This will be a quick little post for a quick little recipe. These Easy Fruit Pie Cookie Bites come together in minutes and are cute as can be! With the combination of a shortbread cookie, whipped cream, and juicy fruit pie filling, they are a one bite treat that your friends and family will love.
To make these, you’ll need a package of shortbread cookies (the Lorna Doone ones are good and easy to use), fruit pie filling of your choice (you can stick with just one if you like), and some whipped topping.*

Using a star piping tip (or regular size tip of your choice, rosette works just as well), swirl a little border around each cookie as pictured above. This just takes a couple of minutes at most.
Note: I usually always have icing bags on hand. I buy a big box of the disposable ones at Michael’s every now and then using a half off coupon and they last me forever. If you don’t have any, reinforce a corner of a gallon zipper seal bag by placing clear tape over it. This keeps it from stretching while you pipe your topping or icing out. Then, place your tip in the bag and snip off just the tip of it, enough so that the opening of the tip is fully exposed. This is an excellent icing bag in a pinch.
Using a small spoon, place a dollop of pie filling in the center of each cookie. The border will help hold it in place and you now have a beautiful little pie bite.
Oh my goodness, these are so pretty! They are just the right amount of sweetness, too.
Serve immediately and enjoy!
- 1 can Pie Filling of your choice (or multiple varieties)
- 1 pkg. Lorna Doone Shortbread Cookies
- 1 container Cool Whip
- Star Piping Tip
- Spoon the cool whip into piping bag or plastic bag with a star tip.
- Lay cookies out on a baking sheet, and pipe little stars on top of each cookie around the edges.
- Spoon a little dollop of pie filling on each cookie, using flavors of your choice.
- Ready to eat!
