Instructions
Roast Vegetables
Preheat oven to 450 degrees and adjust oven racks to the top and middle positions.
Core, deseed, and dice poblano and bell pepper into about 1/2 inch pieces. Dice sweet potato into 1/2 inch thick pieces. Toss veggies on a baking tray with a drizzle of oil over the top and a pinch of salt and pepper. Roast on top rack, tossing halfway through. Roast until browned and tender, or approximately 20 to 25 minutes.

Sweet Soy Glaze
Stir brown sugar, soy sauce, white sugar, water, white wine vinegar, rice vinegar, and ground ginger together in a saucepan. Bring to a boil, reduce heat to medium-low, and cook until reduced in volume by half, or about 30 minutes. Let glaze cool to thicken, which will take at least 1 hour.
1/2 c soy sauce, 2/3 c brown sugar, 1/3 c white sugar, 1/4 c water, 2 tbsp rice vinegar, 1/2 tsp ground ginger, 2 tbsp white wine vinegar
Zest and quarter lime. Trim and thinly slice scallions separating whites from greens. Peel and mince garlic.

In a small bowl combine the sweet soy glaze, 2 tablespoons of water, and a squeeze of lime juice to your liking.

Cook Pork Tenderloin
Pat pork dry with a paper towel and season with salt and pepper. Heat oil in a pan over medium-high heat. Add the pork and sear sides, turning occasionally, until browned all over. This will be about 4 to 8 minutes. Turn off the heat, transfer to another baking sheet, and roast on the middle rack until cooked through, or about 12 to 15 minutes (165 degrees, can use a thermometer to check). Remove from oven and let rest for 5 minutes. Thinly slice.

Garlic Butter
Place 1 tablespoon of butter in a microwave-safe bowl and microwave until melted. Stir in a pinch of garlic and lemon zest. Add salt and pepper and pour generously over the roasted veggies.
Cook Sauce
While pork rests, heat a pan over medium-high heat with oil. Add scallion whites and remaining garlic. Cook until aromatic, stirring for 1 to 2 minutes. Pour the sweet soy glaze and cook for 1 to 2 minutes until slightly thickened. Top pork with sauce and scallion greens. Serve with remaining lime wedges.
