What You Need to Make Olive Garden Chicken Gnocchi Soup

ButterSliced or shredded carrotMinced garlicWhole milk or half-and-half Boneless skinless chicken breastsPotato or low-carb cauliflower gnocchi

Melt butter in a large saucepan, add onions, celery, carrots, garlic, flour, chicken broth, milk, thyme, mustard powder, and uncooked chicken. 


Cook until softened, stirring occasionally. Add thyme and mustard powder, and simmer until cooked through, about 10 minutes, depending on the chicken's thickness.


Remove chicken, dice, and add to soup. Simmer until desired consistency is achieved. Add gnocchi and simmer for 5-7 minutes, depending on package.


Reduce heat to low and add the spinach, red pepper flakes, and salt and pepper to taste.
