Hamburger Steaks (Oh yum!)

Growing up, we always loved Mama’s hamburger steaks. There was nothing like coming home and smelling the onions bubbling in there with the generous hamburger steak patties and knowing we were in for a hearty and delicious supper. I liked mine with extra onions, my sister liked hers without any at all, and Daddy liked whatever Mama put on his plate.

This is a simple recipe and uses the family favorite: ground beef. You know, in the age where we have entire networks devoted to nothing but food, we have surprisingly few tv peeps using ground beef. This is all good and well, of course, but sometimes I think the food channels have greatly overestimated our grocery budgets :) .

I try to bring you ground beef recipes every so often because I know how much I rely on it in budget friendly main courses and I’m happy to tell you that when my Quick Fix Supper series starts on Southernliving.com, I will be bringing you even more great ground beef recipes. ~grins proudly~ (it will start soon, and I’ll keep you posted and let you know where to go to watch each episode).

Since I lost everything in my refrigerator and freezers during the days without power following the tornadoes, I was thrilled to get ground beef last week and this is the first thing I made. They were just as good as I remembered growing up and as I’m typing this post up I’m really wishing I had more fresh ground beef in the fridge right now. Maybe you’ll get to make them tonight and I’ll follow the smell and show up at your doorstep. ~grins and knocks~

You’ll need: Ground beef (or chuck, or lean ground beef), all purpose flour (but self rising will work just as well for this), beef broth (or water as a substitute) and a sweet onion (such as vidalia).

If you like, you can also season your ground beef with some seasoned salt or whatever else you’re in the mood for.

Have fun, don’t stress, and make it your own.


Shape your hamburger patties into doughnut shapes.

I’m just making three but you can make however many you’ll need. The reason we shape them into doughnut shapes (which you don’t have to do, of course) is that it helps the meat to cook more evenly and as they cook and shrink up that hole gets filled up anyway.

Now we’re going to take our hamburger patties and just dip them in flour on each side….

Only I forgot to get a picture of that so instead you get a pic of the Royal wedding party assembled on the balcony.

But WAIT

This isn’t just ANY Royal Wedding pic, this is a pic of my cat, Teaspoon, waving from the balcony along with the happy couple (bottom left, in between the bridesmaids)!

You see, our power was out for several days after the tornadoes and I wasn’t able to watch the royal wedding so sweet little Teaspoon decided to hop on a plane and take part on my behalf. Obviously, they were very impressed by her! Check out that wave ~waves back to Teaspoon proudly~  You can click on the photo to make it larger and get a better look at how suave “little t” looks.

Now back to our steaks…

Remember, you are supposed to dip each side in flour but I don’t have a picture of that.

Now we’re gonna add our patties to a skillet which is on medium heat.

You may want to add a tablespoon or two of oil to the skillet and let it heat beforehand if you have a really low fat ground beef (such as lean ground beef or ground chuck) or if your nonstick skillet isn’t quite as nonstick as it used to be.

Let those brown a few minutes on each side.

Then add your sliced onions to the pan.

Cook those until they start getting a bit soft and brown on the edges.

At this point you can drain off and discard the grease if you like.

Now pour in your beef broth (or water).

(I’m only using about a cup here)

Cover and let cook for another ten minutes or so, until your patties are cooked completely through and no longer pink in the center.

When it’s done it’ll look something like this.

Now I like to scoop out my hamburger steaks and then get my onions out with a slotted spoon to serve.

Ingredients

  • Ground Beef (can use lean, ground chuck, etc)
  • 1 Cup Beef Broth
  • All Purpose Flour
  • Vidalia or other sweet onion, sliced

Instructions

  1. Heat one or two tablespoons of oil in a large nonstick skillet. Press ground beef into doughnut shaped patties (the hole in the center will allow it to cook more evenly and will fill in as they shrink during cooking). Dip each patty into flour on both sides and place in hot skillet over medium heat. Cook for a few minutes on each side, until browned. Scoot patties to one side and add onions to skillet. Stir and cook for a few minutes until lightly browned. Pour in 1 cup beef broth and cover. Allow to cook until meat is no longer pink in the center, about ten minutes.

    Christy,
    My husband has requested hamburger steaks like his dad’s, which is how I stumbled upon this recipe. I would like a nice gravy with it, and I’m wondering if a brown gravy mix added to the broth would thicken it up a bit and add even more flavor….or does it just need a bit of flour?

      brown gravy mix is very salty and sometimes so is the beef broth . i would go with flour for gravy , but with the liquid in there the flour wont mix up , so i would suggest making gravy in another pan

        You can add flour to a some of cold water in a jar and shake the bejeezus out of it till all the chunks break down, then add it slowly to the simmering mixture in your pan while stirring it. Have to keep stirring or it will lump up anyway. It`s how my mom taught me to make gravy many many manymanymany…. yrs ago. Go slow with adding the flour mixture as it takes a little time to thicken and you don`t want glop. I`ve done that too many times. Just add a bit more clean water and keep stirring if it glops.

      Just add a little cornstarch to thicken. That way you don’t get the flour taste. Just add a little water to the cornstarch and throw it in. Works like a charm.

      I’ve done this recipe and used Lipton onion mushroom mix with the broth for a gravy. It was amazing!!

    you can reserve some of the fat from the meat and heat it in the same skillet after removing the patties then add some flour and brown it then add water until your desired thickness and you will have brown gravy. very good then add patties back to pan.

    Aw man! With some rice and greens!! I think I’ve found dinner. (I don’t remember buying beef in my adult life, but I do this with ground turkey). I don’t know if my kids would eat regular beef . . . But the gravy and onions part is what’s making me drool anyway=)

    You can always use regular yellow or white onions instead of the overpriced Videlias. If you want them to taste identical to the Videlias, just add a pinch of brown or white sugar when cooking the onions. Videlias are not more flavorful, only more sugary.

    If you live anywhere near south Texas and get the 1015 onions they are great. They are large and make fantastic onion rings also.

    This was delicious! I didn’t have flour on hand, so I used some dry onion soup mix instead. I served it on top of mashed potatoes. This was ultimate comfort food!

    was wondering how they woul dbe if I browned them in skillet and finished in oven-I cook for 6 (7 if my 13 yr old-who really counts as 2 when meal planning comes to play) and it would take forever to do on the stove. Could finish meat in oven-cook onions on stove? would like to make this this weekend. I am making a 2 week budget meal plan and I am utilizing several of your recipes.       made these this weekend to feed 7 people. Used a 3lb log-nexttime I will add garlic salt to season the meat. Cooked up th epatties until they were browned (moved to platter in warm oven til allwere cooked through) Used a large skillet (not sure of size but it is BIG). Put all the patties in, threw several sliced 1015 onions on top, followed by a pack of scliced “toadstools” as my dad calls ‘em and let everything do its thing-turning every so often to keep from burning. Doubled the broth and was delish! No leftovers in my house!

    We simply drained the fat off the pan after browning a bit and then added the onions like it says. After all was cooked following the recipe, we added a bit of flour to what was left in the pan once the steaks and onions were removed and it made a fabulous gravy for our potatoes!

    Looking forward t making these! We had those same plates when I was growing up, my mom used make hamburger steaks but she just poured cream of mushroom soup over them and didn’t use much water (my dad won’t eat onions) I liked that, but I know my family will LOVE these even more! We are all some crazy onion eaters!!!

    I don’t know bout y’all but I surely enjoy bacon with my burgers so I like to mix in bacon bits with the meat. Store bought or homemade don’t really matter I just add enuff to get that fine bacon flavor!!!!!!!!! Very yummy this way!!!

    Christy, I fixed the hamburger steaks last night. The whole time I was prepping it I kept thinking I’d done it before. When I poured in the broth, I realized why. My husband loves liver and onions, which I hated. When we were first married 38to yrs ago, I decided I had to find a way to eat it. It is exactly your recipe for the steaks, except it has to simmer for an hour, and becomes fork tender. I haven’t fixed it for about 10you yrs because he said one evening, “Okay, I think I’ve gotten enough of this. “and so I stopped. Can you tell there’s a tear in my eye? Anyway, it’s the only way I’ve ever been able to eat it, he loved it, and I actually did too. Just thought I’d tell you. I did get a chuckle out of it. Have a wonderful day!

    Hey I absolutely love this recipe!!! Came across it 2 weeks ago and I am currently making it for the 2nd time as I type!!! But I had a question! Any suggestions on how to reduce the amount oil that’s left over in the pot? This time around I even removed the fully cooked patties and drained the grease that remained in the pan and still have a good bit of it in my gravy…. I know it adds flavor but it also adds stomach issues and gas for my husband and kids while I on the other hand get that ooooooo feeling. Love the recipe though and that’s why I’m asking your thoughts :) thanks in advance!!

    I used Christy’s Herb butter on Valentine’s day to cook 2 steaks. It appears that the butter would be great to use instead of an oil. And along with the onions, I am going to cook this tonight for my wife with mushrooms also. And then Heinz 57 sauce. YUM YUM! Can’t wait until dinner time.

    when my momma made liver and onions for her and daddy, she made hamburger steaks for us kids, with fried potatoes and pinto beans. Talk about good eating. thank you for this reminder of happy times of my childhood. Momma and Daddy have both gone home, but this recipe makes me remember coming home to the smell of onion gravy cooking.

    I do this recipe sometimes, but did not ever think of the doughnut idea….it’s a great idea and I’m doing it from now on. It will eliminate those surprise “pinks” in the centers of my steakburgers. There’s NOTHING like grilled onions. Even variations on this recipes are great if you use your trusted and favorite ground beef. –Theresa, Indianapolis.

    I have been making these burgers for years, but, I never coated them in flour. But I will next time. We call these burgers Baltimore Burgers. I make them smaller and simmering in a crock pot to eat on little potato rolls. YUM.
    I have reached a milestone in my life. Tomorrow, Saturday, is our 25th Wedding Anniversary. It is hard to believe that much time has went by, it seems like only yesterday.
