Summer Squash Pasta

Favorite Pasta  Pine Nuts Unsalted Butter Minced Garlic Cloves Green Zucchini Squash – Yellow Squash

Cook 8 ounces of pasta in salted boiling water. While the pasta cooks, toast 1/4 cup of nuts in 1 tablespoon of butter in a skillet over medium-low heat.


In another skillet, melt 5 tablespoons of butter over medium heat until browned, then add 2 minced garlic cloves and sliced zucchini and summer squash.


Cook for 5 minutes, adding salt and pepper to taste.


Combine the cooked pasta with the squash mixture, add 4 ounces of crumbled feta or ricotta, and toss to coat.


Garnish with fresh basil and serve.
