Today, I want to talk about fudgey, not too sweet, banana brownies, topped with a honey peanut butter icing that comes together in a flash. These are a great way to use up overripe bananas and they are one of those treats that hit that sweet note without going too far, and fill you up enough to count as an actual snack rather than merely a treat. I love desserts like that.

I have a good Mama. She has always been a good Mama. When I was a girl, back in the days when your parents were super human, I thought she was perfect. At everything. Okay, for the most part I still see her that way. She is good hearted and wise, hardworking, and caring to a fault.
But as a child, I saw her get up early each day and make the beds perfectly. Cook breakfast perfectly. Do her makeup and hair perfectly. Show up at every school activity (who are we kidding, she was president of the PTA so she planned and orchestrated the majority of them), sew us doll clothes, make homemade cookies a couple of times a week, love on the kids in our neighborhood who needed loving on and take care of the ones who were obviously neglected.
On top of this, she was a crafter and everything she touched turned beautiful. I remember watching her make macrame plant holders, cross stitch samplers, nightgowns for us that looks just like “Little House On The Prairie” per our request, etc. It was always perfect in my eyes and I was always proud.
Looking back and knowing Mama now I can confidently say that I doubt she ever viewed anything she did as perfect, but I still did and still do.
As a kid, I could have gone two ways with this.
I could have decided that everything I did needed to be as perfect as everything my mother did. Oh goodness, that makes me miserable just typing it!
Fortunately, I learned early on that she and I had different personalities as well as different temperaments and so I went the other way. I figured that I’d never be as perfect as my mother so I might as well do things my way and enjoy life. I’ve never looked back.
I remember distinctly one day when I was dressing one of my dolls. Her outfit had ribbon on it, meant to be tied into a bow. Usually, I took the doll to Mama when it came to the bow part because she could make these perfect little bows out of the tiniest amount of ribbon. But that day I stopped and thought “I know how to tie a bow” and did it myself. It was a little wonky, uneven, and tilted to the side. But it was my bow and I made it happen. And that is when I learned my own standard of perfection: finding joy in the task.
All of this is to explain why I’m not the least bit concerned with the type-o in my Free Printable Recipe Binder download, but I do understand why it bothers the folks who have emailed me about it. I love y’all just the way you are and wouldn’t change you for the world, but I wouldn’t change me, either!

And now for Banana Brownies: These are simple to make, throw it all together in a mixing bowl, pour batter into an 8×8, then make the icing by simply heating up a single bowl in the microwave and stirring.
They’re yummy and taste like a fudgey, not too sweet, banana bar with honey and peanut butter on top. Win!
My kids love them. In fact, my whole family does. A great recipe to add to your banana recipe arsenal for those days when you hate to let them go to waste but may not be in the mood for banana bread.

- 2 small to medium ripe bananas
- ½ cup (1 stick) butter, at room temp
- 1 cup light or dark brown sugar
- 1 cup all purpose flour
- 1 egg
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- pinch (or ¼ teaspoon) salt
- ½ cup peanut butter
- ¼ cup honey
- ½ cup confectioner's sugar
- Place brown sugar and peeled bananas in a medium sized mixing bowl. Beat with an electric mixer until bananas are liquified. Add in all other blondie ingredients. Mix again with electric mixer until fully combined. Pour batter into greased 8x8 baking dish and bake at 350 for 25-30 minutes, or until set in center.
- Combine peanut butter and honey in a 2 cup measuring cup or small bowl. Microwave at 30 second intervals until peanut butter is melted enough to stir together. Stir until smooth. Add in confectioner's sugar and stir until smooth and creamy. Spread over blondies. Allow to cool before serving.
