Slow Cooker Chicken and Wild Rice – and YOUR Cheering Section!
“Mama, can I go sing in the sun room?”
“Of course you can, Katy Rose” I answered her from where I was standing at the sink, not taking the time to glance over.
“Well, can you open the door for me?”
“Can’t you open the sun room door by yourself?”
“Mama, I’m trying to carry my audience!”
I looked over to find her sporting a very serious face while struggling to hold a baby doll, Mickey Mouse, and plush Tigger half her size. I melted.
What a wise girl. She gets ready to entertain and handpicks her audience to boot! As I finished working in the kitchen to the sound of her singing I couldn’t help but think there was a life lesson to be learned from my youngest.

We all need our own cheering section from time to time, to offer a little encouragement at the start of a new day or give us a consoling hug at the end of a particularly hectic one.
You know, its okay to want someone to cheer you on, to have someone to tell you at the end of the day that you “done good”. Its also perfectly okay to seek that out or to just come right out and say “I need a little encouragement today”.
So often we’re tempted to say things like “I hate this day, I wish it would end”, expressing our frustration and inadvertently spreading negativity (it is contagious, you know) when I really think what we are trying to do is find that one person to offer a smile or a word of praise when we need it most.
Sometimes we forget how effective it can be to just say “Ya know, I could use some encouragement if you’ve got a minute”.
Needing encouragement is normal and it is expected, but I think its easier to lose sight of that in these days of interacting with the world from behind a computer screen. We don’t think to reach out and end up depriving ourselves of the chance to have our own cheering section when we need it most.
The thing is, when you let your family and friends encourage you, it puts you in a better place to give back to them. It’s not being selfish, it’s being human – and a better human at that. Anyway, just what was on my mind today courtesy of the wisdom of a five year old who has the foresight to handpick her audience.
Set up your own cheering section today and while you’re at it, make sure you’re a part of someone else’s cheering section as well.

Now on to our recipe. Have you ever eaten something that just made your stomach happy? Well this one makes mine about as happy as a pig in slop! It’s just so good. It’s incredibly easy, too, and perfect for folks who head off to busy days and want a good supper waiting on them when they get home. The ingredients are simple, the recipe is easy, and the results are good. I reckon that just about says it all.
You’ll need: Chicken breasts, cream of mushroom soup, an onion (I’m using a Vidalia), and a box of long grain and wild rice with seasonings.
You can use bone in or boneless chicken breasts. If you find yourself a little low on chicken, cut each breast into three strips. That way just three chicken breasts will yield nine pieces of chicken, more than enough for four people.
Remember, in the good old days folks could stretch the scrawniest chicken to feed a family of ten!
*I am using the Uncle Ben’s long grain and wild rice here and I haven’t seen a generic for it that has the seasoning packet so I stick with name brand on this one because that seasoning packet seasons this dish to perfection and makes it just taste sooooooo good!
Place your chicken breasts in the bottom of your slow cooker and sprinkle your chopped onion over them.
Oh, I forgot to tell you to chop your onion…so I’m telling you to do that now. On second thought, I’m asking nicely

Cover that with your cream of mushroom soup
I know it is strange for me to be using name brand soup here but I have a good reason. Last year around Thanksgiving I got cream of chicken and cream of mushroom soups on sale for 50 cents a can so I bought a case of each. I have these hoarding issues when it comes to finding good deals, which have been passed down from my father, a man who once found tuna fish on sale and bought so much that we had an entire closet filled with nothing but canned tuna. This would have been a lot more helpful, of course, if we had been a family who actually ate tuna.
If you don’t have soup on hand, just go get generic. You’ll save anywhere from twenty to fifty cents a can (possibly more) and when you have a buggy full of groceries taking twenty cents off here and there can really add up fast!
Cook that on low for 7 – 8 hours.
Then, before serving make your rice according to package directions.
You can also make this rice the night before and put it in the fridge.
Before serving, stir in your rice.
Voila!

Why didn’t I think of that ? I have done this before but put the rice in with the chicken to cook. The rice turned out mussy. Your idea looks much better. Thanks for sharing.
I made this on Saturday. I didn’t have any Uncle Ben’s, but I did have plenty of brown and wild rice. I started soaking it when I put the other ingredients in the pot. Then about an hour before I planned to eat, I drained the rice and threw it in. I just had to use extra water and make up my own seasoning (curry powder and veggie soup mix). It turned out great!
Sounds like your resourcefulness resulted in a winner for your family!!!!

Hi Christy and my Southern Plate Family! Thanks for another great recipe to give a try. If I didn’t have my crockpot-OOPS!– I mean slo-o-o-w cooker– full of pinto beans, I’d give it a whirl for supper tonite! I HAD to laugh over the tuna and Daddy Jordan taking advantage of tuna on sale. My brother and I share an apt. and one week he came home from shopping with 22 (Y-y-y-e-e-s-s-s 22!) boxes of pumpkin spice instant pudding & pie filling for 30 cents/box. A few weeks later he was diagnosed diabetic and we have 21 boxes left! LOL! Have a great rest of the day…BTW I miss your little Good Morning video

Christy, the part about your Dad buying the tuna reminds me of the time my mother got Showboat brand pork & beans for 5 cents a can. I don’t remember how many cases of those beans she bought but it took me a long time to like pork and beans after I grew up. A baloney sandwich and pork and beans–YUMMM! Feel a hug from me.
I might try this over the weekend and let it cook while I’m doing chores. I’d love to make it during the week, but I have to be gone 9 1/2 hours for work and the last time I cooked in the crockpot with minimal liquid it all cooked off and the chicken scorched a bit so now I’m a little leery! The darn slow cookers these days all have holes in the lid and I think that lets more liquid escape!
This is very similar to a recipe that was in Southern Living almost 2 years ago. It calls for cream cheese and a packet of Italian dressing mix along with the cream of mushroom soup. It is DELICIOUS! BTW, I have that same crock pot and I love it!
This sounds sooo yummy! It is really similar to something I already make. The only difference is that I add a block of cream cheese and instead of using the rice seasoning packet, I use a packet of dry Italian salad dressing mix. My family loves the way I make it but I’m gonna’ try it your way this weekend – I’m sure it’ll be a big hit. Whenever I make something really good, my hubby always asks if it came from your website!

We love chicken in any form and this sounds yummy and very easy.How wonderful to walk into the house after a busy day and get greeted by an aroma that this is sure to produce. Open up a bagged salad, slice some crusty bread and you are on the way “hawg heaven” And with slow cooker liners, clean up will be a breeze.I for one, would love to see more slow cooker recipes.

Do you have any idea how this (or other rice dishes) will freeze? I have a food saver and it is good for freezing most things but I’m not sure about rice. I want to make it this weekend and here lately, I’ve been doubling all recipes and freezing half (since I’m already getting my pots and pans dirty) because I’ll have a new baby in about 2 weeks and don’t plan on cooking much after he gets here!

I really do feel as though I’m part of the “family”, and your stories always ring a bell with me, and I can remember similar things from my childhood.
I make something similar–the rice, cooked chicken, a white sauce, onions, and water chestnuts, all mixed up in a casserole and baked. I can even “hide” spinach in there, nad it all gets eaten. It’s a long time family favorite–I remember my mom making it in the early 80s. Good stuff, that rice!
Betsy — We make something very similar here except it also has pimentos and french cut green beans. Made it this past weekend! Sooo good! I have had the recipe forever.. my mom made it when I was a wee one and that was eons ago!

HUGE hit with the family tonight after a wonderful, long day at the local water park! Unfortunately, I set my slow cooker on “High” and we were gone longer than expected, but it still came out wonderfully! Added some sour cream to the cooked down mushroom soup to make it stretch a little further and then added in the rice. EVERYONE had seconds!
This one is going to become a staple in our household for sure!

FYI If you have a Kroger grocery store in your area, they have a store brand Long Grain and Wild rice with a seasoning packet that is as good as Uncle Ben’s and cheaper unless you have a coupon.

Just love your stories….especially with Katy Bug!!! This sounds wonderful…but I think that I may try it with my new toy….my electric pressure cooker that my Mom got for me and our family. Do you have any more recipes that I could convert over for it??? I have had to go back to working full time and really using my pressure cooker a lot right now. Thank you for any ideas.
I do the entire recipe in the crockpot but use rice a roni because my grankids do not like the wild rice. Just as good.
Do you add any liquid to your slow cooker to dilute the cream soup? Wild rice is practically a staple in MN because it grows wild, and I have a similar recipe. Only I use one can of cream of mushroom and one can of cream of chicken, but that receipe adds milk as well.

My overloy thrifty grandfather once bought the entire cart of 10 cent dented cans at the grocery store. Not a label in sight. He later found out the the entire lot was salmon. He ate salmon practically everyday until it was gone. I like salmon but not that much.

Christy, I have been making this since 1986 but not in crockpot. Rice is in the angelfood boxes this month as well! Uncle Ben’s has a coupon any time you go on their website. I just posted a status on fb that we women should learn to do unto ourselves what we do unto others. I love the thought.

My parents loved this recipe. They would crank up the flavor by adding 8oz of sour cream about 30 minutes before serving being sure it is heated through.

I do the same but with boneless chicken thighs and use brown rice for a lower GI to keep blood sugar lower. I always find white rice spikes my sugars. I also love Emma’s idea about the sour cream

The story about your Dad and the tuna was priceless. But I know that feeling. Something magical about the word “SALE” and staples such as canned goods. Funny that I got your yummy recipe a day after I made raw long grain rice with broccoli cheese soup (leftover home-made) mixed with onion soup mix and chicken leg quarters on top. I like to think of myself as the queen of recycling leftovers. Will have to definitely give yours a try as I love Uncle Ben’s wild rice mixes and I always keep a can of Campbell’s versatile cream of mushroom soup on hand…just in case.

I just made this and it is so wonderful. I boiled a couple of cups of frozen chopped broccoli and added to it. I can’t wait to see what my hubby thinks about it when he take it for lunch later on today. I loved it so much I wanted to lick my plate. LOL
I tried this recipe ( I love crock pot recipes) and it was so bland…..no taste at all….BUT, I used a pack of brown rice. I went back and looked at the recipe again, and I forgot to use rice with the seasoning pack! Stupid me. So, next time ‘ll try the seasoning pack. Love all your recipes, can’t wait for the book!
