Slow Cooker Chicken and Wild Rice – and YOUR Cheering Section!

“Mama, can I go sing in the sun room?”

“Of course you can, Katy Rose” I answered her from where I was standing at the sink, not taking the time to glance over.

“Well, can you open the door for me?”

“Can’t you open the sun room door by yourself?”

“Mama, I’m trying to carry my audience!”

I looked over to find her sporting a very serious face while struggling to hold a baby doll, Mickey Mouse, and  plush Tigger half her size. I melted.

What a wise girl. She gets ready to entertain and handpicks her audience to boot! As I finished working in the kitchen to the sound of her singing I couldn’t help but think there was a life lesson to be learned from my youngest.

Katy's Cheering Section

We all need our own cheering section from time to time, to offer a little encouragement at the start of a new day or give us a consoling hug at the end of a particularly hectic one.

You know, its okay to want someone to cheer you on, to have someone to tell you at the end of the day that you “done good”. Its also perfectly okay to seek that out or to just come right out and say “I need a little encouragement today”.

So often  we’re tempted to say things like “I hate this day, I wish it would end”, expressing our frustration and inadvertently spreading negativity (it is contagious, you know) when I really think what we are trying to do is find that one person to offer a smile or a word of praise when we need it most.

Sometimes we forget how effective it can be to just say “Ya know, I could use some encouragement if you’ve got a minute”.

Needing encouragement is normal and it is expected, but I think its easier to lose sight of that in these days of interacting with the world from behind a computer screen. We don’t think to reach out and end up depriving ourselves of the chance to have our own cheering section when we need it most.

The thing is, when you let your family and friends encourage you, it puts you in a better place to give back to them. It’s not being selfish, it’s being human – and a better human at that. Anyway, just what was on my mind today courtesy of the wisdom of a five year old who has the foresight to handpick her audience. :)

Set up your own cheering section today and while you’re at it, make sure you’re a part of someone else’s cheering section as well.

Now on to our recipe. Have you ever eaten something that just made your stomach happy? Well this one makes mine about as happy as a pig in slop! It’s just so good. It’s incredibly easy, too, and perfect for folks who head off to busy days and want a good supper waiting on them when they get home. The ingredients are simple, the recipe is easy, and the results are good. I reckon that just about says it all.

You’ll need: Chicken breasts, cream of mushroom soup, an onion (I’m using a Vidalia), and a box of long grain and wild rice with seasonings.

You can use bone in or boneless chicken breasts. If you find yourself a little low on chicken, cut each breast into three strips. That way just three chicken breasts will yield nine pieces of chicken, more than enough for four people.

Remember, in the good old days folks could stretch the scrawniest chicken to feed a family of ten!

*I am using the Uncle Ben’s long grain and wild rice here and I haven’t seen a generic for it that has the seasoning packet so I stick with name brand on this one because that seasoning packet seasons this dish to perfection and makes it just taste sooooooo good!

Place your chicken breasts in the bottom of your slow cooker and sprinkle your chopped onion over them.

Oh, I forgot to tell you to chop your onion…so I’m telling you to do that now. On second thought, I’m asking nicely :) .

Cover that with your cream of mushroom soup

I know it is strange for me to be using name brand soup here but I have a good reason. Last year around Thanksgiving I got cream of chicken and cream of mushroom soups on sale for 50 cents a can so I bought a case of each. I have these hoarding issues when it comes to finding good deals, which have been passed down from my father, a man who once found tuna fish on sale and bought so much that we had an entire closet filled with nothing but canned tuna. This would have been a lot more helpful, of course, if we had been a family who actually ate tuna.

If you don’t have soup on hand, just go get generic. You’ll save anywhere from twenty to fifty cents a can (possibly more) and when you have a buggy full of groceries taking twenty cents off here and there can really add up fast!

Cook that on low for 7 – 8 hours.

Then, before serving make your rice according to package directions.

You can also make this rice the night before and put it in the fridge.

Before serving, stir in your rice.

Voila!

Slow Cooker Chicken and Wild Rice

Ingredients

  • 4 chicken breasts (Can use fewer, can use bone-in or boneless)
  • 1 can cream of mushroom soup
  • 1 onion, chopped
  • 1 box Long Grain and Wild Rice with Seasonings (I use Uncle Ben's)

Instructions

  1. Place chicken in bottom of slow cooker. Sprinkle chopped onion over top. Top with cream soup. Cover and cook on low 7-8 hours. Cook rice according to package directions*. Before serving, stir rice in. Serve hot.
  2. *Can cook rice the night before and place in refrigerator. Before serving, stir cold rice in and let cook for another ten minutes or until rice is heated through.

    Made this tonight for dinner since I knew it was going to be a very long afternoon in our house, then that way I didn’t have to worry about making dinner. Turned out really well, smelled yummy. The only thing was that I’ve never cooked w/ that type of rice before so it probably could’ve been simmering for a few more minutes. Had a few pieces of uncooked rice. But other than that was pretty good for a cheap meal! Thanks!

    I made this yesterday-WONDERFUL. I don’t use my slow cooker as much in the summer but this really changed my mind. I used a different wild rice and it could have cooked a little longer, but I will adjust next time. Think I will try some other wild rice mixtures. Smelled wonderful and the chicked was so tender.     Made this tonight also – except I made it on the stove because I didn’t get back from running errands in time to start the slow cooker. Turned out much better than I was expecting! I honestly didn’t think I’d like it much at all but I was really wanting to try something new, I had all the ingredients and I knew it would be “okay” if not great. But, boy, was I surprised! It’s really good! Thanks! :)

Any chance you would send me a copy of just the text so I could send it on? I will most definitely give you credit and send them to check out southern plate too!

    BTW, I have made a dish much like this in my slow cooker, but used brown rice, and brown rice, my own spices, and the amounts of water for the rice and just let the whole thing cook together all day. It makes the rice a little soft, but yum and no cooking once I get home or worry that the rice will come out too crunchy.

    Hi Christy This sounds so simple, but I wonder if it will be just as good with another cream soup such as chicken or celery? I just do not like mushroom. I know its in my head, but gross!       Brenda, I used cream of celery one time and LOVED it. I was out of mushroom soup and did not want to make a trip to the store just to buy one item…….my family actually liked it better!!! It is a GREAT and EASY recipe!!

    We make this often at our house but either on the stove or in the oven. I’ll have to try it in the slowcooker next time, much less mess to clean up! We add a little red pepper to it for a nice little punch of heat.

    Made this for supper last night mainly because my whole family was coming home, but hours apart….easy to hold on warm! I doubled it for all 5 of us- 3 boys in the fam. I used one can of C or Chicken and one of C of Mushroom because that is what I had on hand. Oh my it was wonderful! Half of the fun was the delicious smell when I entered my house after work!     If you live where there are Harris Teeter and Food Lion grocery stores, the house brands of the long grain and wild rice are excellent. I have made a similar recipe using them and can’t tell the difference.

    I made this tonight for dinner. O M Gosh!! There are just no words for how delicious this is!! My husband got the pouch of Uncle Ben’s instead of the box, but even w/ that it was still really good. I’m going to have to double this next time, there are not enough leftovers for all of us tomorrow, I think if I can hide the tupperware filled chicken & rice in the bottom drawer, I should be fine to have it all to myself tomorrow!! I used 5 breasts, cooked for 8 hours, chicken was a little dry, I’ll prob only cook for 7 next time. Thanks for a wonderful, super easy, DELICIOUS family recipe!!

    I have not made this exact recipe, however, I make a similar one using frozen chicken breasts, 2-3 cans of cream soup-whatever I have on hand- and a pinch of dry thyme. After cooking on low all day, I shred the chicken using a fork. Separately I make white rice and corn. Serve the chicken over the rice. We call this Heather’s favorite chicken-YUM!

    I make something very similar that was a recipe on the box of the Uncle Ben’s Long Grain and Wild Rice box. Prepare the rice (the original recipe, not the quick cooking) per the instructions on the box and while it cooks, saute chunked up chicken breasts in a large skillet in either a little bit of oil or chicken broth if you’re being fat conscious. They both finish cooking at about the same time. Drain off any remaining broth from the chicken, combine it with the rice and stir in about a cup of sour cream – SO good! If there are any leftovers (doesn’t happen too often!), you’ll want to add a little more sour cream once it’s reheated. It doesn’t look as appetizing when re-heated but the new sour cream will refresh it.

    Hi Christy, I kicked up this recipe a little by browning the chicken with a nice sear on both sides, chopped up a little fresh rosemary and using Campbell’s Golden Mushroom soup. It made it very rich and hearty. Just before serving I sprinkled a little fresh parsley on top. YUM !!!! Thanks for this recipe.

  34. Returned to this yummy crockpot meal after a lovely, fall drive. Smelled heavenly! I used leeks, added fresh rosemary, cooking sherry and mixed raisins and cranberrys. Sprinkled pecans on top before serving. Wonderful!

    Just a quicl question…i have a whole chicken.can i put the whole thing in the crock and should i use more than one can of soup since it’s bigger?after that i was going to debone it and return it to liquid in crock when adding rice??thought maub jt would b a boneless chicken and rice.lol.but i didnt want it to be too runny or too thick.what do ya ladies think?does any of that make sense??lol.help meeeeeee!!!

    I made this and had to put in some water with the chicken and because it like abosorbed all the cream of mushroom soup….maybe i should use more cream of mushroom?? Any help there it would be great
