5 Min Prep S'Mores Brownies - and the right time for you to shine

Before I get to the 5 Min Prep S’Mores Brownies: I get a lot of questions from folks on Facebook, comments on the site, and email asking how I’m doing and how I’ve been since the accident. When last I left off, I had taken my first steps and was learning to walk again.

And from there I kinda left you hanging. It wasn’t that I meant to leave you hanging, it was just that I could walk again and had some serious work to do to get back up to par 🙂

First of all, I’m doing great! I even got through my fall book tour without the use of a cane. I haven’t used a cane in months now. I’m still not running (not that I was ever a runner, per se, just that I’m not able to run just yet, you know, those short bursts hither and yon). In October, I took down my Handicap placard. It’s good for a couple more months but I didn’t need it anymore and walking a few extra spots did more good than harm.

 

 
I still have pain but that’s just pain. I’m used to it so I don’t really think about it anymore. It’s just become part of my life and like anything in your life, You’ve gotta weigh the cons against the pros and give the pros extra credence.
It’s all in your focus.

 

What you focus on tells a lot about who you’ve decided to be.

 

And we all decide who we are going to be.

 

Whether we are going to be an encourager or a discourager, a grateful person or a complaining person. Whether we are going to use our life victoriously or sit back and whine about not ever having been given the ideal circumstance or opportunity for us to shine.

 

You can shine with broke legs, or no legs, or perfectly working legs. You can shine when you’re unemployed, or overworked, eating filet mignon or living on ramen noodles.

 

You can shine when the odds are stacked against you – and it will actually be a brighter gleam because of it.
The thing is, if you’re going to shine, you’ve got to shine right now. If you are making excuses not to shine, right now, where you are, then you’re making excuses not to shine.

 

And if you can’t shine in a dark spot, if you only want to shine when it’s midday and sunny and the winds are perfectly aligned for you like they are in your dreams – then you don’t want to shine.

 

And that’s a shame

 

Because you have a spark within you that could really make a difference in this world.

 

But the biggest fire that spark could light…the biggest change it can make…is in your own life.

 

So I’m doing great. I have some pain, some issues, but they just remind me that it’s time to crank up the wattage.

 

Do yourself a favor today. Dust off the sparkle.

 

Now lets make brownies.
These come together in no time. I wanted a graham crust without the fuss so I tried out an idea and it worked just as I’d hoped it would. So spend five minutes whipping up these beauties and remind some loved ones (or yourself) that life is sweet today.

5 Min Prep S'Mores Brownies - and the right time for you to shine

You’ll need: Brownie mix (and ingredients needed to make it), graham crackers, chocolate chips, and either marshmallow cream or marshmallows.

And butter. You need butter. Margarine will work just fine. 

~I wrote something incredibly funny and creative here but realized it would spawn a lot of emails from folks not as gifted as we are with a sense of humor, so I deleted it. *sigh* This is why I’m way funnier in person…or around large groups of folks who don’t have access to my email address 😉 ~ 

I am using the 8×8 package of brownie mix but you can use the 9×13 if you like, just double the marshmallows, chocolate chips, and graham crackers.

Line baking dish with graham crackers (you don’t have to grease it).

Melt your butter and brush it over the tops of the graham crackers.

Prepare brownie batter according to package directions and spread on top of graham crackers. Sprinkle chocolate chips on top.

Bake according to package directions. Remove from oven and turn broiler on low.

This is a horrible picture but we are in the middle of our third winter so far this year 😉 So bear with me

Sprinkle marshmallows all over top or drop marshmallow cream by dollops over top, then gently spread to edges.

Sprinkling Marshmallows over the top would be easier and quicker, but for this tutorial I didn’t have them, only marshmallow cream leftover from fudge making at Christmas time. So I went with what I have. No sense in making a special trip when you can make do instead!

Place under broiler (at least six inches away from it) for 1-2 minutes, or until lightly browned on top. Watch carefully and do not leave unattended while it is browning because this will happen fast.

Allow to cool sligtly.

Cut, serve, enjoy!

Ingredients

  • Graham Crackers Enough to cover bottom of baking dish
  • 1/4 cup butter melted
  • 1 pkg brownie mix 8x8 size
  • 1 cup chocolate chips
  • 7 ounces marshmallow cream or 8 ounce bag marshmallows
  • Ingredients to make brownies on pkg directions

Instructions

  • Line bottom of 8x8 baking dish with graham crackers. Brush with melted butter.
  • Prepare brownie mix according to package directions. Spread over top of graham crackers. Sprinkle chocolate chips on top of batter. Bake according to directions on brownie mix package.
  • Remove from oven. Turn broiler on low. Top brownies with marshmallows or spread with marshmallow cream. Place under broiler (at least six inches away from it) for 1-2 minutes, or until lightly browned on top. Watch carefully and do not leave unattended while it is browning because this will happen fast.
  • Allow to cool slightly, cut, and enjoy!

  2. Christy, it is so evident that Christ lives in your heart and is the reason for your perseverance through a very difficult time. The most wonderful thing is that you have not kept that light or “sparkle” to yourself, but so generously share with all you come in contact with whether in words or in person. My prayer for you is that as you continue to recover, God will also lessen the pain you experience. Above all, remember what God told Sarah, “Is anything too hard for the LORD?”

  4. OH MY GOODNESS CHRISTY, ANOTHER WINNER!!!! I will use these for Valentines Gifts for my daughters teachers except I will add either a little strawberry extract and pink food coloring to the marshmallow cream or use the the cream and on top of that a few of the heart shaped marshmallows so when it melts there will be pink hearts on top. I am so glad you are doing great except for pain. You are so right we all have some sort of pain in our lives whether physical or mental and like you said if we use pain in the right way ourselves and others can benefit from using that pain as lessons or to make us a stronger person in other ways. Christy your wisdom and belief in God portrayed through your letters and recipes are such a blessing to me and my life. I am a great cook but you have taught me so much through your inspirational messages. KEEP IT ALL COMING YOU ARE SUCH A BLESSING TO US ALL IN MANY WAYS!!!

I can just about recite your other 2 word for word as I have read them so many times. if you only know how much you and your books mean to those of us that due to disability or other reasons don’t get out much.
