Tastes like the perfect gooey oatmeal raisin cookie!

Pin it
If you’re on Facebook, please click the “Like” button above, thank you!

So today something cool happened. Alright, actually several cool things happened but I’m gonna focus on one here because if I took the time to write about every little detail in my life that I felt was cool or neat or served as evidence to enforce my view that the world is mostly a good place full of good people, y’all would just have to clock in each morning by 5:00 AM and hang in there with me til I ran out of wind around midnight - And Repeat next day

So I checked in on twitter and I saw a wonderful tweet from Charlie Daniels, so I retweeted it. Then I got to working in the kitchen and cranked up some CDB while I was cooking. I tweeted about that, too. Cool thing is, I heard back “Bet you’re cooking something good” from Charlie Daniels himself!

As a girl I used to listen to his fiddle playing, begging my dad to play Devil Went Down To Georgia over and over again. When I took up classic violin in middle school I had visions of playing like him one day. The fact that I never got much beyond The Old Gray Goose is entirely beside the point…

I called my mother and said “Guess who just talked to me on twitter? Charlie Daniels!”

She replied, “Really? Now you know They say he’s just the nicest man.

I held in my chuckle. We do that a lot around here, talk about “They” say this or that.

“They” is a group of people that just about everyone I know has. “They” apparently get together frequently to discuss current events, recipes, people, and raising your kids.

I’ve spent my life hearing: They say you should (insert should here)… They say this really tastes good…and when it comes to people “They say Charlie Daniels is the nicest man”

So I just wanted to take a minute to thank everyone who happens to be in our group of “They”. There are all sorts of “They” groups and I’m so thankful that the “They’s” in our lives are the kind that say nice things about people. :0)

If your group of “They” is like that, They say you should let them know how much they are appreciated!

And now, On to the Pie!

Okay, kinda. I have something else to talk about first but I promise we’re getting a lot closer to the pie…

The famous Miss Fay's portrait is also with us in this photo!

So this past weekend, my mother and I ended up at the famous Loveless Cafe in Nashville, Tennessee with our friends Shannon Kozee and Tamera Alexander. I’m gonna talk more about Shannon in a future post. If Tamera’s name sounds familiar it is because she is a wonderful author of historic fiction. (You can check out her blog here. You can also get her latest book here, which Mama is reading now and I’m reading as my treat once I get done writing my second cookbook.)

Getting to meet her was a complete thrill for me because we’ve had some of those encounters with each other via internet that you know just can’t be coincidences. The first time I was made aware of her blog was when I got a notice that someone had blogged about me (it is an automated thing that sometimes works but most of the time doesn’t). I looked at the name and thought it sounded familiar but couldn’t quite place it. Then, a few days later, someone was giving a copy of my cookbook away on Twitter and again, her name. So this time I decided to do a little investigating and went to visit her blog. As I scrolled down I saw the cover of a book she had written – and that book was sitting beside my chair because I had just finished reading it. LIGHTBULB.

We exchanged a few emails and Tammy was always so encouraging and warm in hers. I was actually a little nervous about meeting her but she was even warmer in person! She absolutely exudes kindness and grace and is just one of those people you want to sit around and soak in for as long as possible. She also had perfect hair. ~sigh~ But I shall not covet…much.

While there, of course we had to have dessert. They had a new offering which immediately caught my attention: Oatmeal Raisin Cookie Pie. Oh my goodness, how I love a good oatmeal raisin cookie! I had to get it.

When it came, I was not disappointed. Mama and I split the piece and it tasted like the ideal oatmeal cookie, hot from the oven (even thought it was served cold!) because the middle was nice and gooey with the richness of oats, brown sugar, and cinnamon. I set to looking for the recipe the moment I got home.

I found one of the original postings of it on Sun Maid Raisin’s website, so I contacted Sun Maid raisins and they graciously gave me permission to share their wonderful recipe with you. I have to tell you my funny Sun Maid story though..

When I was going to New York to do the Today show a little over a year ago, I was scheduled to promote my book by making Lela’s Fried Peach Pies. The secret to Lela’s fried pies is, of course, the dried peaches. Whe you make pies with dried fruit instead of canned or even fresh, you get a much bigger punch of flavor. Well, I got a call from the food stylist in NYC to see if I could bring the dried peaches with me. It turns out, they are almost impossible to find in the big city! So I headed to the “big town” with three bags of Sun Maid dried peaches in my suitcase. I guess tha tmakes those pies “fancy” since they were made with fruit imported all the way from Alabama If you’d like to see that segment and my recipe for fried peach pies, click here, but come back because I wanna show you this pie, too!

Oooh yum, de pie! de Pie!

(that was supposed to be my impersonation of Tattoo in Fantasy Island, in case you didn’t recognize it)

To make this delicious pie, you’ll need: Raisins, Cinnamon, quick oats, corn syrup, salt, brown sugar, and a wee bit of melted butter and flour.

You’ll also need a pie shell.

The original recipe called for a graham cracker crust but I’m using my traditional mix-in-the-pan pie crust. You can click here if you’d like that recipe.

Place brown sugar, eggs, corn syrup, and melted butter in a bowl. Mix well with a large spoon.

Until it looks like this

Now add in all of your other ingredients and mix again.

So it looks like this.

See how easy that was? Easy as pie, right?

Thus the expression

Oh! I forgot to show you my bowl.

You’ve probably seen this one before but just in case it is a Pyrex Cinderella Bowl in Amish Butterprint blue.

Ain’t it purty?

Pour batter into uncooked pie shell.
Bake at 325 for 45-50 minutes or until just set in the center.
That means when you move it, the middle doesn’t jiggle.
Remove from the oven and allow to cool completely before serving. I refrigerated mine to get it nice and cold. Wonderful served with whipped cream on top.

This pie is great to make on a weekend, cut into small slices, and keep in the fridge for dessert throughout the week!

Today I have a guest post for you for Chicken Pot Pie from one of the head chef’s at UNA’s Culinary Department. But before I hand over the reins, I’m feeling chatty so I thought I’d spend a few minutes visiting with you if I may…. Y’all know how I am when I get chatty. Not much that can shut me up

I have some great friends and each one seems to have a specialty when it comes to the friendship department. Jyl is good as a sounding board. She lets me do my “brain dumps” and then she helps me put the pieces of the puzzle together until they make sense. Jason is good for talking things out to. When I get a thought in my head that I want to think more on and examine from all angles, Jason is always good for a few other perspectives.

Yesterday, I was working on a story that I’ve had in my head to write for well over a year now and I needed to go meet Jyl in nearby Scottsboro. So I asked Jason if he’d mind going along since I wouldn’t be back home til after dark and …oh yeah, did I mention Jason is a very good driver and used to staying up late at night? Well that’s one of his gifts, too.

We share a Southern heritage and a friendship that started back in high school when he was editor of the literary magazine and I was junior editor. He also fills the role of our “Adopted pitiful bachelor who needs to be fed” in the family. We always had a few of those hanging around my mother’s kitchen growing up and so I’d feel a little empty if my family didn’t have one, too. So you see, Jason is a handy feller.

So we get in the car and I immediately started in (The beauty of good friends is that you can skip the niceties and greetings and just begin your thought waves wherever they are at that given moment) “Okay, so George Washington. You know what he did, right? He was actually offered the throne of the United States, they offered to make him KING of the US and he turned it down because he felt it was in the best interest of the country…”

He didn’t miss a beat as he adjusted the driver’s seat of my car to accommodate his legs when he replied, “Oh yeah, I know that! And did you also know that he was the one who first introduced the idea of term limits and that they used to be voluntary until it was written into the constitution in 1947″

This is a pretty typical conversation between me and Jason.

From there we somehow took a detour and got into talking about our childhoods and attitudes and the kind of people we look up to, from there we went to our culture and how it has changed in our lifetime.

And that is where he told me the story.

It was in a book he had as a child, a collection of fairy tales and fables that his mother used to read to him. This one had stuck out to him, it had struck a note in his heart that still rang true today. He didn’t know it word for word but he knew the premise enough to tell me and for me to recreate the premise for you now.

There once was a king.

One day this King chose a man and assigned him the task of going out into the kingdom and picking the most beautiful flowers he could find to bring back to him. Another man was dispatched on the same day to pick the most noxious weeds he could find and bring them back.

And so each set about their assigned tasks and at the end of the day they returned, one with a wagon full of beautiful flowers and one with a wagon full of terribly noxious weeds.

The wise king called them before his throne and he asked the one who had brought the flowers “Tell me, did you find any weeds?” The man replied “No my king, I was too busy looking for flowers, I didn’t see any weeds at all.”

The king smiled and turned to the man who had gathered the large load of weeds, which were most assuredly resting amidst the beautiful flowers and asked “Tell me, did you find any flowers?” “No my king, I was too busy looking for noxious weeds. I didn’t see any flowers at all.”

Jason’s point was that more people used to look for flowers. We talked about this a while and he thinks Watergate was a turning point. Now I know full well what Watergate is but I prefer Jason not bring it up because it just makes me want that green goopy salad with marshmallows in it. I’m not sure if Watergate was the turning point but it definitely stands one of those times in which the record skipped, the party stopped, and the lights were turned on.

I guess it doesn’t really matter when or why it started, the end effect is the same. At some point a majority of media outlets (news, tv networks, filmmakers etc) stopped looking to Little House on the Prairie and started looking to the National Enquirer to set the standard for behavior – and once the pied piper started playing that flute all the rats just followed along behind and ran right off the cliff together. Note: My use of rats here is a pied piper reference, not calling people rats. People are hope and potential filled individuals, regardless.

At that point, they decided that the business of looking for flowers held little appeal in terms of ratings or shock value and instead began the search for noxious weeds.

And after our talk yesterday, I finally understand reality tv.

Today, as I’m writing on my second book (You can purchase my first book by clicking here) Chef Lewis from my Alma Mater has graciously agreed to share with you a simple recipe for Chicken Pot Pie. I asked him specifically to do a guest post on Chicken Pot Pie because I’ve received so many requests for one that I’ve lost count. Why haven’t I ever brought you a recipe for chicken pot pie? The same reason I won’t be bringing you a recipe for seafood. ~giggles~ Take it away, Chef!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Hi there, I’m Chef Lewis from the University of North Alabama’s Culinary Department in Florence, Al. I was asked to do a guest post to share some of our recipes for the holidays, and I was more than happy to do so. We’re very happy to have Christy as one of our departments alumni’s, and we’re happy that we can share some of our ideas with all of you. This recipe was done by myself and my team Kenny and Devon.
The ingredients you’ll need for the pot pie are chicken breasts, cream of mushroom soup, cream of chicken soup, corn, peas and carrots, butter, white pepper, diced yellow onion, and buttermilk biscuits.
I will give easy instructions for making a smaller quantity below as well.
Begin by boiling the chicken breasts in 4 cups of water with ½ of your diced onion until they are fork-tender (this will be around 20 minutes).
Remove the chicken from the water, keeping the water for later. Strain the onion out of the water with a colander or strainer, and let it cool.
Next you’ll brown the other half of your diced onions in the butter until they’re soft (around 8 minutes).
Then you take the cans of mushroom soup, chicken soup, the browned onion, and the white pepper and combine all of that in a big bowl.
Then you add about 1/2 (2 cups) of the chicken broth (the leftover water you boiled the chicken in) to thin out the soup mixture.
After that you open up the can of peas and carrots and the corn, and drain the liquid out of them, then pour that into the soup mix as well.
By now the chicken breasts should have cooled down enough that you can cut them up into bit-sized pieces.
The chicken goes into the soup mix as well. Just stir it all together and make sure it’s evenly mixed up.
All of the soup mix then goes into a deep greased 13×9 inch pan.
For the topping, you take the biscuits out of the can and flatten them out (you can use either a rolling pin or your hands).
Then stick the biscuits on the top of the chicken soup mix, till they’re covered.
Then you just stick it in the oven at 300 degrees Fahrenheit for around 20 minutes, and the top should be golden brown.
Enjoy!
Christmas and New Years behind us, and most folks are in the middle of winter, snuggling within their quilts and homes, cooking up stews and cobblers. Oh I’m doing the cooking part but not the rest of it, my mind is on other things. You see, soon as January hits, I get to expecting spring.
I can’t help it, it is my absolute most favorite time of year for a number of reasons but one in particular – I get to see my daffodils. Now before you go to thinking that I’m looking pretty far off you gotta understand that daffodils are usually in bloom here by February and the first sign of yellow, my heart up and declares SPRING!
I go by my own time table with the seasons, I’m just a wild woman that way.
I love flowers of all sorts, I am female after all. Oh Alright, I’ll confess to not being a huge red rose fan but toss a pink one my way and I’ll throw that sucker in my teeth and do one heck of a tango. Okay, not really. If anyone shouts out requests for a tango at my next speaking engagement I’m afraid you’re gonna be let down. Holler out that you want me to sing instead, I can’t refuse that, of course you might still be let down once you hear me but that wasn’t my point…
When we moved here to Bountiful a few years back, I was delighted to find a well thought out and beautifully planted ring of spring flowers around each tree in our front yard. Tete a tete daffodils, crocus, and hyacinth came up in unison, presenting the perfect blend of spring colors and fragrance. It really warmed my heart to walk around those trees, kneeling by them and lovingly taking in the flowers, knowing that someone had once cared so dearly for this house.
So that very first fall, I ordered more bulbs. King Alfred, tete a tete, orange throat, every variety I could find (and afford). I ordered around a hundred that year and got out with my little shovel and planted each and every one of them myself. The following spring the beautiful flower rings around my trees were joined by others out and about in the yard. I had planted them as my mother advised, randomly, with no set pattern so they just popped up in the yard like little surprise blooms of sunshine. They were absolutely breathtaking and I dearly love those few weeks of looking out my window and seeing the happy little flowers waving back at me in the breeze.
A few months back I was in Lowe’s and walked by a bag of 100 more bulbs. They hopped in my buggy and came home with me where Katy Rose and I went about planting them, wherever she felt we needed them to be.
My goal is to eventually have an entire yard filled with daffodils for a few weeks out of each year. They’ll slowly spread from the road right up to my front doorstep . After a few decades of this, and with my kids moving out and more cats coming to live with me (isn’t that the natural evolution of things?) no doubt people will start to talk. I’ll begin wearing a hat with a giant silk daffodil in it and trade in my preferred red shoes for daffodil yellow ones to match. Folks will start calling me the Crazy Daffodil Lady as I walk around town in my finest daffodil yellow regalia. But hey, I can think of worst things to be called. By then I’ll have so many that I can make large bouquets and deliver them to nursing homes and other spots around town that need brightening and then come back home to a yard still filled to the brim. We all gotta have dreams.
If you’ll excuse me, I found some daffodil bulbs at Wal Mart yesterday and I think I’ll plant a few before the sun goes down. I know that technically this isn’t the time of year to plant daffodils but I like to live life outside the lines. Heck, I even wear my watch on my right hand, even though I’m right handed and my engagement ring is on my finger first, THEN my wedding band (I’ve gotten more emails on this than I can count).
You see, at the end of the day, I’m just a rebel to the core. Oh yeah, I even eat raw cake batter. I do shocking things like that…and I plant daffodil bulbs in December.
And THAT, my friends, is why I’m gonna make a great Crazy Daffodil Lady someday! I hope I can count on your vote
While I am still pretending to be partially sane, let me bring you a casserole today. There are so many variations on this casserole that you could throw a rock at the internet and hit fifty on any given day. This is mine, it’s pretty easy and awfully good. Modify it, play with it, make it your own. Just let me know what time it is served and try to have plenty of tea when I show up, please Or Diet Dr Pepper…Diet Dr pepper is always good, too!
You’ll need: Long Grain and Wild Rice (with seasoning, such as Uncle Ben’s), Cream of Mushroom Soup (can use fat free), French Style Green Beans, Chicken, almonds, and Ritz crackers and a wee bit of butter to pour over the top, which isn’t pictured.
If you don’t like Cream of mushroom soup, just use Cream of chicken, cream of celery, or cream of whatever-cranks-your-tractor. You can also use fat free or low fat or i-don’t-wanna-get-fat, if you can find it . For those of us already there, just go with the recipe because it tastes so good .
Nowadays Uncle Ben’s make quick cooking long grain and wild rice as well as the traditional featured here. Use whichever you pick up first.
The almonds are optional but I gotta tell you, I love what they do to this dish!
NOTE: You can also add a cup of sour cream to this and it will be wonderful! This is completely optional, but I love it. I’m not including it in this tutorial but I will list it as optional in the recipe below.
Cook chicken until done.
Note: Normally I wouldn’t have used chicken tenders for this because they are a little more expensive. This is a great recipe to use cooked chicken leg quarters (deboned and shredded), leftover chicken, or a whole fryer (cooked, deboned, and shredded) in, but since I did have this chicken on hand and company was a coming (did I mention I like to make this for company) that is what I used.
Give it all a stir until it is good and mixed.
Sprinkle crushed crackers all over top.
Drizzle melted butter over the cracker crumb topping.
I’m doing my last minute running around before both of my kids are out of school and so my friend, Stacey, offered to share one of his recipes with you to give me a little more time to get my Christmas ducks in a row. This is his special Christmas story and I know you’ll enjoy it! Be sure and head on over to read My family’s Christmas story when you’re done, the Seven Cakes of Christmas (I have a free little ebook for you there, too!).
And I also want to share with you my Good Morning message that I posted on the Southern Plate Family Facebook page this morning if you’ll indulge me. Each morning I post a positive or uplifting message to get our day started right and today’s was a little more special to me.
“We’re in the home stretch with Christmas right around the corner! Don’t sweat the small stuff this week – seriously. I know this is the time where we all run around fretting and driving ourselves bat crazy over the tiniest details, doing everything we possibly can to make Christmas “perfect” for our families and those we love. But guess what? No matter what we do, how beautifully presents are wrapped, how much food is cooked, or what is beneath the tree – *You* and *I* will never be able to make Christmas perfect. God already did that
Now breathe in..exhale…and enjoy this beautiful season. GOOD MORNING!!! ~Christy”
Gratefully,
Christy
Now take it away, Stacey!
Once again, Christy has asked me to share one of my family’s favorite recipes with the Southern Plate family. It’s a pleasure to do this every day over on Southern Bite, but I’m always humbled and overwhelmed when I get asked to share my food on what is arguably the BEST food blog on the net. When Christy asked me to post something that was holiday themed, I knew exactly what it had to be. But if you know me, then you know that no special post comes without a story…
My grandmother grew up poor. But just as Christy would say, she was rich in every way that mattered. And her story to me about her favorite Christmas was perfect evidence of that. She was one of six children. Out of necessity, both her parents worked to make ends meet and she was raised by her older siblings, as was so common in those days. Her father was a night watchman at a saw mill and her mother worked at a plant nursery. When Christmas would roll around though, poverty took nothing away from them in the way of magic and excitement. Every year, each child would be presented with one toy, an outfit their mother had made, and a small assortment of fruit, nuts, and peppermint candies. It was always her father’s job to go out and hunt the perfect Christmas tree. That was his big contribution to the celebration and he took great pride in presenting the perfect cedar tree for trimming.
Of course, running down to the tree lot was out of the budget, so he would set out in the woods to track down a prime specimen. One year in particular, they were living in Bay Minette and after several trips, he wasn’t able to find a cedar tree to suit. In a last ditch effort to provide something, he cut down a holly bush he found. He brought it back to the house and feeling a little embarrassed with his haul, set out to make it a little more special. Finding a can of silver paint, he painstakingly brushed every single prickly holly leaf with a shiny coat. The result, as my grandmother would put it, was the most beautiful, amazing Christmas tree she’s ever had. The love he put into that tree made it beautiful. They added the few ornaments they had and one small strand of bubble lights (that’s all they could afford). That tree went down in history with her and her family. And something that he thought inadequate, became the main focus of one of the most fond Christmases they ever shared.
As a child myself, I remember trying to figure how someone could be so excited about a silver bush and only one toy for Christmas. I mean she would reflect on Christmases past with the same starry-eyed look that I’m sure she had when they first happened. Today, as an adult with my own child, I have a much better understanding of the importance of a simple, but impactful holiday.
So often we get caught up in the holiday season that we fail to realize the simple things that make it so special. We focus our attention on buying the best gifts and decorating the perfect tree, when the real importance of the holiday lies in sharing the time with our loved ones. I grew up pretty poor myself and it’s one of the things in my life that I am most thankful for. Thankful for being poor, you ask? Yep! When you’ve had little, it help you appreciate when you have more and keeps you pretty grounded.
This holiday season, I hope that you’ll take the time to pay attention to the simple things. For one day, you’ll look back and realize they were the big things.
This recipe is one of those simple things that have always made holidays special in our family. Every Thanksgiving and Christmas would find this on my grandmother’s table. And now, I get the opportunity to share her recipe with y’all.
You’ll need: graham crackers, pecans, maraschino cherries, shredded coconut, raisins, mini marshmallows (yeah, I know I totally left them out of the picture – sorry), sweetened condensed milk
Crush entire box of graham crackers.
I used my food processor but you can also pop those crackers in a zip top bag and crush them with a rolling pin.
Coarsely chop pecans and cherries (saving the cherry juice).
Combine everything in a large bowl. Mix well.
You may have to use your hands for this – it’s messy but you get to lick your fingers afterwards so it’s totally worth it.
Add three tablespoons of the leftover cherry juice and mix well.
(You can add more if it seems too stiff.)
Turn out into a lightly buttered 9X13 pan and press flat. Chill at least 6 hours.
I’m thrilled to be able to bring you a guest post from one of the head Chefs at my University’s Culinary School today. I told Chef Lewis that we were always on the lookout for quick and easy dishes that could impress, especially at Christmastime and he came through with one that is just beautiful. I know you’re going to love this idea! Special thanks to the culinary department of the University of North Alabama (click here to visit their Facebook page) and to all of my wonderful teachers who put up with me back in the day
Gratefully, Christy
Hi there, I’m Chef Lewis from the University of North Alabama’s Culinary Department in Florence, Al. I was asked to do a guest post to share some of our recipes for the holidays, and I was more than happy to do so. We’re very happy to have Christy as one of our departments alumni’s, and we’re happy that we can share some of our ideas with all of you.
Today I’m going to show you how to make a quick and easy party entree that your guests are sure to love.
You’ll need:: 3 cheese tri-colored tortellini, olive oil, pesto, spaghetti sauce, salt, skewers or picks.
Note: This tortellini is found in the refrigerator section (usually near the cheese) or in the freezer section of your grocery store.
Bring the water and salt to boil in a pot.
Add the packages of tortellini to the water, and cook about 2-3 minutes.
Drain the pasta with a colander.
Then place the pasta into a second bowl, and coat with 1-2 tablespoons of olive oil (this will keep the pasta from sticking together).
Spread the pasta onto a single layer in a pan, and allow to cool enough that you can handle it comfortably.
You can then use either bamboo skewers or small colorful picks to skewer the pasta.
For using the bamboo skewers, be sure to soak them in a pan of water for about 20 minutes before you put the tortellini on them.
This makes keeps them from splintering when you put the pasta on them.
Place them on the picks in alternating colors, using 6 pieces total for the longer skewers, or 3 pieces on the shorter picks.
This is a shorter pick for a smaller platter.
This is a longer pick, where I used a bamboo skewer, for the larger platter.
Arrange them on a serving dish to look like a Holiday wreath.
In the center of the wreath, place a small serving bowl filled with either marinara sauce, or pesto, whichever one you personally like better.
This photo shows long skewers arranged in a large wreath pattern with marinara sauce in the center.
And here are our shorter skewers arranged around some store bought pesto sauce.
Dip into sauce and enjoy this easy Holiday treat!
Merry Christmas from Southern Plate and the University of North Alabama Culinary Department!
Some recipes just get you talking about the old days, which is why we love them so much. This is one of those recipes that gets my mother to talking about her childhood. The school lunch ladies often made this around the holidays and she loved it so much that one of them gave her the recipe for it, which has led us to enjoy it for the past couple of generations. Nothing like an heirloom recipe to bring memories back to life, especially around the holidays. Which brings me to my point…
Cranberry Crunch with Whipped Cream
You know, our kids are going to look back on this Thanksgiving the same way you look back on yours as a child. This time of year, I can’t help but think back to when I was a girl, when my Grandaddy and great grandmother were still with us at all of the Thanksgivings we celebrated at their house on Brookline Drive in Huntsville, Alabama. My cousins and I would stay outside as long as we could because the house was so hot from all of the baking. We’d come in when called, eat a plate full of our favorite foods, and rush right back out into our leaf piles and hide and seek games.
Later on, I’d end up sitting up against my grandaddy, my head resting on his shoulder as he worked on a crossword puzzle or told one of his latest jokes to the family, fully content at feeling the warmth of him through his thin cotton shirt and his strong arm around me. He’d lean over at some point and kiss the top of my head and tell me he loved me. It was such a natural gesture for him that I don’t think he even gave it thought when he did, which made me all the more content.
I can’t help but get caught up in those memories this time of year, but I try to stay ever conscious that these Thanksgivings, today, are the ones my kids will remember.
My parents are Grandmama and Grandaddy now. I’m one of the ones at the stove, who put them in the sweater that ended up being so warm it forced them outside to seek a cool breeze away from the oven’s heat.Someday folks will gather on a Thanksgiving day and play a video of this year and one of my kids might walk in during the middle of it and see faces that are no longer with them. They may be the ones finding themselves having to walk out of the room, feeling hurt that no one warned them they were about to hear their Grandaddy’s voice calling out for the first time in nearly fifteen years.
Some parts of the holidays will always be bittersweet when you have loved and been loved, but living in the past should always come full circle as a reminder to live in the moment.
Nowadays I understand the hint of sadness in the eyes of people, even though they are with their family at the holidays. Even though children are sitting up in their laps and siblings and spouses are chattering away while they pass dishes around a table filled with blessings.
Oftentimes, as we look around that table it occurs to us…
someone is missing.
Yes, some folks may be missing from our tables this year, but that isn’t an excuse for you to be. I miss them, too, but there are so many people here with us now waiting to have an arm wrapped around them. Waiting to be told they are loved. Waiting for that one special moment with you that they will someday tell their kids about when they think back to Thanskgiving. Waiting to taste that special recipe you made just for them.
Next year, 2011 will be a Thanksgiving past and it will be added to your reserve of treasured memories for you and all of those around you.
Don’t set yourself so firmly on remembering Thanksgivings past that you forget to put your heart into this one.
You’ll need: Whole Berry Cranberry Sauce, Old Fashioned Oats*, Flour, Brown Sugar, and Butter.
*I use old fashioned but quick will work just as well if that is what you have on hand. You can also use margarine instead of butter and don’t waste a single moment fretting over it! As for brown sugar, I’m using dark because it is my very favorite, but if you have light or prefer light, knock yourself out!
Place your flour, oats, and brown sugar in a bowl
Stir them up.
Add in your butter or margarine and cut that in with a long tined fork.
Now spray a pie plate or 8×8 dish with cooking spray.
And press half of your mixture into the bottom of the pie plate.
Top that with the entire can of cranberry sauce.
I just glob it by spoonfuls on top of my little crust…
A welcome treat for your Thanksgiving, Christmas, or holiday dinner!
Pin it
This is a fun recipe to feed people. At first glance, it looks like a pecan pie and folks usually don’t take a second glance before digging in for a bite and telling you how good it is. My husband’s exact words were “That is the BEST pecan pie I’ve ever tasted!”. Then I got to tell him it didn’t have any pecans in it…
A similar situation happened at my kid’s school when I took a few of these up there. One of the teachers came into the office talking about how good the pecan pie was and the secretary said “You mean the pecan less pecan pie?” she replied “Oh no, I got the one that had pecans in it…” ~snickers~ Of course, I hadn’t taken anything with pecans in it to the school.
This is a fabulous pie for those with nut allergies but that isn’t why I developed it, I actually didn’t even think about that until someone asked for the recipe, stating that they had a friend with allergies who would be excited to get pecan pie again! I developed it as a way of saving money. Have you seen the cost of pecans lately?
Right about now, making this pie with my recipe instead of pecans will save anywhere from five to seven dollars, depending on where you shop. Most folks I know can cook an entire supper for that amount of money!
So I guess there is a double bonus involved, but in hindsight having a faux pecan pie for those with nut allergies is a much greater purpose.
I have seen some varying recipes for faux pecan pie around the web. The most common one utilizing pinto beans in place of pecans. I have that on my list to try someday and I’ll probably do it around about the time I try raw oysters, but I couldn’t bring myself to suggest you put pintos in your pie so I set about developing my own faux pecan pie.
I started with my Mother’s No Fail Pecan Pie recipe and then blended it a bit with that crust of my Strawberry Pretzel Salad (which is in my cookbook, but not on SouthernPlate.com). Everyone is always surprised that the crust isn’t made of pecans, so what a great inspiration to add to my pie! It took about seven pies to get the proportions and cooking time just right, because this pie really needs to be made as a deep dish but I’m finally ready to bring it to you today in it’s final form.
I’m gonna start this post out with a disclaimer that I’m sure is obvious to just about everyone reading this: Pecan pie is not a health food. It’s not supposed to be. A good pecan pie is gonna contain butter, sometimes lots of it. It will also have sugar in various forms, usually granulated and corn syrup. A good pecan pie is not for the faint of heart but it is the golden nugget of pies. Rich, buttery, delicious. Unlike any other. This Faux Pecan Pie lives up to all of those expectations.
If you’re on a diet, just have one or two bites and make sure you savor them, then be sure and make it again when you’re not on a diet anymore. If you have a family member or friend with a nut allergy, this would be a welcome treat for them at your Thanksgiving or Christmas dinner! But I suggest not telling anyone it doesn’t have pecans until they eat it, mainly because it is fun seeing the look on their face .
You’ll need: A Deep Dish Pie Crust, Light Corn Syrup, Butter, Pretzels, Sugar, Eggs, and Vanilla.
I recommend unsalted, real butter in this recipe.
I also recommend not spelling “recommend” unless you have to because it is one of those annoying words to spell. I really think it needs two “c” ‘s but Websters never listens to me. ~sigh~
Note: If all you have is margarine or you just can’t afford butter, go for it. Trust me, I’ve been there! The pie will taste slightly different but t’ain’t nobody here gonna judge because we were raised better than that. ~Grin~
Following my recipe below, place the butter for the pie filling in a large bowl and microwave it until melted. Allow to cool.
You ever hear the saying “Do as I say, don’t do as I do?” Well that applies here. Normally you could just dump all of your other filling ingredients in and give them a stir but I don’t really have time to allow my butter to cool so I’m gonna stir in my sugar real good to cool it down a bit before I add everything else.
If I just dumped everything in with hot butter, it would cook my eggs a bit, leaving me with thin ribbons of cooked egg mixed in with the custard of my pie and that isn’t very fun!
So at this point you can add in all of your other ingredients and give it a good stir until well combined.
But if you’re impatient like me, add your sugar first and stir that up a bit until your butter is cooler.
Like this.
Now add all of the other filling ingredients and give it another good stir.
I’ve had a few questions about my flat whisk pictured here. I bought this when my friend Maralee McKee told me about it. It came from Williams Sonoma and is the only thing I have ever bought from that store, lol. I go in there from time to time just to look around and really enjoy it, but I find that specialized tools and pots aren’t a good use of my money when standard things I have around my kitchen will do just fine and I don’t have to find the storage space for them. I can just see my great grandmother staring at a wall of peculiar utensils and asking “Now what do ya need all them thangs for?”
You can also find these whisks on Amazon by searching for “flat whisk”. They really do work well and I prefer it over a traditional whisk.
Here is our pie filling all mixed up. Ready for an action shot now?
Isn’t that pretty? I’ve learned how to do a lot of things left handed since having to venture into the wonderful world of food photography.
Whoops, I was being a bit sarcastic there when I said “wonderful”. Food photography is actually the one thing I don’t really enjoy that much about blogging. Food is very uncooperative. I have yet to ask any item of food to pose pretty and not been met with a blank and vacant stare.
It doesn’t help that I’m not one to be more impressed with a piece of say, banana bread, just because it is encased in a soft focus vignette. I find banana bread on an old corelle plate, presented as is, has more heart. ~sighs~ I know, but I have to at least attempt pretty food pictures. I put a wee bit of my heart into it from time to time.
But if you ever think some of my food isn’t pretty, just imagine a sweet granny standing behind it, handing it to you with a loving expression.
That is how I picture all of my food, and it makes it quite beautiful. Tricks of the camera or photo shop can’t add an effect like that.
Oops, got sidetracked. Okay so here is your filling in the crust.
I know it looks yellow now but it will be that beautiful golden color once baked.
Now we need to crush our pretzels.
I’m using my heirloom rolling pin that my great grandmother bought for my mother with green stamps when Mama was just thirteen years old.
At thirteen, her parents divorced and she went to live with her father to take care of him. She cooked all of the meals and kept house until he remarried a few years later.
At thirteen, I was listening to bad eighties music, hanging out at the mall, and spending my spare time becoming proficient with aqua net hair styling techniques.
Never hurts to contrast your life with others in order to see how good you got it.
Place your pretzels in a gallon zipper bag and crush those puppies. They don’t have to be pulverized, just broke up kinda good.
I took this rollin pin with me when I went to film at Paula Deen’s house and we used it on the show. I told her all about it and we talked green stamps for quite a while. That show airs this Saturday for the first time. November 5, 2011. Check the Food Network for times in your area and click here to rsvp on my Facebook page if you plan on watching and read a few behind the scenes stories I’ve posted.
Melt your butter for the topping (see recipe) and add in your tiny amount of sugar.
Add in pretzels and stir until coated well.
Sprinkle evenly over the top of your pie.
I know it will seem like a lot of pretzels but they sink down a bit as we cook, which is why I made this a deep dish pie. The first pie I tried wasn’t deep dish and it seemed like there was hardly any filling when the pretzels sunk down a little bit. This will come out in perfect proportions to the top crust and the filling.
Place pie plate on a baking sheet and bake at 350 for one hour, covering with foil after the first thirty minutes to prevent over browning.
Allow to cool completely before serving.
This post is dedicated to my sweet friend, Alyssa, who has a nut allergy.
I got to meet her yesterday when I had a book signing at a local elementary to support their book fair.
I mentioned today’s post and she was so excited for a nut free pecan pie!
Special thanks to everyone who invited me and were so kind yesterday.
I enjoyed getting to meet you all and what an honor it was to see a table filled with food from my cookbook!
Notice one piece of the pie is unaccounted for. ~looks innocent~
I hope you get to make this soon and enjoy your faux pecan pie!
Don’t forget to add this pie to your holiday menu!
If you’re coming to my Holiday Cooking Show on November 10th (see poster below this recipe), this is one of the many recipes I’ll be serving the entire audience!
Ma-Maw’s Salmon Patties
These salmon patties bring back so many memories to me and are so comforting because my one and only grandmother who I call Ma-maw would make them every time I went to her for advice when I was a teenager. It was quick and easy & she’d take my mind off of what was bothering me. She would always cheer me up to say the least. Sometimes she would make some cornbread along with them in which we would put in a tall glass & pour cold milk all over it. It was scrumptious,especially on a hot summer day!
This recipe is one my mother and I have used for over twenty years, and we still love it. Many diets have “free” vegetables, which are basically vegetables that are allowed without restriction. What this soup does is combine those vegetables in with a richly flavored broth and serves them up as the perfect anytime dish to fight off the munchies, serve as a quick and easy lunch, or a filling side dish with your evening meal.
My Facebook Good Morning Post for the day (I hope you’ll join us on the Southern Plate Facebook Family Page soon!)
‎”We can always be a little nicer. We can smile a little bigger and more often, instead of passing by folks on the street quietly we can greet them with “Good Mornin”. We can be the bigger, nicer person to the persistent grump at work. In time, you’ll be amazed at the people you can soften through the simplest kindnesses but you’ll be even more amazed to find that each little act removes another brick over a huge fountain of joy within you. Eventually, you’ll have a geyser.” ~Christy
