House-Autry Pork Chops
When we returned from our trip to House-Autry Mills in North Carolina, I was all ready to set into some serious time in the kitchen putting all of my ideas to work. We’d already fallen in love with the onion hush puppy mix and I called to tell my brother about it, only to find out that he had been a long time devotee himself. He asked what all I had done with it and I told him the obvious: I’d made hush puppies. To that he replied “Ya know what I like to do with that…”
Now my brother is one of those c-o-u-n-t-r-y boys who talks r-e-a-l slow, giving his drawl time to roll out at it’s leisure. He’s also not a big talker as it is so when he does see fit to impart a bit of cooking wisdom, its usually pretty good, but you gotta sit and wait for it because he talks so s-l-o-w. In his defense, I’ll admit that I tend to talk about ten times faster than he does but I don’t really think its me. I think some folks just don’t listen fast enough. So, some five minutes later, when Bill had found adequate time to formulate his words, I got the recipe, a real intricate one:
“I like to take that hush puppy mix ‘n bread me some pork chops in it. That makes ya some good pork chops”
Well it sure did sound good, so I made them that night. My husband was nigh on tearful as he sat at the dinner table and actually facebooked and tweeted about how good his supper was.
I made them the next night, too. Then, when my in laws came to visit for the fourth of July, I made them again. I’ve lost count of how many times I’ve made these at this point but guess what I’m making for supper tonight?
Sometimes my brother has a good idea after all.
Here is the cool thing about this recipe, you’re going to end up with fully seasoned and very flavorful chops, but you only need two ingredients: Onion flavored hushpuppy mix and pork chops.
You’ll also need a bit of oil to fry them in.

Pour your oil to a depth of about 1/4 of an inch into a skillet. Place this on medium high heat so the oil can get heated up a bit.
I use a smaller skillet so I won’t have to use as much oil to get the depth I need. I also use plain old vegetable oil, store brand of course.
Pour about a cup of hush puppy mix into a bowl.
Now just press your pork chop into the mix.
You don’t need to batter it in anything ahead of time, as long as it is thawed it will work just fine.
Press on each side to get it coated.
Then gently put it into your hot oil. This looks like I didn’t have any breading on the side but I did, it just got wet when it hit the oil.
Make sure you are careful here, the oil is hot – you know, because you put it on a hot eye and all.
You can see if your oil is ready by flicking a little pinch of hush puppy mix or flour into it and seeing if it sizzles.
Get all of your chops in and let them cook until browned on the first side, then turn and brown on the other side.
Make sure they are cooked through and no longer pink in the center.
and enjoy some of the best fried chops you’ve ever had!

I live in Phoenix, AZ & it’s not sold here but we drove from AZ to MS to see my family & I made sure to go to the local Walmart & grab a couple of Autry mixes to bring back with me! Looks like I should have gotten the entire line of mixes. I only got the chicken breader & pork chop breading….that’s all I saw at the time…must have been sold out of the other stuff!
Wow-I have not had lunch and that plate of food looks like an ultimate meal. You are eating high on the hog with that plateful. If I had a piece of homemade pie for dessert I would think I was in hog heaven.
I had an uncle who talked r-e-a-l s-l-o-w too, only time he ever talked fast was when he backed into a live electric fence wire…can’t repeat what he said in polite company, but he did talk fast!!

Well now I wonder if I can get the hush puppy mix at Randall’s here in Houston(owned by Safeway). My roomie LOVES his pork chops and this would be a welcome treat to have them fixed this way.

Cathie, I know Christy is the expert cook here but you can do over fried chicken so why not pork chops? Just dredge the chops in the hushpuppy mix, I’d say, and add probably 2 tbsp oil to your baking pan and turn em while they’re cooking…….Bet it would work!

Rats…I haven’t been able to find the hush puppy mix yet. Found the chicken frying mix (regular and Southern style) and even the pork chop mix, but no hush puppy mix.
I haven’t given up yet though…will keep looking! If nothing else I’ll just buy it online.
Wonder if this recipe would work with chicken too? I’m not a big fan of pork chops.

Those look delicious! My husband travels a lot for business out of state (Texas). One trip, he stopped somewhere to eat and acting silly said,” Give me some of that there Salmon stuff.” making sure to mispronounce it. The lady waiting on him informed him very quickly of the correct pronunciation and added that “you people from the south talk real slow, don’t you?” He said, “Yes Ma’am, because we think about what we’re going to say before we say it.” lol

Girl….we are on the same wavelength!!! We were at the beach this past week (all 16 of us — long story) and my brother in law, brother and nephew went out to catch fish on a boat “for dinner”. Well, they caught fish, but only enough to make a pound of trout. How was I gonna feed 16 people with a pound of trout??? No loaves and fishes stories were happening, so I took myself on down to Dail’s Seafood trailer. Selling fresh flounder, grouper and shrimp right there on the side of the road.
Bought 2 pounds of grouper (flounder is too delicate and sister in law has a shellfish allergy….) and a package of hush puppy mix (not House Autry, but one respectable brand that worked just fine) at the local market.
Cut up the grouper into “fingers”, dipped ‘em in egg and then hush puppy mix and they fried up so tasty! Even my picky nephew — not the one that went fishing, but another one — ate 3!!!!! It was one of the highlights of my vacation to see him eat with such gusto!!
I think hush puppy mix is going to have to become a staple in my pantry, right along with flour, brown sugar and oatmeal!
Oh, and we had my modified Twinkie Cake for dessert — two homeruns in one meal! Thanks for making me look so good for the relatives!
This is funny because I discovered that we liked the pork breader better than the chicken breader on chicken! Love all those good ole North Carolina House-Autry products from down the road.
This recipe sounds very good but I guess you know that Autry-House has a pork chop breader mix, too. We get it in our local stores. They also have a seafood breader that is awesome. Just thought I’d mention it.
