<p>Don&#8217;t forget, National Collection Week for Operation Christmas Child Shoeboxes ix November 12-19, 2012! This is a short video I made showing how I packed my shoeboxes this year, followed by a photograph of my shoebox contents. It&#8217;s so easy to pack a shoebox! <p><strong>1. Personal Hygiene Items</strong> &#8211; I&#8217;ve included a toothbrush and toothpaste that I got for $1 for the set at Dollar Tree. Hotel soaps from my friends who travel, a washcloth that came in a package of 18, and a brush and comb (also from Dollar Tree).</p>
<p><strong>2. School Supplies</strong> &#8211; I&#8217;ve included a set of colored pencils (Dollar Tree), two #2 Pencils, a pencil sharpener, a small notebook (came in a package of three for $2.00), and a small ruler (free from our state tourism board).</p>
<p><strong>3. Fun gifts just for the child:</strong> Scarf (Mama made these from fleece yardage she got on sale, no sewing needed), Polly Pocket doll in car (Clearance this past summer for $2.00), tiny teddy bear (Clearance for fifty cents), hard candy (Double bagged in quart sized freezer bags, even these bags are useful so I always tuck a few more down into the bottom), two plastic cups and a spoon.</p>
<p><strong>4. Plastic Shoebox</strong> &#8211; please note that this is NOT necessary, it is just an added bonus. A cardboard shoebox will do just fine. However, if you can afford to get a plastic one (I got mine at Dollar General for $1 each), the kids really do enjoy them. Plastic shoeboxes can be used to carry water, hold food, or as a special keepsake box for children&#8217;s personal treasures. Marlene brought up a genuine concern in the comments about shoeboxes cracking. I&#8217;m sure this does happen from time to time but we gave out over 1000 on our trip to Ecuador and I never personally saw a cracked one. So fortunately, this is rare.</p>
<p>This is all it takes to pack a full shoebox but these items are just what I chose. The options for your shoebox are limitless. No matter how you pack it, be sure to add in a photograph of your family and a personal note to the child!</p>
<blockquote><p>I&#8217;m often asked <strong>&#8220;Why doesn&#8217;t OCC give shoeboxes to children in our country?&#8221;</strong> The answer is that they absolutely do! Operation Christmas Child doesn&#8217;t put qualifiers on helping children and we shouldn&#8217;t either. If you feel called to help a child and you are able, never put a qualifier on it: <em>They don&#8217;t live in my country, they don&#8217;t talk like I do, they don&#8217;t look like I do, they aren&#8217;t educated like I am, they don&#8217;t have the same faith I do, etc.</em> You know what? Jesus didn&#8217;t talk like we do, look like we do, live in the same country we do. He didn&#8217;t look like us and he wasn&#8217;t educated like we are &#8211; and He could have said the same thing of us but He chose to give freely instead. If you can help a child and feel led to, don&#8217;t put qualifiers on it, just do it.</p></blockquote>

<p>When we were little, Mama made these wonderful candied apples for us from time to time, it didn&#8217;t even have to be fall! She always made extra for our friends, too. She made pretty much everything and we thought she was the best thing since sliced bread, which was about the only thing she didn&#8217;t make (although she did make a mean biscuit and got into bread making later on in our lives), and our friends thought so too because they flocked to our house in droves.</p>
<p>That was the kind of house Mama wanted, one where her kids and their friends felt comfortable and welcome. There are many benefits to this but the primary one is that &#8211; <em><strong>she knew where her children were and that they were safe.</strong></em></p>
<p>I can&#8217;t think of one thing that my mother cooked growing up that didn&#8217;t taste good. She made homemade cookies twice a week, a full breakfast every morning, a hot lunch every day, and a full supper every night. She&#8217;d been cooking like that since she was thirteen years old and she was every bit as skilled as my great grandmother at stretching a meal and pinching a penny til it sang the national anthem. She was a couponing pioneer and back then used to do &#8220;refunding&#8221; too as a means of getting Christmas gifts for us and little checks for a few dollars here and there to help out with the groceries.</p>
<p>Our most beloved Christmas presents came from sending in collected proofs of purchases from this product or that. One year Santa brought me a beautiful doll who came with a bathtub and her own miniature bar of ivory soap! Another year we got a talking calculator to share, and my brother spent two entire summers wearing &#8220;Tuff Stuff&#8221; t-shirts that featured a bulldog advertising insulation (My dad worked on houses as a spare job). He&#8217;d liked them so much that Mama just kept collecting proofs of purchase and sending them in to add more to his closet.</p>
<p>I have no idea how I got off on that tangent&#8230;</p>
<p>Oh yeah, my Mama made Candy Apples for us when we were little. These are really very simple to make and don&#8217;t require any fancy ingredients but so few people seem to make them nowadays, I guess because they are sold in grocery stores and such ready made. Those still don&#8217;t hold a candle to these though. Have you wowed your family and friends lately? These Candy Apples will do just that!</p>

<p><strong>You&#8217;ll need: 8 apples, sugar, light corn syrup, red hots (or cinnamon candy like red hots), red food coloring, a candy thermometer, and wooden sticks of some sort.</strong></p>
<p style="text-align: center;">I know some folks balk at light corn syrup but I&#8217;m cool with it.</p>

<p style="text-align: center;"><strong>Place over medium high heat and cook, without stirring, until it reaches 290 degrees.</strong></p>
<p style="text-align: center;"><strong>This is gonna take a while, probably anywhere from 20-25 minutes or so, depending on how hot your eye is.</strong></p>
<p style="text-align: center;"><em>Okay so maybe I stir a time or two but Mama&#8217;s recipe says not to so you don&#8217;t have to but the world won&#8217;t end if you do. </em></p>
<p style="text-align: left;">An &#8220;eye&#8221; is what we call the heating elements on top of our stove. I didn&#8217;t realize that anyone called them anything different until I started writing Southern Plate and someone asked me what it was. I had to ask Mama if she knew what other people might call them and she didn&#8217;t either. I kept asking around and finally discovered that &#8220;Stove Eyes&#8221; translated out of it&#8217;s original Southern means &#8220;burners&#8221;, which seems kind of violent to me. ~grins~</p>

<p style="text-align: center;"><strong>While that is cooking, remove the stems from your apples but holding the stem in one hand and the apple in the other and twisting.</strong></p>
<p>An old wives tale says that every time you twist the apple stem once, you say a letter of the alphabet and whichever one you land on when the stem comes off is the first letter in your future spouse&#8217;s name. I doubt many folks get beyond E or F with that though <img src='http://www.southernplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  I don&#8217;t have to worry about that with Katy Rose because she says that when she gets old enough to get married she wants ME to pick out your husband! She asked me if I&#8217;d do that and I immediately responded <em>&#8220;I sure will, baby!&#8221;.</em></p>

<p style="text-align: center;"><strong>Now stick your sticks in each apple.</strong></p>
<p>If you have a hard time finding Popsicle sticks, just go to the kid&#8217;s craft section and they have all sorts of wooden craft sticks that work very well. You can also use wooden skewers from the grilling section.</p>
<p>I&#8217;ve even used forks from my kitchen drawer before <img src='http://www.southernplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  They work great and when you&#8217;re done just stick &#8216;em in the dishwasher. <em>Either way you go, there isn&#8217;t a need to go buy anything special or go on a wild goose chase because there is surely something on hand that will work just fine.</em></p>

<p>I&#8217;m hoping you can actually read your candy thermometer. I&#8217;ve never really been able to so I kinda go on gut and hope  - and continually vow to get one of those digital candy thermometers I can actually read.</p>

<p style="text-align: center;"><strong>Now that our candy coating is done remove it from the heat and place it on a hot pad because it is H O T. </strong></p>
<p style="text-align: center;">This is like one of those &#8220;Coffee-is-hot McDonald&#8217;s warnings&#8221;. While I&#8217;m at it, might as well go full on public service message and add that irons are hot, needles are sharp, cyanide pills aren&#8217;t for snacking on, and rattlesnakes don&#8217;t make good pets for cuddling.</p>
<p style="text-align: center;"><em>Whew. I feel like I just saved some lives here.</em></p>
<p style="text-align: center;"><strong>Quickly dip an apple in it and swirl it around a bit until it is evenly coated.</strong></p>

			</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">3 Cups Sugar</li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 Cup Water</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">1/2 Cup Light Corn Syrup</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1/4 Cup Cinnamon Red Hot Candies</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/4 teaspoon red food coloring (I just give it a good splash)</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">8 wooden ice cream sticks </li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">8 small apples</li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">In heavy saucepan combine the sugar, corn syrup, candies, red food coloring, and 1 cup of water. </li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">Place over medium heat and bring to a boil without stirring. </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Set a candy thermometer on the side of the pot, making sure the tip doesn't touch the bottom and continue cooking, without stirring, until the temperature reaches 290 F, about twenty minutes. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Meanwhile, grease a cookie sheet. Remove stems from apples and insert a popsicle stick partway through each apple. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">When candy is ready, remove pan from heat and remove thermometer. Swirl each apple into candy syrup until it is coated and then hold over the pot for a few seconds to allow any drips to fall off. </li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Place candied apples on a cookie sheet to cool. If the syrup begins to stiffen while you're still dipping apples you can place the pan over very low heat while you finish. </li><li id="zlrecipe-instruction-6" class="instruction" itemprop="recipeInstructions">Let apples cool at least an hour before eating. <p>Every summer, I make Rainbow Jello Jars for the kids. It is kind of our fun way to kick off the beginning of the season. I usually make a dozen <em>(because that is what canning jars come in)</em> and the kids ration those puppies out like they&#8217;re gold! A few are given to treasured friends (they divvy them out like gold doubloons) and the others get eaten over the course of a week or so, each relished with great flair as they get to actually eat a rainbow!</p>
<p>A year or two ago <em>(time has entered warp speed for me so I have no idea which)</em> I posted a pic of our rainbow jars on <a href="http://www.facebook.com/southenrplatefamily" target="_blank">Facebook</a> and got a LOT of comments from folks asking me how I did them so I thought I&#8217;d share a little tutorial with you on jars that would be fun to have for your July 4th celebrations, but first, here is the original pic that got so many comments:</p>

<p style="text-align: center;"><strong>I&#8217;ll tell you how to do these at the bottom of this post. </strong></p>
<p style="text-align: center;">Whichever ones you do, it makes you look cool in the eyes of your kids and is fun to do together &#8211; or even by yourself!</p>

<p style="text-align: center;"><strong>For the patriotic Jello Jars you&#8217;ll need: six 8 ounce jars, blue jello, red jello, and instant white chocolate pudding.</strong></p>
<p style="text-align: center;"><strong> If you have generic jello use that, name brand is not the important thing here.</strong></p>
<p style="text-align: center;">You&#8217;re also going to need a little blue food coloring if you want your blue to be a true patriotic blue like mine is because the box just makes more of a sky blue.</p>

<p style="text-align: center;"><strong>To mix up your jello, get a cup of water really hot either by boiling it or heating it in the microwave.</strong></p>
<p><em>I&#8217;m a rebel. I use the microwave. I&#8217;m sure there are studies that show using/standing next to/owning/or thinking about a microwave will cause genetic mutations and the like but I see this as an added bonus as it gets me one step closer to growing that third arm I&#8217;ve been needing for so long!</em></p>
<p style="text-align: center;"><strong>To the super hot water (a.k.a. boiling) stir in your jello until completely dissolved. If you want yours <em>blue blue blue</em> like mine, Add a few drops of blue food coloring because the stuff in the box turns out more sky blue than American blue.</strong></p>
<p>Now, we want our gelatin to set rather quickly so we can move on with things. The speed set method on the box says to mix up ice and ice water until you have a cup, then add that.</p>
<p>The Christy speed set method says just to mix up your jello in a tempered 2 or 4 cup glass measuring cup, then <strong>add some ice cubes to the mixture until it reaches the two cup mark on your measuring cup. Stir that up until the ice cubes melt and you&#8217;re good.</strong></p>

<p style="text-align: center;"><strong>Divide it evenly among your six jars. You&#8217;ll end up adding 1/3 of a cup into each jar if you want to be precise but I just prefer eyeballing it.</strong></p>
<p style="text-align: center;">Precision is for mathematicians and economists&#8230;wait..I think we should just stick with mathematicians on that one these days.</p>

<p style="text-align: center;"><strong>Put your tops on the jars and place in the fridge until set, about half an hour.</strong></p>

<p style="text-align: center;"><strong>Once that is set up a little, mix up your white chocolate pudding. I just use a quart jar to mix mine in.</strong></p>
<p>Do you remember in the eighties when Bill Cosby was a spokesperson for Jello? <em>He rocked that, love me some Bill Cosby</em>. Anyway, they sold this special &#8220;Jello Pudding Shaker&#8221; that was basically a quart sized cup with a lid on it to shake your jello in. We got one and tried it, and went right back to our original pudding shaker, pictured above <img src='http://www.southernplate.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I love canning jars because:</p>
<ul>
<li>They&#8217;re reusable</li>
<li>They&#8217;re <strong><em>dishwasher safe</em></strong></li>
<li>If you have new lids, you are able to can in them over and over again should the need ever arise.</li>
<li>They can withstand hot temperatures but you can also freeze things in them.</li>
<li>They are a great way to store grains such as rice or even dried beans for long term use.</li>
<li>In a pinch (or if you just get the inclination) they can double as drinking glasses</li>
<li>They make excellent additions to your emergency preparedness stash.</li>
</ul>

<p style="text-align: center;"><strong>Pour your pudding powder in the jar with the milk and shake that puppy like it&#8217;s a polaroid picture!</strong></p>
<p style="text-align: center;"><em>If you have no idea what I&#8217;m talking about, shake it really hard for a minute, then blow on it and watch to see if you looked good in it. Oh wait, I was talking about pudding&#8230;ok just shake it.</em></p>
<p style="text-align: center;"><strong>But don&#8217;t shake it too much because we want it mixed but still soft.</strong></p>

<p style="text-align: center;"><strong>Now add a little layer to each of your jars, </strong><em>but don&#8217;t add quite as much as you did the blue because you&#8217;re gonna wanna eat some of it.</em></p>
<p style="text-align: center;"><em>I&#8217;m serious, this white chocolate pudding is the bum diggity.</em></p>

<p>I <em>always*</em> save the boxes my canning jars come in because they make storing them so easy.</p>
<p style="text-align: center;"><strong>The original boxes are great to use when shuttling rainbow jello jars back and forth to the fridge. I just put the entire tray in there for half an hour.</strong></p>
<p><em>*I say always loosely because I always save them but my husband sometimes throws them away. When he is throwing things away though, it usually means he&#8217;s cleaning so we let it slide. Life is sometimes about letting things go &#8211; especially if it means someone else is cleaning up a mess you most likely made. ~smiles and batts her lashes~</em></p>

<p style="text-align: center;"><strong>You can pour all other layers but the layer on top of your pudding needs to be spooned on to avoid disturbing the pudding.</strong></p>

Divide gelatin evenly among the six jars (about 1/3 of a cup in each jar). <p style="text-align: left;">I&#8217;m thrilled to bring you this delicious cherry pie today. I just love cold fruit pies and this one is a new spin on my <a href="http://www.southernplate.com/2009/04/fresh-strawberry-pie.html" target="_blank">Fresh Strawberry Pie</a> for the cherry lovers among us! Since it uses canned cherries, this is one of those pies you can keep all of the ingredients on hand for and make whenever the mood strikes you.</p>
<p style="text-align: left;">I had the best time this past weekend at the National Cornbread Festival. I was one of the judges in the big cook off so I got to taste each dish that was entered- and they sure were good! I was honored to be able to serve as judge alongside all of the other amazing folks who were judging and I was so glad there were as many of us as there were because judging was very difficult! One of the juges said <em>&#8220;Next year can you try to get at least one recipe that isn&#8217;t so good to make this easier for us?&#8221;</em></p>

<p style="text-align: left;">I also had a great time getting to meet many of you beforehand. One little boy in particular stood out. I was talking to his Mama about my book and he was standing between us making short work of a sucker I&#8217;d given him. He was about three or four years old and as his mama and I were talking he took that sucker out and looked up at me with a serious tone as he said <em>&#8220;You&#8217;re funny.&#8221;</em></p>
<p style="text-align: left;">I knelt down to talk to him with a smile as I responded <em>&#8220;I am?&#8221;</em></p>
<p style="text-align: left;">He nodded and took the sucker out again to reply <em>&#8220;Yeah. I seen them story videos of yours. You&#8217;re always funny.&#8221;</em></p>
<p style="text-align: left;">I grinned back and asked him which one was his favorite and he looked at me like I was crazy for expecting him to pick just one as he said <em>&#8220;All of them.&#8221;</em></p>
<p style="text-align: left;">He was so sweet! I had a LOT of kids come up to me telling me that they&#8217;ve watched my story time videos and I can&#8217;t tell you how tickled that made me. I just love doing those and I really do them for my own fun and for my favorite folks &#8211; <em>because I just love kids</em>.</p>

<p>You&#8217;ll also need a regular sized pie crust (not deep dish) but I&#8217;m using my mix in the pan pie crust so you can use that as well if you like. I have a link to my pie crust recipe in the ingredients list at the bottom of this post.</p>

<p style="text-align: center;"><strong>This will take about ten minutes or so. It won&#8217;t become totally clear unless you are really, really patient. </strong></p>

<p style="text-align: center;"><strong>Basically, you want to cook it long enough for everything to dissolve together and form a gel of sorts. </strong></p>
<p style="text-align: center;"><strong>Then set that aside and let it cool for a bit, about half an hour.</strong></p>
<p style="text-align: center;"><strong>Once cooled, drain cherries well and place them in your baked pie crust.</strong></p>

<p>My daughter&#8217;s librarian is brilliant. Katy Rose is in first grade, a HUGE grade for developing a love of reading. While most schools try to entice kids with points for reading a certain list of books that have been deemed worthy of the points system (which I know works well for some), my Daughter&#8217;s librarian has truly lit a fire in them all to not only read books, but to write them as well!</p>
<p>At their school, anytime a child writes a book and gives it to the librarian, she makes a barcode sticker to put on it, enters it into the computer, and puts it in a special section where all of the students are allowed to check it out. <em>This has gotten them so excited</em>. Katy Rose has written three books so far and every time another classmate writes a book all of the kids scramble to check it out. I&#8217;ve never seen her so excited. <em>&#8220;Mama you have GOT to read Lindsay&#8217;s book! I was the first to get it, it is so funny!&#8221;</em> Or <em>&#8220;Guess whose book I have today? I read it during lunch because I couldn&#8217;t wait!&#8221;</em> Then I hear<em> &#8220;Mama, guess who checked out my book today?&#8221;</em></p>
<p>After writing her last book, I told Katy rose &#8220;See? You might be an author someday!&#8221; She said <em>&#8220;Mama, I already AM an author, and all of my friends are, too!&#8221;</em> I have never seen kids so inspired, having so much fun reading. The books truly are wonderful and I have found myself just as excited as Katy is to see what they write next.</p>
<p>The other day, Katy Rose brought home a book that her friend Hannah, had written back in kindergarten. She couldn&#8217;t control her giggles as se pulled it out of her backpack and said &#8220;Oh Mama, just wait til you read this. It is the funniest book <em>ever.&#8221;</em></p>
<p>So I opened it to read. It was a story about a fat cat and a fat dog, who both had belly buttons. <em>The randomness of pointing out they had belly buttons was priceless.</em> I won&#8217;t go into the details of the book because I truly believe this one needs to be published one day, but during the course of the book some crazy antics ensue and it is drawn to a close with the last line:</p>
<p><em>&#8220;But they still had their belly buttons.&#8221; </em></p>
<p>I think there is a big moral in that story&#8230;and I shared the tale with my friend Jyl. Now, whenever life gets a little crazy or we find ourselves at the end of one of those days where we are not quite sure how we managed to survie it, I&#8217;ll say &#8220;BUT, we still have our belly buttons!&#8221;</p>
<p style="text-align: center;">Don&#8217;t you just love brilliant librarians and young authors?</p>

<p>You know, corn dogs are actually one of those things that most kids don&#8217;t realize you even can make at home, which makes it easy for you to win coolness points as a parent by making them.</p>
<p style="text-align: center;"><em>And lets face it, we all secretly live for those moments when our kids give us that &#8220;Wow, you&#8217;re actually kind of cool&#8221; look.</em></p>

<p style="text-align: center;"><strong>Before we start, you&#8217;re gonna need a deep fryer, filled with oil, and turned on so it can be heating up.  </strong></p>
<p style="text-align: center;"><strong>You&#8217;re also going to need Baking Powder and Baking Soda, flour, milk, plain corn meal, an egg, and sugar. </strong></p>
<p style="text-align: center;">I know this seems like a lot but it mixes up really fast. I wanted to use plain corn meal and plain flour everyone would be able to make them because I know some places don&#8217;t have self rising meal and flour in the abundance that we do where I live.</p>

<p style="text-align: center;"><strong> You&#8217;re also gonna need a package of weenies and some sticks, skewers, or popsicle sticks to go in them.</strong></p>
<p style="text-align: center;">I got these sticks on the kid&#8217;s craft aisle at Wal Mart.</p>
<p style="text-align: center;"><strong>Katy is holding two packages of weenies but you only need one&#8230;</strong></p>

<p style="text-align: center;">This is a Corelle pasta bowl in a rare yellow pattern from the eighties called &#8220;Citrus&#8221;.</p>

<p>This will help our corn dog batter stick to the weenies and we really need this step because once I forgot to do it and my batter kept sliding off in spots. By dipping them in flour first, it sticks perfectly.</p>

			</p></div><p id="zlrecipe-ingredients" class="h-4 strong">Ingredients</p><ul id="zlrecipe-ingredients-list"><li id="zlrecipe-ingredient-0" class="ingredient" itemprop="ingredients">1-1/2 c all purpose flour </li><li id="zlrecipe-ingredient-1" class="ingredient" itemprop="ingredients">1 c plain cornmeal</li><li id="zlrecipe-ingredient-2" class="ingredient" itemprop="ingredients">2 tbsp sugar</li><li id="zlrecipe-ingredient-3" class="ingredient" itemprop="ingredients">1 1/2 tsp baking powder</li><li id="zlrecipe-ingredient-4" class="ingredient" itemprop="ingredients">1/2 teaspoon baking soda</li><li id="zlrecipe-ingredient-5" class="ingredient" itemprop="ingredients">1 tsp salt</li><li id="zlrecipe-ingredient-6" class="ingredient" itemprop="ingredients">1 egg</li><li id="zlrecipe-ingredient-7" class="ingredient" itemprop="ingredients">1 1/3 c milk</li><li id="zlrecipe-ingredient-8" class="ingredient" itemprop="ingredients">8 weenies</li><li id="zlrecipe-ingredient-9" class="ingredient" itemprop="ingredients">8 wooden sticks</li><li id="zlrecipe-ingredient-10" class="ingredient" itemprop="ingredients"></li></ul><p id="zlrecipe-instructions" class="h-4 strong">Instructions</p><ol id="zlrecipe-instructions-list" class="instructions"><li id="zlrecipe-instruction-0" class="instruction" itemprop="recipeInstructions">Fill deep fryer with vegetable oil and heat to 375 degrees. </li><li id="zlrecipe-instruction-1" class="instruction" itemprop="recipeInstructions">In a medium bowl, add 1 cup flour, cornmeal, sugar, baking powder, baking soda, and salt together and mix until well combined. Add in milk and egg and stir well until smooth and well blended. Set aside.  </li><li id="zlrecipe-instruction-2" class="instruction" itemprop="recipeInstructions">Place 1/2 cup flour in a shallow dish or pie plate. Skewer each weenie on a wooden stick, then roll in flour, gently shaking off the excess. </li><li id="zlrecipe-instruction-3" class="instruction" itemprop="recipeInstructions">Fill a tall drinking glass with corn dog batter. </li><li id="zlrecipe-instruction-4" class="instruction" itemprop="recipeInstructions">Dip each weenie into glass of batter while holding the stick, until completely submerged, slowly pull out of batter and carefully lower into hot oil. Fry until golden brown.</li><li id="zlrecipe-instruction-5" class="instruction" itemprop="recipeInstructions">Drain on paper towels.</li><div id="zlrecipe-instruction-6" class="instruction-label" >To freeze: Place fully cooked corn dogs on wax paper lined baking sheets and place in freezer until frozen hard (A few hours). Remove and place in zipper seal bags before returning to freezer.
