their grease but I actually scrape the pan just to get all of the little bits in mine. Then, when I’m making cornbread and such I dip my spoon waaaaaaaaaaay down to the bottom so I have the yummy bits in my batter.

A lot of folks have asked how I store my bacon grease. I’ve never seen anyone in my family who didn’t store theirs right on the counter. However, I started storing mine in the refrigerator a few years back. It solidifies but its just fine, you can scoop it out and put it right in the pan when you need it. I find that refrigerated bacon grease is a lot more convenient for me because there is no worry of messy drips when you spoon some out of the jar. If you need liquid bacon grease (like what I add to cornbread batter) you can scoop out what you need and heat it slightly in the microwave. It just takes a few seconds to get it liquified again. Bacon grease can go rancid so storing it in the refrigerator can prolong it’s shelf life considerably.

Tipnut says you can even freeze bacon grease, which I hadn’t thought of before. I guess because I tend to use mine up before I have a surplus. Now that I think about it, though, my goal is to have TWO mason jars full and put one in the freezer. Oh my, what a bounty that would be!

I think I need to cook some more bacon though…

Bacon Breakfast Pizza, all ready to serve up!

Bacon Breakfast Pizza

Ingredients

  • 1- 8 count can crescent roll dough
  • 3 cups shredded hash browns (can used cubed)
  • dozen eggs
  • 1 cup shredded cheddar
  • 6 slices bacon (more or less, depending on what you have on hand)
  • Salt and Pepper to taste
  • Optional: Other toppings of your choice. Examples are: Onions, mushrooms, other meats, other vegetables, etc

Instructions

  1. Cook bacon and set aside. Spray a 9x13 inch pan with cooking spray. Place crescent roll dough in the bottom of the pan, pinching seams together to seal. Spread frozen hash browns over dough. Salt and pepper to taste (I start with 1/2 tsp of each). Beat all eggs in a bowl and pour over hash browns. Sprinkle crumbled bacon over. Place in oven at 350 degrees for 40-45 minutes, or until set in center. Sprinkle cheese over top and return to oven just until melted. Serve warm.

    Yum! That looks delicious! I may try it for breakfast this weekend.

    I keep my bacon grease in an old Miracle Whip jar in the fridge. Right now it’s in one of those teensy jars that doesn’t hold much of anything. I’m going to have to upgrade to a larger one. Did you notice they’ve started putting mayo and Miracle Whip in plastic jars?! Not good. Not good at all. I need my glass Miracle Whip jars. I use them for everything!

    Yumm! Christy its looks really good. I make a similar breakfast casserole with sausage and I have used bacon before. Im sure the tastes are very similar. Gonna have to try this one. Hope the boys have fun! Just wait until he turns a teenager you will not be able to keep any food in the house! My son is 14 and eats a lot, I honestly dont know where he puts it!!

  7. I never thought to use the crescent rolls, I usually use a biscuit dough! I’ve also used tater tots instead of the hash-browns, although they have to be cooked a little first.

    I keep my bacon grease in the fridge in an old spaghetti sauce jar. Works great. I also like to keep all the yummy bits from the bottom of the pan – the more the merrier!

    p.s. – I never kept a jar of bacon grease until I met my husband. He started it and now it is my baby. How crazy is that?

    I love bacon and save the grease in the fridge. My favorite thing is a breakfast sandwich with a fried egg, bacon, slice of cheese and tomato. Yummy! Probably loaded with calories but oh so good.

    i love your site and collect your recipes. i am from al. i grew up in the south with my mom cooking with bacon grease and lard. i dont mean to be disrespectful but i think you owe it to your family and your followers to omit the bacon grease from your recipes and to not promote it as it is so unhealthy so much more than even the butter which i dont use much of. i would never feed bacon grease to my family or encourage anyone to do so. my parents both suffered ill health with bad hearts and clogged arteries. i have high blood pressure and am prediabetic and my daughter encourages me to eat healthy which i so appreciate as she wants me around for her grandchildren to get to know their grandmother. i know you are a wonderful loving mom and wife and i can tell you are educated so please try to encourage somewhat healthy eating if no more than never promoting bacon grease. much love and respect!!!

      I’m afraid you may have misunderstood my post here. This dish didn’t even have bacon grease in it, but I did save the bacon grease for seasoning another dish. I don’t expect anyone to drink grease or take a spoon to the jar and sit back and eat. I use bacon grease in one to two tablespoon increments to season fresh from the garden vegetables or cornbread and the like. It is so highly flavorful that a teeny bit such as a tablespoon (which has approx 38 calories by the way ) goes a very long way. As a deeply rooted Southern tradition, I’d never serve fresh green beans to anyone I loved without adding a touch of it.

      I do appreciate your comment and insight, though, and absolutely respect your views. I am terribly sorry for the health problems of your family and wish them all the best. I know they are better off already with someone who loves them so much looking out for them in the kitchen. I have much love and respect for you, too!

        A very HAPPY BIRTHDAY to Brady-bug! Now, seriously, no disrespect to Patti’s post, but bacon grease alone does not lead to heart problems, clots, pre-or post diabetes, etc. It is lifestyle and other contributing factors.

        Funny that previous generations have lived longer cooking with bacon grease and lard – perhaps because they were never sitting in front of the TV, WII, or computer screen for hours on end.

        My 96 year old German grandmother cooked with bacon grease, fatback and lard every day of her life – no health problems whatsoever, and only died at 96 because she fell and broke a hip, and caught pneumonia in the hospital. True story :-)

          Judy, it kind of reminds me of the way people often criticized Julia Child for cooking with so much butter and fat. The woman lived to be nearly 92! Maybe if she’d cut back on the fat she could have lived to be 115! :-)

          Personally, I feel that rampant carbs are a bigger problem in our society than fat.

    I just love your site and your recipes and precious notes that you share with us!!

    Happy Birthday to your precious son! I understand, totally, how hard it is to watch the time pass so quickly as we raise our children. It is so wonderful that you make their birthdays so special for them. It is a celebration of God giving us our precious angels, our babies!! My boys are now 20 and 22. They are in college (one is still at home, in college in our city.) I still thank God for everyday that I am a Mom.

    I collect cookbooks and recipes and can not wait to get your cookbook! I can remember my great grandmother always had a jar of bacon grease on her stove. Delicious cooking. She lived to be 98.

  30. I really do not know what the worry about bacon grease is all about. I am a Southern girl raised on butter, coke in the glass bottle, candy from the candy store…fried everything and lots of cooking with bacon grease. I think anything in moderation is fine just don’t go over board. What scares me is all the Hormones that they are using now in Milk and Dairy. So give me bacon grease with my fried eggs. But I am now eating brown farm eggs and Hormone free milk and meat.

    I firmly believe that anything that comes from “nature” is not as unhealthy as we are led to believe. I don’t believe that the good Lord made critters such as pigs and cows so we could clog our arteries with their products. I use real butter and have forever – they are now saying that margarine is not good for you either – so there! The only thing I can see with bacon is that it is now more processed than it used to be.
    Partake in moderation and enjoy!
    This dish looks wonderful! I wish I were home so I could make it….guess I will have to wait until we come off vacation.

    Quick question. Do the hashbrowns crisp up or are they soggy? Is is possible to cook them first so they are a little crisp to eat.

    Another way to get some good grease for Collard Green seasoning, Cornbread, and such, is when you buy a Shank portion of Smoked Ham for any reason, trim all the fat off and cut it up into baby lima bean size pieces. Then put it all in a big pot and cook it on medium until you render the fat out of those pieces and those pieces float. Be on the alert for some pieces to pop and slatter hot grease. Skim the floaters off and let them drain on paper towels. Those pieces are good as snacks or add them to your cornbread batter. Depending on how much fat you start with, you may get a lot of Smoked Ham Grease this way. It’s every bit as good as Bacon Grease. Same with Smoked Hog Jowl.

    Ever had hot bacon grease salad dressing? My Grandma in Indiana made a delicious wilted lettuce salad. She kept her grease in a pyrex square dish with a clear glass lid, right on top of her stove. Yummy

      From one Judy to another – honey you are bringing back great memories. Mine also made a spinach salad with hot bacon dressing – added a little sugar to it.

      Of course I come from a long line of German cooks, so bacon was a staple in every meal. Give me German Potato Salad (bacon, bacon grease, onions, vinegar, sugar and celery seed on red potatoes) now you are talking!

    Did you know they actually now make crescent roll dough that isn’t perforated for rolls? Its just one sheet of dough for use in all those recipes as crust!

    agree re bacon grease- grandma and mom never without a jar on the counter by the stove. Fried eggs just dont taste the same not friend in bacon grease! Even my 3 yr old is addicted to them done that way!

    Christy, I have missed coming to your blog! My cockatiels had babies and 3 of the 4 got very sick so I spent the past week and a half caring for them around the clock and didn’t have time for anything else, even my favorite blog :( The sick babies died one by one :( We have one very healthy baby left though that I’m very thankful for and pray he grows up big and strong. I know he’s only a bird, but he’s my baby since I don’t have any human babies like you. I can’t believe Brady is 11! Wow! I hope he has a great year.

    The breakfast pizza looks fantastic, it has several of my favorite ingredients! My best friend is arriving from out of the country on Tuesday and will be staying with us until my wedding in 3 weeks. She’s an early riser and I want to have breakfast ready for her on days she gets up before me. Do you think this pizza would reheat well in the microwave? I’ll bet it would be great too with fresh diced tomatoes and chives or green onions on top.

  50. This really does look fabulous! I would love to make this and I just KNOW my family would enjoy it. I We usually try to stay away from processed foods though, so I bet I could make our dough that we love made from Kamut Wheat flour! I know it may take some extra work but it is really worth every bit because it is so so healthy for us!
