Hawaiian Banana Nut Bread
Hawaiian banana nut bread is an old-fashioned Southern favorite. Basically, it's homemade banana bread with chopped pecans, pineapple chunks, and shredded coconut.

Wet Ingredients

whisked eggs

mashed bananas

vegetable or canola oil

vanilla extract

coconut extract to taste

crushed pineapple, drained
Instructions
In a large bowl, whisk together dry ingredients.
3 cups plain flour,
2 cups granulated sugar,
1 teaspoon baking soda,
1 teaspoon salt,
1 heaping teaspoon ground cinnamon,
1 cup chopped pecans,
1 cup shredded coconut
In a separate bowl, whisk together wet ingredients.
3 whisked eggs,
2 cups mashed bananas,
1.5 cups vegetable or canola oil,
2 teaspoons vanilla extract,
1 to 2 teaspoons coconut extract to taste,
1 8-oz can crushed pineapple, drained
Add the wet mixture to the dry mixture and stir with a spatula just until moistened.
Pour into 2 greased and floured 5x9-inch loaf pans.
Bake at 350 for 1 hour and 15 minutes. Cool in pans on a wire rack for 10 minutes.
Remove from pans to the wire rack and cool completely.
