2cupsrotini pastacooked
2mini cucumbers
1yellow bell pepper
1/2red onion
1 cupgrape tomatoes
8ozmozzarella pearls
parsley garnish
3/4cupItalian dressing
Instructions
Cook the rotini pasta per the box instructions for al dente. Set aside.
Chop up the cucumbers into quarters, dice the bell pepper, dice up the onion, and quarter the tomatoes. Pour the cooked rotini into a large bowl and add the chopped ingredients. Toss in the mozzarella pearls and the desired amount of parsley. Pour the Italian dressing into the bowl and lightly toss the ingredients together.
Chill the pasta salad for 2 hours before serving.
