Cream butter and sugar until smooth, add eggs, vanilla, and coconut flavoring.
In a separate medium sized bowl, stir together flour, baking soda, baking powder, and salt.
Add flour, buttermilk, and butter to butter mixture and beat until smooth.
Pour batter into the prepared pans. Bake for 25-30 minutes for round cakes and 30-35 minutes for 9x13 cakes.
Add frosting and sprinkle with coconut and press into cake sides immediately after frosting.
