5 Freezer Friendly Summer Desserts
This is the final post in my summer dessert series where I’ve been featuring cool and refreshing summer desserts that can be made ahead of time. I started it with my 6 Make Ahead Summer Cakes, then moved on to 6 Cool Summer Pies, and today I’m showcasing 5 quick and easy desserts than can be made ahead of time and stored in your freezer for no fuss entertaining at the drop of a hat.

I hope you had a wonderful Fourth of July weekend. I’m getting ready for my son’s twelfth birthday party tomorrow. We’ll be having a slumber party so y’all say a quick prayer for me that my walls are still standing when I take them all home on Thursday. He has become quite the trekkie as of late. So much so that his cake, instead of saying “Happy Birthday” is going to say “Live Long And Prosper”. ~giggles~ Don’t you just love your kid’s personalities? Both of my kids have added such sparkle to my life!
There is another significant birthday this week as well. Three years ago this Friday, I started my first post on Southernplate.com. It sure has been a wild and wonderful ride and I never expected all of the blessings Southern Plate has brought into my life. What I am most grateful for is my Southern Plate Family, which wouldn’t be the same without you.
I’ll be around this week, but in and out as I get ready for Brady’s birthday and prep for a little business travel but I just wanted to take a moment and say thank you. Southern Plate would be nothing without you and the rest of the Southern Plate family. I hope you know how very dear you are to me.

Morning, Christy and All – it was a great 4th, and the kitchen is almost back to normal, now .. whew, how is it that good fun always makes such a great mess?!?
We had a great meal, and a lot of fun. The 4th of July trifle (red, white, and blue with berries, jello cubes, and pound cake inbetween layers of custard) was a big surprise to the kids, who loved it. We downloaded coloring book pages, a 4th of July word search, and copies of the Declaration of Independence to read, to commemorate the reason for Independence Day. After the waterslide and the grownups watching the kids cool down, we watched the fireworks. From the sounds of things, we had fireworks in stereo, around Madison: Space & Rocket Center, Bridge Street, and Dublin Park!
I was watching those same fireworks and listening to the same stereophonic event! lol Can you imagine what someone would have thought if they had been dropped down in the middle of Madison with no knowledge of what we do on the fourth and all that blasting coming from three directions? ~snickers~
We really blew it up this year!

I was in Alabama last week for a family reunion and while I was sitting there talking with my cousin’s wife, she began talking about you and I was shocked to find out that you both went to college together. She said she would have never passed her sewing classes without you. I told her that I have read every one of your post for the last 2 1/2 years and love them all. wOW!! 3 Years? It sure goes by quickly when you’re with family and not only do you have your ‘real’ one, but you’ve also welcomed all of us into your family also. I finished reading your cookbook. My mother and granny loved to read cookbooks and I found myself wanting to share yours with them. Not only is it a good read, but the recipes are super! Thanks for bringing back memories of some dishes that I had forgotten about. After eating one of your dishes recently I found myself saying, “That’s larapin!” My folks used to say that and so did my husband’s folks in another county. I looked it up. It means a southern saying of people when they eat delicious po’ folk food! My daughter, who is your age, never heard of it. Apparently, I’ve been derelict in teaching her country stuff. If you haven’t heard it, I’m sure your folks have.
Good Afternoon Christy!! 3 yrs, wow.. it just keeps getting better!!!! I’ve only been a fan a short time, but soooooooooooo happy I found you!!! I can’t wait to try some of the pie recipes, of course I have made several from the cookbook already!! The cakes are a dream!! My Mom’s favorite question after every supper is “Do we have pie??” I’ve made a few but need to make them more often for sure! For lunch today, I had a Front Porch Salad with my gourmet frozen dinner (LOL). The highlight of my lunch, of course, was the great frozen treat!!

Had a great 4th of July in a small town with family. Great fun. I came late to your web site but have thoroughly enjoyed it. I can identify with your mother because I am the grandmother of 8.
We did not do alot on the 4th as my 2 daughters and grandaughter had to work. So we celebrated on Saturday for the 4th and it was also my oldest daughters birthday. We had a cookout witwh hamburgers with all the trimmings, with cake, The family just spent time with her.
Congs on your 3rd annv. of your Southern Plate which I have enjoyed every much, with all of your recipes, stories, and your videos of the story books.

Would you believe my twin granddaughters (3 years old) do not have any Veggie Tale videos. It just dawned on me that they have every Disney movie available, but NO Veggie Tales. This grandmother is going to have to fix that!

I froze it for my dad to eat while we were in Gatlinburg and he finished a whole loaf himself! Made your Squash Casserole on Sunday and it was great also.
