Ingredients
2medium sweet potatoesabout 1 lb, peeled and grated
2green onionsfinely sliced
2large eggs
⅓cupall-purpose flour
½teaspoonbaking powder
¼teaspoongarlic powder
¼teaspoonsmoked paprika
½teaspoonsalt
¼teaspoonblack pepper
2–3 tablespoons olive oil or avocado oilfor frying

Instructions
Grate sweet potatoes using a box grater or the grating attachment of a food processor. Transfer to a clean kitchen towel and squeeze out as much moisture as possible.
In a large mixing bowl, combine grated sweet potatoes, green onions, eggs, flour, baking powder, garlic powder, smoked paprika, salt, and pepper. Stir well until fully mixed.
Heat 2 tablespoons of oil in a large skillet over medium heat. Scoop about ¼ cup of the sweet potato mixture and shape it into a patty. Place in the hot oil and gently flatten with a spatula. Cook for 3–4 minutes per side, or until golden brown and crisp.
Transfer cooked fritters to a paper towel–lined plate to drain excess oil. Repeat with the remaining mixture, adding more oil as needed. Serve warm with desired toppings.
