Today I have a guest post for you for Chicken Pot Pie from one of the head chef’s at UNA’s Culinary Department. But before I hand over the reins, I’m feeling chatty so I thought I’d spend a few minutes visiting with you if I may…. Y’all know how I am when I get chatty. Not much that can shut me up

I have some great friends and each one seems to have a specialty when it comes to the friendship department. Jyl is good as a sounding board. She lets me do my “brain dumps” and then she helps me put the pieces of the puzzle together until they make sense. Jason is good for talking things out to. When I get a thought in my head that I want to think more on and examine from all angles, Jason is always good for a few other perspectives.

Yesterday, I was working on a story that I’ve had in my head to write for well over a year now and I needed to go meet Jyl in nearby Scottsboro. So I asked Jason if he’d mind going along since I wouldn’t be back home til after dark and …oh yeah, did I mention Jason is a very good driver and used to staying up late at night? Well that’s one of his gifts, too.

We share a Southern heritage and a friendship that started back in high school when he was editor of the literary magazine and I was junior editor. He also fills the role of our “Adopted pitiful bachelor who needs to be fed” in the family. We always had a few of those hanging around my mother’s kitchen growing up and so I’d feel a little empty if my family didn’t have one, too. So you see, Jason is a handy feller.

So we get in the car and I immediately started in (The beauty of good friends is that you can skip the niceties and greetings and just begin your thought waves wherever they are at that given moment) “Okay, so George Washington. You know what he did, right? He was actually offered the throne of the United States, they offered to make him KING of the US and he turned it down because he felt it was in the best interest of the country…”

He didn’t miss a beat as he adjusted the driver’s seat of my car to accommodate his legs when he replied, “Oh yeah, I know that! And did you also know that he was the one who first introduced the idea of term limits and that they used to be voluntary until it was written into the constitution in 1947″

This is a pretty typical conversation between me and Jason.

From there we somehow took a detour and got into talking about our childhoods and attitudes and the kind of people we look up to, from there we went to our culture and how it has changed in our lifetime.

And that is where he told me the story.

It was in a book he had as a child, a collection of fairy tales and fables that his mother used to read to him. This one had stuck out to him, it had struck a note in his heart that still rang true today. He didn’t know it word for word but he knew the premise enough to tell me and for me to recreate the premise for you now.

There once was a king.

One day this King chose a man and assigned him the task of going out into the kingdom and picking the most beautiful flowers he could find to bring back to him. Another man was dispatched on the same day to pick the most noxious weeds he could find and bring them back.

And so each set about their assigned tasks and at the end of the day they returned, one with a wagon full of beautiful flowers and one with a wagon full of terribly noxious weeds.

The wise king called them before his throne and he asked the one who had brought the flowers “Tell me, did you find any weeds?” The man replied “No my king, I was too busy looking for flowers, I didn’t see any weeds at all.”

The king smiled and turned to the man who had gathered the large load of weeds, which were most assuredly resting amidst the beautiful flowers and asked “Tell me, did you find any flowers?” “No my king, I was too busy looking for noxious weeds. I didn’t see any flowers at all.”

Jason’s point was that more people used to look for flowers. We talked about this a while and he thinks Watergate was a turning point. Now I know full well what Watergate is but I prefer Jason not bring it up because it just makes me want that green goopy salad with marshmallows in it. I’m not sure if Watergate was the turning point but it definitely stands one of those times in which the record skipped, the party stopped, and the lights were turned on.

I guess it doesn’t really matter when or why it started, the end effect is the same. At some point a majority of media outlets (news, tv networks, filmmakers etc) stopped looking to Little House on the Prairie and started looking to the National Enquirer to set the standard for behavior – and once the pied piper started playing that flute all the rats just followed along behind and ran right off the cliff together. Note: My use of rats here is a pied piper reference, not calling people rats. People are hope and potential filled individuals, regardless.

At that point, they decided that the business of looking for flowers held little appeal in terms of ratings or shock value and instead began the search for noxious weeds.

And after our talk yesterday, I finally understand reality tv.

Today, as I’m writing on my second book (You can purchase my first book by clicking here) Chef Lewis from my Alma Mater has graciously agreed to share with you a simple recipe for Chicken Pot Pie. I asked him specifically to do a guest post on Chicken Pot Pie because I’ve received so many requests for one that I’ve lost count. Why haven’t I ever brought you a recipe for chicken pot pie? The same reason I won’t be bringing you a recipe for seafood. ~giggles~ Take it away, Chef!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Hi there, I’m Chef Lewis from the University of North Alabama’s Culinary Department in Florence, Al. I was asked to do a guest post to share some of our recipes for the holidays, and I was more than happy to do so. We’re very happy to have Christy as one of our departments alumni’s, and we’re happy that we can share some of our ideas with all of you. This recipe was done by myself and my team Kenny and Devon.
The ingredients you’ll need for the pot pie are chicken breasts, cream of mushroom soup, cream of chicken soup, corn, peas and carrots, butter, white pepper, diced yellow onion, and buttermilk biscuits.
I will give easy instructions for making a smaller quantity below as well.
Begin by boiling the chicken breasts in 4 cups of water with ½ of your diced onion until they are fork-tender (this will be around 20 minutes).
Remove the chicken from the water, keeping the water for later. Strain the onion out of the water with a colander or strainer, and let it cool.
Next you’ll brown the other half of your diced onions in the butter until they’re soft (around 8 minutes).
Then you take the cans of mushroom soup, chicken soup, the browned onion, and the white pepper and combine all of that in a big bowl.
Then you add about 1/2 (2 cups) of the chicken broth (the leftover water you boiled the chicken in) to thin out the soup mixture.
After that you open up the can of peas and carrots and the corn, and drain the liquid out of them, then pour that into the soup mix as well.
By now the chicken breasts should have cooled down enough that you can cut them up into bit-sized pieces.
The chicken goes into the soup mix as well. Just stir it all together and make sure it’s evenly mixed up.
All of the soup mix then goes into a deep greased 13×9 inch pan.
For the topping, you take the biscuits out of the can and flatten them out (you can use either a rolling pin or your hands).
Then stick the biscuits on the top of the chicken soup mix, till they’re covered.
Then you just stick it in the oven at 300 degrees Fahrenheit for around 20 minutes, and the top should be golden brown.
Enjoy!
Christmas and New Years behind us, and most folks are in the middle of winter, snuggling within their quilts and homes, cooking up stews and cobblers. Oh I’m doing the cooking part but not the rest of it, my mind is on other things. You see, soon as January hits, I get to expecting spring.
I can’t help it, it is my absolute most favorite time of year for a number of reasons but one in particular – I get to see my daffodils. Now before you go to thinking that I’m looking pretty far off you gotta understand that daffodils are usually in bloom here by February and the first sign of yellow, my heart up and declares SPRING!
I go by my own time table with the seasons, I’m just a wild woman that way.
I love flowers of all sorts, I am female after all. Oh Alright, I’ll confess to not being a huge red rose fan but toss a pink one my way and I’ll throw that sucker in my teeth and do one heck of a tango. Okay, not really. If anyone shouts out requests for a tango at my next speaking engagement I’m afraid you’re gonna be let down. Holler out that you want me to sing instead, I can’t refuse that, of course you might still be let down once you hear me but that wasn’t my point…
When we moved here to Bountiful a few years back, I was delighted to find a well thought out and beautifully planted ring of spring flowers around each tree in our front yard. Tete a tete daffodils, crocus, and hyacinth came up in unison, presenting the perfect blend of spring colors and fragrance. It really warmed my heart to walk around those trees, kneeling by them and lovingly taking in the flowers, knowing that someone had once cared so dearly for this house.
So that very first fall, I ordered more bulbs. King Alfred, tete a tete, orange throat, every variety I could find (and afford). I ordered around a hundred that year and got out with my little shovel and planted each and every one of them myself. The following spring the beautiful flower rings around my trees were joined by others out and about in the yard. I had planted them as my mother advised, randomly, with no set pattern so they just popped up in the yard like little surprise blooms of sunshine. They were absolutely breathtaking and I dearly love those few weeks of looking out my window and seeing the happy little flowers waving back at me in the breeze.
A few months back I was in Lowe’s and walked by a bag of 100 more bulbs. They hopped in my buggy and came home with me where Katy Rose and I went about planting them, wherever she felt we needed them to be.
My goal is to eventually have an entire yard filled with daffodils for a few weeks out of each year. They’ll slowly spread from the road right up to my front doorstep . After a few decades of this, and with my kids moving out and more cats coming to live with me (isn’t that the natural evolution of things?) no doubt people will start to talk. I’ll begin wearing a hat with a giant silk daffodil in it and trade in my preferred red shoes for daffodil yellow ones to match. Folks will start calling me the Crazy Daffodil Lady as I walk around town in my finest daffodil yellow regalia. But hey, I can think of worst things to be called. By then I’ll have so many that I can make large bouquets and deliver them to nursing homes and other spots around town that need brightening and then come back home to a yard still filled to the brim. We all gotta have dreams.
If you’ll excuse me, I found some daffodil bulbs at Wal Mart yesterday and I think I’ll plant a few before the sun goes down. I know that technically this isn’t the time of year to plant daffodils but I like to live life outside the lines. Heck, I even wear my watch on my right hand, even though I’m right handed and my engagement ring is on my finger first, THEN my wedding band (I’ve gotten more emails on this than I can count).
You see, at the end of the day, I’m just a rebel to the core. Oh yeah, I even eat raw cake batter. I do shocking things like that…and I plant daffodil bulbs in December.
And THAT, my friends, is why I’m gonna make a great Crazy Daffodil Lady someday! I hope I can count on your vote
While I am still pretending to be partially sane, let me bring you a casserole today. There are so many variations on this casserole that you could throw a rock at the internet and hit fifty on any given day. This is mine, it’s pretty easy and awfully good. Modify it, play with it, make it your own. Just let me know what time it is served and try to have plenty of tea when I show up, please Or Diet Dr Pepper…Diet Dr pepper is always good, too!
You’ll need: Long Grain and Wild Rice (with seasoning, such as Uncle Ben’s), Cream of Mushroom Soup (can use fat free), French Style Green Beans, Chicken, almonds, and Ritz crackers and a wee bit of butter to pour over the top, which isn’t pictured.
If you don’t like Cream of mushroom soup, just use Cream of chicken, cream of celery, or cream of whatever-cranks-your-tractor. You can also use fat free or low fat or i-don’t-wanna-get-fat, if you can find it . For those of us already there, just go with the recipe because it tastes so good .
Nowadays Uncle Ben’s make quick cooking long grain and wild rice as well as the traditional featured here. Use whichever you pick up first.
The almonds are optional but I gotta tell you, I love what they do to this dish!
NOTE: You can also add a cup of sour cream to this and it will be wonderful! This is completely optional, but I love it. I’m not including it in this tutorial but I will list it as optional in the recipe below.
Cook chicken until done.
Note: Normally I wouldn’t have used chicken tenders for this because they are a little more expensive. This is a great recipe to use cooked chicken leg quarters (deboned and shredded), leftover chicken, or a whole fryer (cooked, deboned, and shredded) in, but since I did have this chicken on hand and company was a coming (did I mention I like to make this for company) that is what I used.
Dump chicken, cooked rice, green beans, cream soup, and almonds into a big old bowl.
Give it all a stir until it is good and mixed.
Spray baking dish lightly with non stick cooking spray.
Spoon casserole filling into baking dish.
Sprinkle crushed crackers all over top.
Drizzle melted butter over the cracker crumb topping.
I hope you’re having a great summer so far. I’m working more hours than ever but that just means that I am making time with my family and even bigger priority, which kind of evens it out. It’s amazing how little time we spend with those around us, even though we may be in the same house or even the same room. I’ve found that unless I make it a point, spend time with a purpose, I’m not really connecting with the kids.
I was reminded of that this morning when I was trying to take a quick shower and both kids kept coming into the bathroom to talk to me. I got a little frustrated for a moment and thought “Isn’t anything sacred?” and then that voice in my head answered “Yes, every moment of your time with them is sacred, so enjoy it now.”
It hit me in that moment how wonderful my life is that I have these two kids who want to talk to me so much that they can’t seem to go fifteen minutes without telling me about something, showing me something they drew, or giving me a hug. These are sacred moments. We may feel a little stressed by them from time to time but whenever I do I try to take a moment to step back and imagine how awful it would be were any one of my blessings taken away. That job you complain about- What if you lost it today? Your mother who calls too much – one day you’d give anything to hear her voice one last time so savor it now. The dirty dishes in the kitchen – what if you didn’t have food to feed your family?
It all puts it in perspective. So if you find yourself, in the course of your busy day riddled with interruptions, thinking “Is nothing sacred?” , just answer yourself right off “Yes, it sure is. So enjoy it.”
To give you more of that sacred time, and avoid heating up your house, here is one of my favorite summer supper recipes. It uses a microwave, which always surprises people when they taste it. I think folks expect a microwaved casserole to be tough and chewy, but you’ll find this one is cooked just right. I came upon this recipe in one of those little checkout cookbooks right after Ricky and I got married. Every recipe in that cookbook was good and wouldn’t you know, I lost it within the year ~laughs at her own disorganization~. Fortunately, I had this one memorized because I had made it so much! My husband and I love it and it also reheats well. Packed with flavor and ready to go from start to finish in under ten minutes.
Now let’s get cooking so we can get back enjoying all of those sacred moments!
You’ll need: Shredded cheddar cheese, sour cream, two flour tortillas, chopped green chilies, taco seasoning, shredded chicken, and some french fried onions.
I like to pick up a rotisserie chicken for a quick lunch on those crazy days. I can usually get one for the same price of an uncooked fryer so it’s like someone did the work for me. I just have some for lunch and save the rest for this casserole! Another great way to get chicken on the cheap is to buy leg quarters in ten pound bags. I boil all of the leg quarters in a large stock pot, shred and bag the chicken, and then use the stock for chicken noodle soup or chicken stew.
You’ll also need some fresh cilantro.
This really makes the dish for me so I splurge and spend the dollar or so that it costs. You can also grow cilantro on your own if you like.
This year I’m growing basil and parsley out in my sunroom. I figure I’ll dip my toes in the water before going for an all out herb garden.
Now lets get started. This is SUPER easy and it’s gonna go fast so stay with me here .
Chop your fresh cilantro…
Then dump all of your ingredients into a large mixing bowl
Microwave Chicken Tortilla Casserole
2 cups chicken (give or take, just use however much you have)
8 oz sour cream
2 cup shredded cheddar cheese, divided
1 cup french fried onion, divided
4 ounce chopped green chilies
1 pkg taco seasoning
3 tablespoons chopped fresh cilantro
2 -10 inch flour tortillas
Place chicken, sour cream, half of cheese, half of onions, chopped green chilies, taco seasoning, and chopped cilantro in a large mixing bowl. Stir well to combine. Tear one tortilla into small pieces and add to bowl, stirring again until well incorporated.
Line a pie plate with remaining tortilla and spoon mixture into it. Place in microwave for five minutes.* Remove and top with remaining onions and cheese. Microwave for one minute more, or until cheese is melted. Enjoy!
*Note: Microwave ovens vary widely in temperature so you may need to alter the cooking time to suit your microwave. Since the chicken is fully cooked, there isn’t a danger of undercooking this meal so you can just go with these guidelines and give or take a minute or so if you feel it needs it. This is a VERY flavorful casserole and leftovers heat up really well.
“Mama, can I go sing in the sun room?”
“Of course you can, Katy Rose” I answered her from where I was standing at the sink, not taking the time to glance over.
“Well, can you open the door for me?”
“Can’t you open the sun room door by yourself?”
“Mama, I’m trying to carry my audience!”
I looked over to find her sporting a very serious face while struggling to hold a baby doll, Mickey Mouse, and plush Tigger half her size. I melted.
What a wise girl. She gets ready to entertain and handpicks her audience to boot! As I finished working in the kitchen to the sound of her singing I couldn’t help but think there was a life lesson to be learned from my youngest.
~Pulls out her well worn soapbox and steps up as she clears her throat~
Katy's Cheering Section
We all need our own cheering section from time to time, to offer a little encouragement at the start of a new day or give us a consoling hug at the end of a particularly hectic one.
You know, its okay to want someone to cheer you on, to have someone to tell you at the end of the day that you “done good”. Its also perfectly okay to seek that out or to just come right out and say “I need a little encouragement today”.
So often we’re tempted to say things like “I hate this day, I wish it would end”, expressing our frustration and inadvertently spreading negativity (it is contagious, you know) when I really think what we are trying to do is find that one person to offer a smile or a word of praise when we need it most.
Sometimes we forget how effective it can be to just say “Ya know, I could use some encouragement if you’ve got a minute”.
Needing encouragement is normal and it is expected, but I think its easier to lose sight of that in these days of interacting with the world from behind a computer screen. We don’t think to reach out and end up depriving ourselves of the chance to have our own cheering section when we need it most.
The thing is, when you let your family and friends encourage you, it puts you in a better place to give back to them. It’s not being selfish, it’s being human – and a better human at that. Anyway, just what was on my mind today courtesy of the wisdom of a five year old who has the foresight to handpick her audience.
Set up your own cheering section today and while you’re at it, make sure you’re a part of someone else’s cheering section as well.
~steps down and stows the soapbox back in the cabinet behind the pots and pans~
Now on to our recipe. Have you ever eaten something that just made your stomach happy? Well this one makes mine about as happy as a pig in slop! It’s just so good. It’s incredibly easy, too, and perfect for folks who head off to busy days and want a good supper waiting on them when they get home. The ingredients are simple, the recipe is easy, and the results are good. I reckon that just about says it all.
You’ll need: Chicken breasts, cream of mushroom soup, an onion (I’m using a Vidalia), and a box of long grain and wild rice with seasonings.
You can use bone in or boneless chicken breasts. If you find yourself a little low on chicken, cut each breast into three strips. That way just three chicken breasts will yield nine pieces of chicken, more than enough for four people.
Remember, in the good old days folks could stretch the scrawniest chicken to feed a family of ten!
*I am using the Uncle Ben’s long grain and wild rice here and I haven’t seen a generic for it that has the seasoning packet so I stick with name brand on this one because that seasoning packet seasons this dish to perfection and makes it just taste sooooooo good!
Place your chicken breasts in the bottom of your slow cooker and sprinkle your chopped onion over them.
Oh, I forgot to tell you to chop your onion…so I’m telling you to do that now. On second thought, I’m asking nicely .
Cover that with your cream of mushroom soup
I know it is strange for me to be using name brand soup here but I have a good reason. Last year around Thanksgiving I got cream of chicken and cream of mushroom soups on sale for 50 cents a can so I bought a case of each. I have these hoarding issues when it comes to finding good deals, which have been passed down from my father, a man who once found tuna fish on sale and bought so much that we had an entire closet filled with nothing but canned tuna. This would have been a lot more helpful, of course, if we had been a family who actually ate tuna.
If you don’t have soup on hand, just go get generic. You’ll save anywhere from twenty to fifty cents a can (possibly more) and when you have a buggy full of groceries taking twenty cents off here and there can really add up fast!
Cook that on low for 7 – 8 hours.
Then, before serving make your rice according to package directions.
You can also make this rice the night before and put it in the fridge.
Before serving, stir in your rice.
Voila!
Chicken Lettuce Wraps made the easy way and the inexpensive way - at home!
Pin it
Alright so I’ll admit right off the bat that Chicken Lettuce Wraps aren’t exactly Southern, which is why I added a “y’all” on the end of this post title. That just made it look like it fit better on Southern Plate, didn’t it? ~grins~ I knew you’d agree.
I’ve developed a raving addiction to these things. You see, Ricky and I don’t get to go out much. We’ve actually been out twice without the kids in the past four or five years. What we do instead is pick a night each week and eat a very light supper, then after we send the kids to bed one of us (he usually draws the short straw here) goes to get takeout for our dinner. A Chinese restaurant is very near us and chicken lettuce wraps are one of their signature dishes. This is one of those things that didn’t sound too appealing to me at first but my mother kept insisting that I try them and once I did, I was about as hooked on that as I was the first time I tried poutine.
However, shelling out the money for them on a regular basis got old quick and last night I just up and decided that I could make these little suckers myself. Never stand in the way of a woman when she “up and decides” to do something. I looked up several recipes online and they all seemed far too complicated for what I felt should be a simple recipe so I just set out to wing it on my own.
We found the finished product to be every bit as good, a little more filling, and a WHOLE lot cheaper than the restaurant version. Even Bradybug, at ten years old, gave these a resounding thumbs up. They easily made enough for four people and the cool thing is that I had enough filling leftover to eat one now as I write this. ~grins~
You’ll need: Rice sticks*, Soy Sauce, Small can Water Chestnuts, Brown Sugar, Mushrooms, Green Onions, and a head of lettuce.
*Rice sticks aren’t nearly as hard to find these days as they used to be. I just picked these up at the grocery store in the Asian foods section. These add a lot of “coolness” to the recipe if you let your kids watch you cook them. Okay, so I think they’re pretty cool, too! I’ve even included a video later in this post to show you how they work!
You’ll also need chicken. I am using 3 boneless, skinless breasts but this is an excellent recipe to use leftover chicken on. I’d also keep it in mind for turkey leftovers as well!
Place a tablespoon of oil in a skillet and add your chicken. Cook on medium heat, stirring often, until cooked through.
While the chicken is cooking we can assemble our other ingredients. Chop mushrooms up really fine.
Add water chestnuts and continue chopping.
Until it looks like this
Chop and add green onions.
To our brown sugar, add about 3 Tablespoons of soy sauce and stir that up well.
Once your chicken is cooked, dice it up well.
Place all of that back in the skillet.
ADD SAUCE
Stir and cook over medium heat just until heated through.
I didn’t picture me adding the sauce because that picture needed editing a bit and my computer and I are not getting along very well right now. In fact, I am seriously considering asking Santa to leave coal in it’s stocking.
~purses her lips and narrows her eyes at her computer~
This is the cool part.
Place about an inch or two of oil into a small pot. Heat on medium heat for several minutes before using.
Break off some rice noodles, make sure they are small enough that they will fit entirely in your pot. You don’t want any part not going in the first batch because it won’t cook.
As soon as you put them in they will bubble and then PUFF up like this.
This is SO cool in my mind that I even did a video of it to show you.
This post is just filled with neat tricks! See this head of lettuce with the stem in the middle?
Turn that over and get a good hold of it and hit it on the counter really hard, right on that stem.
and it will just pop right out!
like this.
Place chicken mixture on lettuce leaves and sprinkle crispy rice noodles on the top.
Fold that up and eat it like a taco.
MY GOODNESS THESE ARE GOOD!
This recipe made enough chicken lettuce wraps for four people.
There used to be a little restaurant in Decatur, Alabama called The Iron Gate. My mother dearly loved that place. I remember her taking us to meet her sister there, who’d have my baby cousin with her (That baby is now a DJ in Little Rock, Arkansas – who let him grow up?!). We’d play in the lobby where they had all of these large leaf plants and Mama an her sister would wait for them to open so they could go inside and have Mama’s favorite dish – which she calls Chicken Poulet. The funny thing is, Poulet means “Chicken” in french so really, this dish is called Chicken Chicken.
Since it was a restaurant that catered primarily to adults, their menu didn’t have much that appealed to children so they allowed parents to bring in fast food for them to eat. Silly me, I thought I was lucky at the time as I sat there with my paper wrapped hamburger and Mama dined on Poulet and homemade rolls!
Nowadays, I don’t actually consider fast food edible by most counts – its just something you eat to keep from starving when you have no other choice. But this Poulet is actually pretty fast when it boils down to it because you assemble it the night before and stick it in your fridge. Come home from work or a day of running the errand rat race and just top it with your cream soup, pop it in the oven, and supper is on it’s way!
Now we’re talkin!
You’re gonna need: Chicken, cheese, mayo, green onions, eggs (You’ll need four so ignore the two in the pic), stick margarine, 1pkg peppridge farm stuffing, milk, cream of chicken soup, little bit of salt, and a can of chicken broth.
The chicken broth isn’t pictured. I tried to get him to hop on the table but he was camera shy .
Place your water and margarine in a cup and melt in the microwave until the margarine is completely liquefied.
Look at our pretty bowl we’re gonna use today! Isn’t it nice and sunshiney?
Okay, I’ll get back in the kitchen now…just had to show ya what had me grinning!
Place stuffing mix in a large bowl. Add water and melted margarine.
Stir
Add chicken broth
In a separate bowl, place shredded chicken, mayo, and onions.
I just boiled a couple of chicken breasts for this but you can use leg quarters, a whole fryer, even canned chicken! Just cook it until done and remove and shred meat to use in this.
Thank you, Rhoda! ~Christy
Doesn’t that name sound fancy? Chicken divan…
If you’re from the South, you grew up with your share of casseroles. Made with cream of chicken or cream of mushroom soup, is there any other kind of casserole? You see the 1984 church cookbook above that came out of my Pastor dad’s church at the time. The Women’s Ministry ladies decided they needed to do a cookbook for a couple of years and I’m so glad I snagged them. It is full of well-loved Southern recipes, good ole’ down home cooking and many of them have the above-mentioned creamy soup as a main ingredient. I’m quite sure there are probably some major differences between a church cookbook in the North and the South.
I’m just sayin’.
So, are you ready for this Chicken Divan? I have no idea where the name came from, if anyone knows, please let me know. I can see this on a Southern restaurant menu where little ladies go to lunch and chat up a storm. Have any of my Yankee friends (sorry, we just still call ya’ll that, old habits die hard you know!) heard of this recipe?
This recipe was contributed by my sister, Renee. I’ve made it quite a bit over the years. Main ingredient, chicken of course.
And cream of chicken soup mixed with mayo.
My hubby is not a casserole lover, but he does like this one a lot.
Broccoli layer goes first.
Shredded chicken on top of that
Creamy mixture next
Sprinkled with shredded cheddar cheese and bread crumbs mixed with butter.
I serve mine with brown rice cooked in chicken broth.
And it’s a cheesy, yummy meal.
Your kids would probably like it too. Comfort food at its best.
Here’s the official recipe:
As I write this post a migraine and a Lortab are waging a mighty war against each other in my head. It has been a three day war, but I am happy to report that for the time being, Lortab appears victorious. As I wait on further reinforcements to conquer the retreating troops, let us do a quick and easy recipe utilizing some of the modern conveniences our granny’s would have loved to of had back in their day.
You will need: Chicken (I use boneless chicken breasts, you can use strips or whatever you like), milk, and some good old $1 a box chicken seasoning and coating mix.
Yes my dears, not only do I use Shake and Bake, I use generic shake and bake – and I proudly proclaim to all that can hear that “It is good!”.
Of course Southerners are known for their fried chicken, typically made from scratch with a well seasoned coating of flour and spices. I can do that, sure I can do that. But do I want to all the time? Heck no, and neither would my great granny if she were still here. Its little modern conveniences like this coating that my ancestors would have marveled at. We are nothing if not a practical culture.
Now you can make a seasoning coating from scratch, too but like I said, this box costs around a dollar.
For a great homemade coating recipe check out TipNut.com’s posting here.
I don’t fry very often but don’t y’all start a worrying that I’m gonna go over to the “other side”. It’s not because of health reasons at all. I just don’t like the mess. That’s why I love this oven fry chicken. Its not messy, can be put together quickly, and If i want, I can adapt it to make strips for the “big people” and nuggets for the “little people”.
And today, it’s also migraine friendly. If cooking anything can be migraine friendly.
This is an example of how I cut up my chicken breasts. I am using a boneless skinless chicken breast here and as you can see I get six large nuggets out of it. You can use a knife to do this of course but i have a nice pair of dishwasher safe kitchen shears that make cutting up meat a breeze so I just scissor cut right through this.
This is three chicken breasts cut up. I am only using three for a family of four because cooking chicken this way actually causes it to “plump up” and be more filling. You won’t need as much as you normally would.
Spray a baking sheet with nonstick cooking spray.
Pour your coating into the plastic bag that comes in the box. Now the box comes with two bags of coating and two plastic bags. I gotta tell ya that I use both of them at once each time I make this. Technically you are only supposed to need one but we don’t fret over technicalities when we want a nice thick coating on our chicken.
Pour a little milk in your bowl and place your chicken pieces in it.
Some recipes call for using egg, some just water, some milk. Milk works for me.
You just do whatever cranks your tractor.
Put a few pieces of chicken in your bag and give it a good shake.
I just do about half of my chicken in this bag and then I pour the rest of my coating in and finish with the other half.
Place on your baking sheet and bake at 350 for about 20 minutes for nuggets, thirty or more for whole chicken breasts. Whenever I cook chicken breasts, I always cut one open in the center to see if it is done rather than go by any set time frame.
Some of these boxes of coating will tell you that whole boneless skinless breasts will be done in fifteen minutes.
I hope to find those people someday and sell them some prime swampland.
And that, my dear friends, is my little non-gourmet, super cheap secret to quickie chicken nuggets that the kidders and the big people all enjoy.
Ain’t no shame in my game!
Okay, ya’ll, listen to me here, YOU ARE GOING TO LOVE THESE!! Seriously, you are going to absolutely love, love, LOVE these! So you need to make them, alright? Trust me.
This is a widespread copycat version of Cracker Barrel’s grilled chicken tenderloins and they are absolutely amazing, I think they are much better than Cracker Barrels, actually!
I’m not sure where I got the recipe because it is all over the internet, but I got it five or seven years ago and have been making it on a very regular basis ever since with rave reviews each time.
Did I mention that I really think y’all are going to love this? Oh, and I have a truly embarrassing Halloween story at the bottom, what more could you want? ~grins~
You’ll need: Lime juice, Zesty Italian Dressing, honey, and some chicken.
You can purchase chicken tenders or just do like I do and buy boneless skinless breasts and cut them yourself (its cheaper!). The original recipe called just for Italian dressing, but I LOVE this with Zesty Italian!
Oh, and in a pinch you can use lemon juice if you like. I know I usually have lemon juice on hand but not lime. I happened to have this because I made Bananaritas the other morning. For any new readers, Bananaritas are not alcoholic and they are sooooooooo good for breakfast!
Pour in your Salad Dressing.
The original recipe said to strain and discard the spices but i really like them in here and I have never once actually noticed them on the finished chicken. They either cook up or magically disappear. Either way, why add another step if we don’t have to?
I like to mix this up in a mason jar because it is so dern easy that way. You can just stir it up in a small bowl if you like though.
Add your honey..
Add Lime juice.
For some reason I am wanting to speak with a German accent as I do this tutorial tonight. I think I need sleep and lack thereof is making me silly. So in my mind, I am doing this entire tutorial in a German accent. Folks, I’ve gone off my rocker after the day I had today! (By the way, my German accent is learned entirely from one of those Disney Characters that looked like Donald Duck but was actually a distant relative…)
Don’t you just love German chocolate, though? Ritter bars are my favorite….
Screw Ze Lid On Ze Jar!
(give it a good shake)
If you’ve got chicken breasts, cut them into strips.
I used my kitchen shears, by far the greatest utensil known to mankind. This is what I call a “fish and loaves” recipe because the chicken tends to plump up and be extra filling, therefore feeding a much larger amount than it normally would have. I used four chicken breasts and we easily have enough left for another meal (or some great lunches!).
e=”clear:both;text-align:center;”>
Voila! Ze Chicken!
Now what I do is put all of my chicken in a big gallon ziplock bag and just pour the marinade in there with it. Then you seal it and stick it in your fridge for at least an hour.
You can do this the night before if you like and just keep it in your fridge until you’re ready for supper. Another thing I have done before is mix this up and get it to this stage and just freeze the whole bag. Then on a morning you are headed off to work just pop the bag in the fridge to thaw out during the day.
After at least an hour, dump the entire contents of the bag into a large skillet.
You are going to be thinking “Wow, this is awful watery, there is no way it is going to look like hers” but oh yes it will!! Hang in there with me, this just takes a little patience (actually it takes about forty minutes or so).
This is how it will look after ten minutes over medium heat. Just hang in there and let it cook.
I keep my stove eye dial on five. Good thing is, you don’t have to fret over this, just go check on it about every ten minutes and turn it and you’ll be fine!
This is after about twenty minutes.
About thirty…now we’re starting to get somewhere!
And around forty minutes the good stuff starts showing up!!
Its getting really thick on the bottom now and this is where I start moving my chicken around a lot, getting it all nice and browned.
In another minute or two that watery stuff will all be caramelized and wonderful….
Like this. It looks black in the pic but its really not. That dark stuff is the carmelized marinade. At this point, I take every piece of chicken and one by one rub it around in that marinade before taking it out of the pan and putting it on my platter.
Like this!!
(It tastes even better than it looks!)
This has so much wonderful flavor that I like to serve it with a simple side dish. Tonight we had it with stewed potatoes that I had just put a little butter and salt on. YUM!
*I put off doing the newsletter until this weekend after my little mishap with emails and google yesterday. I figured all of you wonderfully kind people deserved another recipe today!Thank you all so very much for your understanding. I’ve gotten a multitude of emails that are so very kind and reassuring and I cannot tell you how much better today is as a result of that! You are so wonderful. Someday, SOMEDAY, I AM going to figure out how to cook a big old meal for you all, just wait! OOoh, how about an embarrassing Halloween story? Yup, thats just what we need! Here goes…
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Let me tell y’all what I did one Halloween, and this is really pretty embarrassing and out of character for me but hey, its just us I’m talking to, right?

If you’ve read the coconut pie post, you know all about Mama’s accident. She was completely bedridden for several weeks and her spirits were understandably very down. I had never seen Mama anything but upbeat and I took every opportunity to try to cheer her up as best I could.

Then she called me on her cell phone one day and said “Guess what I’m doing?” Mama sounded happy and I instantly perked up. She was all excited because she was actually out, riding in a car, for the first time in weeks. It had been quite an ordeal to get her in the car with both legs in casts but she was sitting in the back seat with her legs up on the seat and looking out the window, and called me to tell me about it. I was thrilled.

“Where are you now?” I asked, all excited.

“We’re in Athens, almost close to your neighborhood”

so I replied “Well come on by and we’ll come out and see you and do the happy dance!”

This really was a big day for us and I was so happy for her, couldn’t wait to see her.

Then I got to thinking, what else could I do to get her to smile, maybe even make her laugh, and help her remember this day?

It came to me….I was about eight months pregnant and it was almost Halloween….

Now y’all, I am NOT someone who likes in any way, shape, or form, to have my stomach touched, caressed, cuddled, or otherwise noticed any more than it has to be whilst I am with child. I tend to be an EXTREMELY modest person as well. So I thought of it, the one thing that would shock my mother (the person who knows me better than anyone) and get a good laugh at the same time.

I hurried into the kitchen and grabbed the first thing I could find to write with and then darted off to the bathroom. When Mama pulled up in the driveway, I went out, walked up to her window with a huge grin and pulled up my shirt just enough to reveal a very pregnant belly with the face of a jack o lantern drawn on it!! (You know, this really is embarrassing to tell…I bet Mama will be surprised I admitted to it and it will make her laugh again today!).

Mama’s eyes got so big and she looked at me and said “Don’t you have a Doctor’s appointment tomorrow?”.
Then we both burst out laughing after I said “OH my God, I do…and I USED A SHARPIE!!”.

I found out just how permanent sharpies were as it took quite a bit for that to wear off, but my midwife had a good sense of humor and she had been well aware of Mama’s ordeal and how much it meant to me to get one more laugh out of her on that day!

>

And that was a REALLY great day!

Two days ago, I received a call that one of my Auntlings had requested my chicken soup. This particular one, my nephew Austin, joins in with all the others in being devotees to this particular chicken noodle soup. Honestly, I didn’t think it was that special when I came up with it. I just wanted to make a simple chicken soup that my kids would like. Thus no visible onions or bits of celery because we hide those in the broth!

I hit on something though, because every time I mention making it I get an enthusiastic “YES!” from my son and that raised eyebrow grin from my husband. Even Katy, who is currently vying for the record of worlds pickiest eater, loves this soup. I try to always make plenty because it seems the family lines up at my door with soup bowls in hand so I just send it around to all of the houses! Its really very simple by design because y’all know how I like to keep things good and easy!

Here we go: Carrots, celery, onion……..poultry seasoning, noodles…………and a fryer.

I like to get the whole carrots and whole celery stalks if I can because they just taste better in my broth! For the noodles, I get this particular brand that I find in the Mexican food section at Wal Mart. They are teeny tiny shapes and I usually get the alphabet ones because the kids really like those. An entire bag of these is just 25 cents! The great thing about them, too, is that they don’t get all mooshy in your soup. they just kind of get cooked and then stay wonderful.

Now, cut all of the tops and ends off of your carrots and SAVE THEM, we’re going to use them to make our broth. Then take one carrot and cut it into sections to add to the tops.

Cut up your celery just a bit, this is going in the broth as well.

My celery was actually partially frozen and about ready to be thrown out due to that, perfect for recycling into soup!

Quarter your onion. There is just no need to put a lot of attention into these because they are only for the broth.

Toss your carrot tops and ends, celery, and onion into a large pot with your chicken.

Cover with water and bring to a boil. Once its brough to a boil, lower the heat a bit and cook until it cries “uncle!”. Seriously, cook this for SEVERAL hours. This is going to make a good, rich broth. I cooked mine for four hours.

See? That chicken and those veggies have given up the ghost!

Now take that chicken out and set it aside. I just put mine in a 9×13 pan and let it cool a bit so I can get the chicken off and shred it to add back.

Discard all vegetables and reserve the broth.

Peel and chop up carrots and add to broth. Cook until tender, but not mooshy.

Add two tablespoons of poultry seasoning.
Add salt and pepper to taste, I usually add about two teaspoons of salt and skip the pepper altogether for this.

Stir.

Shred chicken and add to broth.

Add pasta. Cook until pasta is tender.
