Today I’m bringing you another fun recipe from the Southern Plate Magazine, which is available for a limited time only!  This fun Ice Cream Pie turns an ordinary night into an impromptu ice cream social and would be a fun addition to your weekend. :)

Strawberry Ice Cream Pie

Ingredients

  • 1/2 Gallon Strawberry Ice Cream, slightly softened
  • 1 (9 inch) graham cracker crust
  • 1/2 cup quartered fresh strawberries
  • 1/2 cup strawberry syrup

Instructions

  1. Working quickly, scoop ice cream into crust. Freeze until firm, about two hours.
  2. Just before serving, arrange strawberries over ice cream ; drizzle with syrup.

    Hope you got a proper wheelchair! I was upset yesterday when I read your tales of getting to Dr, etc. You deserve proper and safe medical equipment. Hope it’s all straightened out now.     That quote is just too painful. Can’t wait to try the pie. I think I’ll freeze the crust first to help keep the ice cream frozen. Working quickly isn’t my strong suit. I’m also thinking about variations on the pie theme with maybe a chocolate crust and chocolate syrup. Happy trails, Christy (without the horse, of course). Praying that every new day is better and better for you.
