This creamy comfort food is the perfect accompaniment to most any meal. This recipe takes them up just a notch and makes them suitable for any "fancy" meal.

1small can evaporated milk
2Cupsshredded cheddar cheese
Cut up potatoes and cover with water. Cook until tender, drain. Add stick of margarine,can of evaporated milk, and about a teaspoon of salt. Mash with hand held potato masher or with mixer. Add sour cream. Mash or stir until blended. Spread into pie plate or casserole dish. Top with shredded cheese and bake in oven at 350 until cheese is melted.
