This is such a fun pie to make. One, because it is incredibly quick and simple to make, and two, because it is made all in the blender! 

The secret magic ingredient in this super simple coconut pie that makes it so easy is Bisquick. Because it’s such a quick and simple coconut pie this is a great pie to let your little ones help with so they can call it their own. Just toss the ingredients in the blender and let little fingers push the buttons while you hold the lid on.

Okay first off: You’ll need: milk, sugar, baking mix, vanilla, eggs, margarine, and shredded coconut.
See? No pie crust! It makes it’s own crust as it bakes! How cool is that?

Next you are going to pour milk into your blender..

Add the Bisquick baking mix…

next add your …eggs

 then your butter,
vanilla blender coconut pie
and vanilla.
 
Then you are going to mix on low speed for three minutes.

Eventually it’s going to look like this!

Next thing you are going to do is spray a nine inch pie plate with nonstick cooking spray.

After five minutes, sprinkle coconut over top.
Finally, bake at 350 for forty minutes.

Mama’s Amazingly Easy Coconut Pie

Why so amazing? Simply toss the ingredients in the blender and let the baking mix work its magic to make the crust as it bakes.

Ingredients

  • 2 Cups milk
  • 3/4 Cup sugar
  • 1/2 Cup Baking mix
  • 4 eggs
  • 1/4 Cup butter
  • 1 1/2 teaspoons vanilla
  • 1 Cup shredded coconut

Instructions

  • Put everything except for the coconut into the blender. Mix on low speed for three minutes. Pour into greased pie plate. Let rest for five minutes. Sprinkle coconut on top. Bake at 350 for forty minutes.

  3. I’ve been craving something sweet ever since starting on a low-carb diet. I substituted unsweetened Almond milk, and a truvia/sugar baking blend, along with unsweetened coconut. It turned out perfectly and has spared me from dreaming of donuts and cake!

  5. I have fond memories of eating this pie at a church function. Our church made a cookbook with our favorites and this was in it. It was titled Impossible Pie. I thought it was a joke at first. I gave it a try and oh my , I could eat this once a week! So yummy. Love the story behind your favorite pie. So glad for a happy ending.

    1. I’m afraid lack of literacy is your Achilles heel here. In the future, you might consider reading the post (very first paragraph at least) so that you could make claims remotely based in reality. Of course I’ll post your comment and hesitate only because of the embarrassment you have brought to yourself in writing it.
