The first time I ever made Zucchini bread was on July 5, 1999. I put it in the oven around 8:05 PM. Around 8:10 my son decided he was ready to be born. My first thought was “BUT I JUST PUT ZUCCHINI BREAD IN THE OVEN!”. After a frantic phone call to Mama (who we lived just across from the street at the time), I left for the hospital confident that my bread would be taken out of the oven when the timer was up. About seventeen hours later I was treated to my first taste – and boy was I hungry by then!

I often find with recipes, as with memories, it is the simple things which satisfy us the most. This recipe is the perfect example of that. A classic snack cake that is not too sweet, the simple ingredients make it a breeze to throw together. Add in the full flavor of locally grown apples (preferably from a family orchard trip!) and you can’t go wrong.

I have never known anyone who did not absolutely love these muffins. The cool thing about them, and what my mother liked so much with a large family to feed, is that you can use any type of apple and it makes no difference – they will still be just as good. You can also use those apples that are starting to get a little soft and running out of their shelf life. They work great in here and no one will ever know.

This is my mother’s favorite muffin and there is a darn good reason why. Once made, the batter sits happily in your fridge for up to one month. All you need do is scoop out enough to make your muffins for the day. Only need one or two muffins for your breakfast? Perfect, just scoop out that much and cover the rest to have another day.

This is my family’s favorite use for leftover Banana Bread. They will actually avoid eating it the day I make it in order to have some leftover for french toast! This is beyond delicious and truly heaven sent!

Leave it to southerners to find a way to make something delicious out of rotting fruit. Alright so “ripe” bananas aren’t exactly rotting but if you’ve seen the state of some bananas that have been behind this moist and delicious creation, you’d know what I mean.
