Ingredients
4sticksbutter (2 cups)
2cupsbrown sugar (light or dark)
1/2cuplight corn syrup
pinchsalt
1/2teaspoonbaking soda
1teaspoonvanilla
1boxcorn Chex12 ounces
1boxrice Chex12 ounces
1cupnuts of choice, optional
Instructions
Place the butter and brown sugar into a medium saucepot over medium-high heat. Stir from time to time and bring just to a boil. Then stir in the corn syrup, salt, vanilla, and baking soda. It will foam up a bit. Remove from heat and set aside.
Stir together the cereals and nuts (if using) in a large bowl or dishpan. Pour syrup over this mixture and stir well to coat evenly.
1 box corn Chex, 1 box rice Chex, 1 cup nuts of choice, optional
Pour this in batches into a large brown paper grocery bag, roll down the top to close it, and microwave for two minutes. Take the bag out and shake. Return to microwave for another two minutes and then shake again. (Be careful to hold it by the closed top when you shake it to keep it closed and prevent anything from flying out. This will be very hot because that is how microwaves work).
Carefully pour the hot Chex mix out onto waxed parchment paper and allow it to cool and dry completely. Repeat with any remaining Chex mix. Enjoy!
