I hope you had a wonderful Easter holiday. We had a great day at my mother’s on Saturday, complete with dyeing Easter Eggs, egg hunts, and a wonderful Easter meal (starring Ham, of course!). Then we came back here for our flashlight Easter Egg hunt in the back yard before turning in and waiting for the bunny. Easter morning was filled with the kids going through their treats and a really great service courtesy of Pastor John Dees. It doesn’t get any better than that!
So here it is Monday and I have a care package of ham in the fridge thanks to my Mama. What to do? In case you have the same bounty, here is my list of favorite leftover ham recipes. Have a WONDERFUL Monday!

We enjoyed ham dinner with my sister-in-law, her hubby, our 89 year old neighbor and our dear friends, We had crab puffs, deviled eggs, veggies & dip, pickles & olives, cheese & crackers (we are from Wisconsin), potato casserole, yams, asparagus, cooked carrots, ambrosia salad, hot rolls, fresh strawberry pie, carrot cake, and Easter candy!!
Oh my goodness, what a feast!!! Everything sounds delicious!!
Wow Diane… and ‘we’ thought NO ONE anywhere else enjoys “eating” as much as we Southerns do! Sounds like you guys really had a Blessed feast! Carrot Cake is delicious! One of our favs. as long as it is slathered with that cream cheese icing, anyway!
