I often find with recipes, as with memories, it is the simple things which satisfy us the most. This recipe is the perfect example of that. A classic snack cake that is not too sweet, the simple ingredients make it a breeze to throw together. Add in the full flavor of locally grown apples (preferably from a family orchard trip!) and you can’t go wrong.

I have never known anyone who did not absolutely love these muffins. The cool thing about them, and what my mother liked so much with a large family to feed, is that you can use any type of apple and it makes no difference – they will still be just as good. You can also use those apples that are starting to get a little soft and running out of their shelf life. They work great in here and no one will ever know.

This is my mother’s favorite muffin and there is a darn good reason why. Once made, the batter sits happily in your fridge for up to one month. All you need do is scoop out enough to make your muffins for the day. Only need one or two muffins for your breakfast? Perfect, just scoop out that much and cover the rest to have another day.

Molasses, honey, chocolate gravy, fresh butter, assorted meats and cheeses, jellies, jams, and the ever wonderful preserves. Homemade preserves are quite possibly the perfect compliment to the southern biscuit.

Mama Reed’s Southern Style Rice Pudding

Mama Reed was an amazing cook. This is her special recipe for rice pudding. Like the other matriarchs in my family, she was adept at making do with what ingredients were on hand and affordable, which made rice a regular ingredient for her cooking (even now, we all love a bowl of hot rice served with butter and sugar for breakfast).
