How to Make 7-Up Pound Cake

Place sugar, shortening, and butter in mixing bowl.

If it is a bit thin, just add more confectioner’s sugar. I always end up making mine too thin to begin with and have to add more.

  • For best results, use room-temperature butter, shortening, and eggs.
  • Another wait to guarantee the best results is to properly grease the cake pan with cooking spray or butter and flour. We definitely don’t want this cake to stick to the pan.
  • Don’t overmix the cake batter once you add the flour to make sure your cake doesn’t turn out tough.
  • Now, experts say that Sprite and 7-Up have different levels of carbonation, so you really only want to use 7-Up in this pound cake recipe to ensure it rises perfectly. But hey, you can use diet 7-Up if you really want to!
  • If you don’t have lemon extract, I’ve got another suggestion for you to give that cake its lemon flavor! First, add 2 tablespoons of fresh lemon zest to the cake batter. Then add 1 tablespoon of fresh lemon juice to the glaze.
  • Speaking of the glaze, you can make a 7-Up glaze instead by combining 1 cup of powdered sugar with 2 tablespoons of 7-Up.

  1. Based on a review of similar recipes, I believe the shortening amount should be 1/2 cup. The “1?2 c” entry is just confusing.

    Jeanne, you’re going to laugh hysterically at this. I have since I was 5 years old my mother was ill as I was growing up and that was my job and Grandma. Did a good job. I consider myself a darn good cook. First let me send my love, enjoy you immensely. I have heard now for about 3 years about is little 7UP pound cake oh I not very busy today decided to get up and make them well I would earn off by when the recipe said and put it in a tube pan.. I was clueless. I thought she must mean loaf pan. Well for the life of me, mine have vanished. So while pondering where they might be, I just started eating the cake batter. PRETTY GOOD IF I SAY SO MYSELF. LOL. Well I ended that they had and a decorative 9 x 13 scalloped edge pan. Well now time for a nap at 300 degrees almost 2 hours to make this day LOL I am about to make the frosting I however have to say this looking fabulous and I can’t wait to taste it I’m taking it to my daughter’s house tomorrow Thanksgiving dinner. Thank you for being such a positive role model because of you I used to be in a very deep hole and never could see anything funny about any.
