At Last! Today is the debut of Quick Fix Suppers, the video series I’m hosting on SouthernLiving.com. I’m so excited to bring you this series, and especially today’s recipe! Since filming these a few weeks ago, I’ve lost count of how many times I’ve made the recipe I’ll be showing you today. It’s just that good (and so very simple). At the end, you’ll see the coolest tip, too!

Hooray for you and all of us who need some Quick-Fix dinner ideas. All your videos were great and I look forward to seeing more on Southern Living. I don’t subscribe to their magazine (as I’m a Midwesterner) but would love a free copy of their magazine especially if they have you featured in it! I liked the idea of using the rotisseree chicken as a base for the King Ranch Casserole. With those already prepared in the grocery store, even the dark meat tastes great!

I love cooking but hate spending long periods of time in the kitchen. I loved the chicken taco video. Was super fast and looked delish. Totally making it this week. Also,loved the tip about using the muffin pan to fill the tacos!!! Anything that gets me out of the kitchen faster and makes meal prep easier…..Count me in!!!
First time visiting this site. I came as a result of seeing the cookbook on QVC. Obviously not focused on healthy cooking and eating. Won’t be coming back.

In the south, our mamas teach us, “If you can’t say anything good, don’t say anything at all.” While you may live to be 90 by choosing healthy cooking and eating, it may be worth it to sacrifice 5 or 10 years and live a happy life on positivity and hamburger steak!

Loved, loved the fiesta look of the tacos and the wonderful tip on how to fill them using something most of us have on hand; a muffin tip ya’ll.

I had to tell you that my daughter had an upset stomach this past weekend and her only request was french toast….but no loaf bread in the house. I was flipping through your cookbook and TA-DA! “Waste-not, want-not french toast”!! Caroline was able to pick up the hotdog buns like french toast sticks and you’re right, you can’t beat the taste! YUM!!

Hey Christy, I love the videos on SL. Whodathunk of using a muffin tin as a taco stand. Great tidbit!! I was sorry to miss you on QVC we had company for lunch and most of the afternoon on Sunday. I made your Mama’s chicken planks for supper two nights ago and it was a huge success. It’s probably good I don’t live in Alabama, I’d probably be stalking you to the grocery store just to meet you. You just touch my heart. I’m kidding about the stalking part…kinda…;)
